A FLAME REKINDLED
Heritage is an important ingredient in Chef Mauro’s repertoire of dishes. His cooking is informed by the connection he shares with his ancestors, and is re-told by the story of the fig tree. It dates to Chef Mauro’s great-great aunt, who slipped a branch of the fig tree into her suitcase upon leaving her native land.

Although Chef Mauro has never met her, the fig allows him to meet her, imagining her happy under the fig tree which has crossed oceans and experienced the movement of waves.

Echoing the sense of origin, belonging and memories, the storied history of his ancestors and the fig tree strengthens the invisible thread that connects flavours and scents to the deepest feelings and emotions.

Fiamma is an ode to watching Chef Mauro’s grandmother cook during his younger days, an act which sparked his burning passion for cooking in his later years.

Growing up in the Colagreco family, the appreciation for fine Italian cuisine and its essence was integral in his daily life. And it is this culinary tradition that Chef Mauro masterfully weaves into Fiamma, bringing to you the same passion that he embraced in his culinary journey.

THE UNTAMED PATHS
Delve ankle-deep into the intertidal zone and explore a surprising world teeming with marine life, right on the shores of Sentosa.

The intertidal zone is an area of the coast caught between two worlds – submerged during high tides and exposed during low tides. It is rife with hidden life and a whole array or marine ecosystems, often invisible to the unsuspecting eye.

Equipped with a torch and a boundless sense of curiosity, escape to the wild side as the experienced wildlife guides from The Untamed Paths take you through unchartered territories to uncover hundreds of aquatic flora and fauna.

To get the most of any nature walk, your guides will tell you to look out for subtle noises and movements as this might mean the next nocturnal critter is just around the corner. The one and a half hour guided experience is as much an engaging adventure as it is an educational one.

Besides discovering the animals that support our marine ecosystem, this intertidal exploration aims to equip you with a greater appreciation and knowledge of our marine ecology and coastal geology, identify different marine life and appreciate the different classifications from echinoderms to cephalopods.

MORNINGS AT THE WET MARKET
Wet markets offer a one-of-a-kind sensorial experience. The early morning hustle and bustle, scents of fresh seafood and raw poultry intermingling with exotic spices and fresh flowers, and cacophony of stall owners attempting to attract more customers.

The term “wet markets” derives from the markets’ wet floors which are caused by the melting of ice often used to ensure the freshness of seafood sold and by stall holders who routinely clean their stalls by spraying them with water.

Wet markets are typically divided into two sections, a “wet” section where fresh produce, meat and fish are sold, and a “dry” section where stalls selling goods such as spices, rice, dried noodles, dried seafood and beans are located.

Wet markets have become a common ground for Singapore’s ethnically diverse population to interact and bond, and are evident of Singapore’s vibrant community heritage.

It is here where visitors can find a Malay stall selling mutton next to a Chinese stall selling vegetables or fish, or an Indian stall selling spices and condiments.

One of the earliest wet markets to be built was Tiong Bahru Market in 1950. Back then, it was also known as Seng Poh Market.

Today, the Tiong Bahru estate retains its close-knit kampung (Malay for “small village”) spirit and has the communal feel of a bustling and lively little enclave where everyone recognises and cares for one another – a spirit that is also evident in the interactions between stall holders and residents at Tiong Bahru Market.

This wet market experience takes you on a guided tour of Tiong Bahru Market by one of Capella’s expert chefs, who will introduce various common local produce and how to identify their freshness and quality.

After filling up your baskets with all the ingredients you need, let our chefs take you back to Chef’s Table where he will whip up a delicious local dish, while you savour a delectable 3-course lunch.

A PERANAKAN WAY OF LIFE
Discover the rich heritage and colourful cuisine of the Peranakans, and how they have influenced Singapore as we know today.

Even though you may find distinct traces of Peranakan culture in the modern city, the community’s identity has often been shrouded in mystery, leaving much of it to stories and folktales from our forefathers.

The best way to experience the rich and colourful Peranakan history, though, is to dive deep into the sights, sounds, and tastes of the culture that is undergoing a revival around Singapore.

Retrace the steps of early Peranakans as they develop their roots in Singapore, and explore different facets of this unique heritage intricately interwoven by both Malay and Chinese influences – from the timeless food, fashion, lifestyle, and their various past times.

The Peranakan cuisine is one that is both distinct and bold in flavours, and is also well known for a wide variety of traditional cakes, commonly known as kueh.

The early 20th century was also the golden age of the sarong kebaya, a traditional Peranakan batik skirt worn with a fitted blouse, and is still proudly worn by Peranakan women – Nyonyas – in Singapore, Malaysia, Indonesia, Thailand, and Myanmar.

Immerse in this authentic experience with an exclusive Peranakan museum tour at the Straits Enclave, and step in to a moment in time at the Koon Seng Peranakan House, where you will find treasured heirlooms and ornaments.

Then, take a stroll along Katong, an enclave well known for its restaurants serving Peranakan cuisine and particularly, a spicy Straits Chinese noodle soup called the Katong laksa.

MAHJONG MANIA
Take a risk or two and try your hand at Mahjong, a nostalgic game that requires strategy and skill.

While an afternoon away as you learn the tricks of the trade of the tile-based game. Mahjong Mania offers an entertaining and educational experience, introducing you to the basics, as well as tips and tricks learned from years of practice.

Having gained global attention following the release of Crazy Rich Asians last year, Mahjong, which originated in China during the Qing dynasty and has gained global popularity since the early 20th century,is a game of skill and strategy, with a little bit of luck!.

The four-player game is played with a set of 144 tiles based on Chinese symbols, with players taking turns to draw tiles until they complete a legal hand using the 14th drawn tile to form 4 melds (sets) or an eye (a pair).

In fact, the sound of the shuffling, which was thought to evoke the chattering of sparrows, is what gave Mahjong its name.

With Mahjong Mania, guests are introduced to a local expert player, who will conduct private or group lessons, whether you’re travelling solo or as a couple.

Our Mahjong expert will walk you through the basics of this pastime, explaining the different tiles and the main rules of dealing, discarding and how to win. We’ll then move onto the intricacies of the game, where you’ll learn about tips and tricks gainedfrom years of practice.Test your skill at the end and play a game!

ONE KIND HOUSE
Visit the welcoming home of Mummy Soh, which has been transformed into an all-in-one urban farm. Retired school teacher, affectionately known as Mummy Soh, has transformed her traditional Singaporean home to offer you the chance to catch a glimpse into local life in a modern kampong home.

Have you ever wondered what it would have been like to live in the so-called kampong era, before Singapore transformed from a fishing village to a vibrant metropolis? Mummy Soh’s home is an opportunity to go back in time and revisit this era, with her urban farm, cooking school, art gallery and community centre.

In her home, she frequently hosts dinners and conducts cooking classes, maintaining an open-door policy to encourage the exchange of ideas and keep traditions alive through these community events.

In the past, Mummy Soh’s house was located next to kampongs, which housed a multicultural mix of Malays, Eurasians and Chinese all living in harmony in one neighbourhood.

Unique to Singapore, the ‘kampong spirit’ was alive as mothers would gather and exchange recipes, while the children made friends and wandered around the villages.

During your One Kind House experience, Mummy Soh will teach you how to whip up farm-to-table local favourites like Fish Laksa, Mee Siam, and Chicken Curry.

Almost all components of the dishes are made from scratch, from the extraction of the coconut milk to plucking the chilli, ginger and lemongrass from the garden to make the various pastes.

QI & THE CITY
Enjoy an exhilarating journey through Singapore as you learn about the city’s fascinating feng shui stories.Ride in style as you explore Singapore’s mystical feng shui elements.

As you breeze down quaint alleyways and enjoy face to face encounters with locals, Qi & The City will offer the opportunity to experience authentic Singapore life.

Feng shui, or Chinese geomancy, translates to wind and water, which form the foundations of Chinese metaphysics, the invisible forces that connect the universe. Originating from ancient China, feng shui claims to use energy forces to harmonize individuals with their surrounding environment.

Qi & The City will see you visit some of Singapore’s best-known attractions, including Marina Bay Sands and the Merlion, observing how feng shui principles play into their placement.

The feng shui master will also share some feng shui-related myths of the city, such as the belief that the Singapore River and Kallang River’s confluence into Marina Bay resembles a dragon’s head.

Throughout the journey, your feng shui master will delve into the story behind several of the city’s buildings and structures, which are shaped and located so as to harness the best outcome based on feng shui principles.

The basic tenet of feng shui is that certain locations are more auspicious than others; the auspicious-ness of a place is determined by the availability of vital energy or “Qi” that is supposed to flow underground meeting certain landform conditions and facing certain directions.
