GUEST VILLAS

There are two private onsens (one indoor, one open-air) of hot, natural, spring water in every villa, as well as all the modern amenities. Inhale the heady scent of birch trees from the encompassing woods, and listen to the water and the trees.

Offering a choice between ‘washitsu’ and ‘yoshitsu’ sleeping arrangements, each villa (suite) has a different configuration. Some rooms also benefit from an additional tatami space, ideal for small families.

In appreciation for the unusual snow of the area – delicate and light powder created by the freezing Siberian winds – the name of each villa follows a winter ‘kamon’ (Japanese crest) representing the various types of snow. Japanese onsen bathing is a very important part of Japanese culture, one that is usually a shared experience.Unusual to many ryokans, Zaborin offers a choice of two private baths – one indoor, one outdoor – with every villa. Also available in guest bathrooms:

It is customary to wear traditional Japanese casual wear (‘samue’) around the ryokan. In cooler weather the ‘hanten’ is used as an outer layer, which has a removal fleece lining. These have been provided in the bedrooms for your convenience.

YOSHIHIRO SENO

Gifted Yoshihiro Seno’s career began as engineering designer before he decided to change paths and pursue the long road to mastering ‘washoku‘.

Having worked in many Japanese restaurants in New York City, he subsequently moved back to Tokyo to continue his craft. It was in Tokyo, with its accessibility to all ingredients, that highlighted a need to return back to his roots and examine the true meaning of ‘locality’.

Here in Hokkaido, with the abundance of exceptional local ingredients, and our own in-house forager, chef Seno felt is able to nurture his attention to detail, his thoughtful and emotional approach to the earth and fresh ingredients.

At Zaborin he has been able to fulfil his passion and precision with the freedom of interpreting Kita kaiseki. His skill has been recognized and awarded internationally and by Japanese connoisseurs alike.

A true ryokan experience is not complete without an evening lingering over a multi-course Japanese kaiseki meal, and a bountiful breakfast. These are included in your rate per night.

DINNER
Kita kaiseki is a northern interpretation of the rigorous Kyoto kaiseki meal, considered one of the most formal and exceptional forms of cuisine in the world.

Hokkaido born engineer turned chef Yoshihiro Seno’s exquisite and deceptively unadorned dishes embraces the seasonality, the simplicity, flavor and beauty of the local products. His attention to detail includes his own treated venison and frequent collaboration with our in-house forager.

Zaborin’s signature kita kaiseki can be enjoyed in our intimate dining room. For guests staying longer, alternatives can be arranged, for example an exclusive robatayaki omakase menu in the Irori room.

HOT SPRINGS

Regarded for centuries as both a necessity and a luxury, the communal onsen (hot spring bath) is a corner stone of Japanese culture.

At Zaborin, each of the 15 villa suites have their own private indoor, and own private open-air baths, all supplied with free-flowing hot volcanic spring water from Zaborin’s own spring source.

Inhale and take in the soothing scent of pines and indulge in the energy of the forest – also known as ‘forest bathing’ 森林浴 [Shinrin’yoku]. The extraordinary views, the exceptional water quality, and serenity of the moment will soothe both mind and body.

The volcanic waters of Zaborin come from almost a kilometre below ground, arriving at the perfect natural temperature. The unadulterated waters are a specialty and revered across Japan as the best in onsen bathing luxury: gensen kaikenagashi (源泉かけ流し).

The quality of our spring water has been tested and awarded the top 10% in the country. Rich in minerals, water that is also surrounded but such abundant nature is considered to have absorbed the ‘qi’ (気迫) – the energy or spirit – of those surroundings.

 Irori
Originally used for cooking and heating, the Japanese sunken hearth, the irori, is the heart of the home. At Zaborin this is reimagined not only as the physical centre of the ryokan but also enclosed in a separate space away from the views to re-focus internally. Pre-booking for a robatayaki dinner is available.

Chanoza
Literally ‘tea’s seat’, the chanoza is normally a formal tea room. We hope to demystify this ancient tradition by making it part of the daily movements and flow of the ryokan. Guests are welcome to take a seat and participate the meditative quality of a beautifully brewed cup of Japanese matcha.

The Living Room
The living room is a place to gather and relax. With floor to ceiling windows and views to Yotei san and our modest lake, the world of nature becomes a living cinema.

The pivot point of the Living Room is a double sided open fireplace. One of two such fireplaces on the property, it offers the same cohesion and role of gathering that was played by the traditional ‘irori’.

The Library
Ranging from Japanese classics in English, to European favourites in Japanese, to poetry and books on nature, the Library is a place to discover a gem of literature. Eclectic films and board games are also complimentary and available for guest use.

The Bar
The bar is made of one solid piece of wood and facing the majestic ‘Fuji of the North’, Yotei san. Sample the local whiskies, and soak in the view.

Footbath
Across Japan, there are free public foot baths ‘ashiyu’ for the weary traveller and searching for them can be a pastime on its own. Hidden in plain view in Zaborin’s central courtyard is one such treat. In some winter months, tunnels are carved through the huge snow drifts to a glowing candle-lit retreat for your feet.

The name Sanyoan comes from the great educator Sanyo Tsuchiya, a mentor of the Tokachi and Obihiro region’s pioneering forefather Benzo Yoda. Tsuchiya believed in an old Chinese teaching that says farmers should study by reading between stints of farm work, particularly at three specific times (sanyo in Japanese, lit. “three extra times”), i.e., in winter, at night and on rainy days.

He even changed his first name to Sanyo and advocated the importance of this teaching. These three times can be considered to represent affluence of the mind. Sanyoan offers the same quality time and space that these periods would provide.

Guest Rooms
Guest rooms are named after novels and other literary works in accordance with Sanyo’s teachings, and each one has a distinct color tone and layout.

There are Japanese-style rooms (measuring 10 to 12 tatami straw mats in size) and rooms with Western-style beds. Each room provides a space for relaxation and includes a private open-air bath made from Japanese cypress grown in Akita Prefecture in addition to other amenities and living space.

A sense of tranquility provided by indirect lighting
The building features illumination art by famed lighting designer Reiko Chikada, providing a sense of tranquility based on indirect lighting.

Ms. Chikada is a lighting designer and CEO of Reiko Chikada Lighting Design, Inc. She received a Bachelor of Fine Arts degree from Tokyo University of Fine Arts and Music, and is a professional member of the Illuminating Engineering Institute of Japan (IEIJ) and a member of the Illuminating Engineering Society of North America (IESNA).

She has designed numerous public facilities and parks, including the Ibaraki prefectural government building, the Museum of Modern Art in Saitama, and Shuri-jo Park. She was also in charge of lighting for the Kyushu-Okinawa Summit 2000 Social Dinner at Shuri-jo Castle in 2000.

Producing a Japanese atmosphere using natural materials
Living spaces in the hotel’s guest rooms have pinewood floors and plaster walls. Bedroom spaces feature handmade Japanese paper walls and Ryukyu tatami mats. Butterbur-design Japanese paper is also used.

A luxurious level of relaxation
We offer a total of 23 kinds of yukata (informal cotton kimono) with different colors and patterns in addition to six types of pillows, including the pressure-relieving Tempur type, a type stuffed with buckwheat husks and one containing negative ion-producing tourmaline. Guests are free to choose their preferred pillow type.

Dining
We place emphasis on the sense of live performance created by our open kitchen with the aim of appealing to guests’ five senses of sight, touch, smell, taste and hearing. We serve creative Japanese cuisine cooked from premium Hokkaido ingredients, particularly those from Tokachi.

Hairy crab and fresh seafood are carefully chosen from the Tokachi and Hiroo regions, and our beef comes from cattle raised on natural feed. In autumn, we also use local wild plants for dishes. The menu is changed at least every two months.

Hot Spring
Botanical moor hot springs are found only in two places in the world. Wild plants accumulate underground over the ages and biodegrade to form a lignite layer.

During this process, humic substances and humic acid are produced and dissolve into groundwater, which gushes up as a hot spring. Since this type of spring contains more organic botanical nutrients than mineral components, it is referred to as a botanical hot spring.

It contains sodium chloride and bicarbonate making it a weak alkaline, hypotonic, high-temperature spring. Such springs are known as spas for beauty because of the skin smoothening and moisturizing effects provided by their rich natural moisturizer content.

Fugetsu Large Bathhouse
With a traditional Japanese cypress bath, a tiled bath creating a nostalgic air and a lie-down bath for total body immersion, guests can slowly unwind by thoroughly warming up their fatigued bodies. There is also an open-air bath.

Hearth rooms are also available
The establishment has three charcoal hearth guest rooms bearing the names of the three sanyo times – the Winter Room with two to six seats, the Night Room with two to six seats, and the Rain Room with two to eight seats. Each room has walls covered with Japanese paper to fit in with the atmosphere. The Japanese paper used for the Winter Room contains linden tree leaves.

Raffine Aromatherapy Salon
This is a genuine aromatherapy salon supervised by Chiyoko Kusakabe, one of Japan’s leading phytotherapists and aromatherapists. All options, along with the treatment techniques and oils used, are custom-tailored based on counseling in order to offer a personalized level of hospitality.

The extent of treatment for specific parts of the body and the whole body can be chosen depending on individual preference. Treatment also helps to realign musculoskeletal structure, thereby easing fatigue.

All oils used in the salon are made in France by aromatherapy pioneer Dr. Jean Valnet, and are of medical grade quality. In addition, carrier oils and other products used are all non-chemical and organic. Various skin disorders, such as ultra sensitive skin, can also be treated through our courses that offer both safety and a sense of security.

Michi Kusa Bar
The bar was named after a work by Natsume Soseki – one of the foremost Japanese novelists of the Meiji era (1868-1912). Guests can enjoy high-quality local sake, wine, shochu distilled spirit and more.

Daiginjo, the highest grade of sake, along with Sanyoan’s original label and Kagoshima Prefecture’s prized Seiko-udoku shochu (distilled from sweet potatoes) are also available. At night, the bar affords great views of the illuminated Tokachi Chuo Bridge over the Tokachi River.

Ryoshu Library
Sanyo’s spirit of hospitality is related to the Japanese saying Seiko udoku, which can be translated as “Farm when it’s sunny, read when it rains.” The library showcases Japanese and overseas literary works, including those after which the hotel’s 11 guest rooms were named.

Publications on the natural features of Hokkaido and Tokachi are also available. Immersing yourself in reading or listening to music and forgetting the passage of time can be fun. This is a luxurious experience exclusive to Sanyoan.

The Ryokan Ginrinsou, originally a “herring estate”, is one of the Designated Historic Landmarks of Otaru City.

It was an estate built by a great master of fishermen in Yoichi who became very rich in the Sengoku herring fishing ground that prospered at the base of the Shakotan Peninsula.

The estate was relocated to its current location in 1938. Having endured the weather for more than a century, it looks truly magnificent and graceful.

History

Herring that abounded in the sea brought so much prosperity to areas on the west coast of Hokkaido from the Edo period to the early Showa period that there was a saying that spring in Hokkaido came with herring.

Great masters of fishermen who fought the rough waves in the northern sea built a magnificent estate as if to show their glory. In 1873, at the height of the herring fishing, Mr. Yasunojo Inomata, a magnate of fishermen in Yoichi, built a personal residence, which was the beginning of GINRINSOU.

For about 150 years since then, GINRINSOU has retained its splendid appearance and reminded us of the glorious history of the sea of Hokkaido, as one of the few existing herring estates, and as a very rare herring estate where you can stay.

Architecture

The curved eaves of GINRINSOU are very impressive. The estate was constructed by Senzo Yoneyama, a Miyadaiku (specialist in construction of shrines and temples) invited by the Inomata family from his hometown Echigo (former name of current Niigata Prefecture area).

It has many beautiful aspects created by the temple architect’s elaborate skills. Selected high-grade types of wood such as Sakhalin fir, castor aralia, ash and chestnut were used as building materials, and the panel forming the lower part of the interior wall was made of large pieces of granite, which were ordered from abroad in the days when transport means were not yet developed.

You can see the high spirit of the magnate of fishermen who sought gorgeousness to whatever extent possible even for inconspicuous parts. You will be impressed with the design of stained glass and many elaborate transoms, which will make you imagine Otaru in the Meiji and Taisho periods.

Ginrinsou is one of the Designated Historic Landmarks of Otaru City. This herring estate converted into a hotel has 17 guest rooms in total.

We have 17 guest rooms that consist of those in the Main building, which was built in the Meiji period and relocated to the current location at the beginning of the Showa period, and the ones in the New building, which was built recently as an extension.

The sparkling blue of the ocean and sky, the evening sun melting into mountain ridges, lights in the twilight, the thin moon shining in the night sky, and a peninsula emerging in the morning light.

A view of Ishikari Bay seen from the Hiroen terrace of the two adjacent rooms and the excellent design of every detail of the transoms, fusuma (paper-covered sliding doors and partitions) and alcoves will fascinate you in this special Japanese-style room.

You can always relax and enjoy plenty of hot water gushing out in the spacious private bath (hot spring).

Great Hall (Large Banquet Hall)

Entering the front entrance of the Irimoya style (a hip-and-gable roof structure), you will be in an impressive atrium space with thick beams running lengthwise and breadthwise. On your right, there is a 75-jo (tatami mat) great hall (if all fusuma are open).

This is where the counter used to be located in the main house of the magnate of fishermen. It is said that Funatama Festivals and banquets after fishing were held there and that many fishermen and geisha gathered.

There is a hearth at the front, and a large household Shinto altar of 2.5 ken (4.5 meters) was established there to pray for a good catch and safety. In addition, alcove posts made of Japanese red pine with the bark and an alcove where a solid, broad wooden plate is luxuriously laid are very valuable.

Solarium

The solarium is where guests can taste aromatic coffee after breakfast. In this luxurious space, you will feel integrated with the sky and the seaside. You can plan your future travel schedule, read a book in the mild sunlight and have an enjoyable time.

Lounge

Impressive thick beams in the salon space will remind you of its long history as a warehouse for storing fishing nets. The soft light of lamps also lights you up, and there is a wide bar counter. You can experience a leisurely, relaxing, special night during the travel, limited only to adults.

Watchtower

A watchtower (fire tower) stands in the center of the massive wooden roof impressively covered with magnificent tiles with the family crest engraved. It is topped with Shachi (an imaginary creature with a tiger head and a carp body) just like a castle tower.

From the watchtower built without the use of nails, you can overlook every direction. It is said that a group of herring were seen to come, turning the sea into white.

Night spot

Cape Hiraiso, where GINRINSOU stands, is famous for the splendid view of the port town Otaru. Only guests staying with us can enjoy this special night view to their hearts’ content. We have a private spring source within our site, spewing out water from 1,300 meters underground. The water with excellent quality is directed to the wild open-air bath made of rocks, the large spa and private baths in guest rooms.

The open-air bath is one of the symbols of GINRINSOU. It is a very wild, 100-tsubo rocky bath. Stones with names collected from all over Hokkaido are arranged in the bath.

When you soak in the bath, you can sometimes hear a whistle of a train of the Hakodate Main Line running along the coastline, sea breezes, cries of black-tailed gulls and a whistle of a ship, and feel the unique atmosphere of the port town Otaru.

Seen from the open-air bath, the beauty of the sun rising from Ishikari Bay is beyond description.

Large spa

A magnificent, large, circular, oriental-style bath. Abundant mineral water gushing from the deep underground flows out of a mouth of the sculpture of a holy beast without ceasing. The source is a sodium sulfate spring reputed to be soft on the skin. The horizontal line of Ishikari Bay spreads endlessly outside the large window.

Private bath

A luxuriously spacious private bath (hot spring) is provided in the special Japanese-style room in the Main Wing and all the guest rooms in the New Wing.

It is enjoyable to watch the rich natural landscape changing according to seasons from large windows, while soaking in the bath. You can leisurely enjoy luxurious bath time at any time without being interrupted by anyone.

Former Hokkaido Takushoku Bank Otaru Branch

It is the venue at which writer Takiji Kobayashi worked as a banker. The vaulted ceiling in the foyer, the former bank hall, which reaches up to the second floor is supported by 6 impressive ancient columns.

The fourth floor displays Japanese paintings by Taikan Yokoyama, while the third floor displays Western art by Japanese artist Ryusei Kishida and other artists from around the world.

On the second floor wooden sculptures by Koun Takamura and his disciple are displayed; the first floor has the Louis Comfort Tiffany Stained Glass Gallery; and the basement floor is an Art Nouveau and Art Déco Glass gallery.

At the turn of the nineteenth century, when Otaru was flourishing in international trade, the Eiffel Tower was being built in France, and a new artistic movement known as Art Nouveau swept across Europe.

Here you can view the various masterpieces of prominent artists of that era, such as Emile Gallé, the Daum Brothers, René Lalique, Josephe Gabriel Argy-Rousseau, and Victor Amalric Walter.

Former Takahashi Warehouse

The stained glass pieces that were crafted in England between the late nineteenth and early twentieth centuries and were actually part of the window fixtures in churches are exhibited in the museum.

In recent years, many of the churches have been torn down due to various circumstances, but these beautiful pieces of art were spared, and through an unusual twist of fate ended up in Japan.

Some of the stained glass is inscribed with words and pictures that tell the history from the flourishing reign of Queen Victoria, through the Edwardian Period, and into the era after the First World War.

From the late years of the Meiji period, to the beginning of the Showa period, there were as many as 25 banks that supported the financial state of Otaru, and it was often referred to as the largest economic city in northern Japan.

One of these, the former Mitsui Bank Otaru Branch, symbolizes the glory days of Otaru. The Renaissance exterior is made of bold stonework, with hallways that encircle the vaulted ceiling and beautiful plaster sculptures that adorn the ceiling. Enjoy the many elegant pieces of work, in a dignified atmosphere of the old bank building.

It features signature pieces of stained glass artwork for churches, made by Louis Comfort Tiffany, who led the Art Nouveau era with creative glass works such as opalescent glass and rainbow-colored Favrile glass. Beautiful artwork comes to light again in Otaru after a period of over one-hundred years.
