A BRIEF HISTORY OF HAYFIELD MANOR
Although Hayfield Manor has only been part of the hospitality industry with the past 20 years, the five star hotel located in Cork city is steeped in history with its story dating back to the early 1800’s.

It all began many years ago when Richard Perrott married Hannah Mary Barnes in 1815. Richard and Hannah lived at Hayfield Manor, and they had thirteen children between 1816 and 1843. Richard Perrott went on to become the sole owner of the Hive Iron Works in Cork, one of the most important of its time, in place of his Father-in-law.

The estate which lies in the heart of Cork City, located beside University College Cork, was subsequently owned by the Musgrave family, the famous Cork merchants. The Musgrave family company is a wholesaler that supplies groceries to a network of franchisees who take over the running of its retail brands.

These retail brands range from Supervalu and Centra in Ireland, Budgens and Londis in the UK and Dialprix in Spain. The history of the Musgraves dates back to 1876, when brothers Thomas and Stuart Musgrave set up a trading company in Cork.

Over the years, they have been involved in many sectors, including tea, sweets, and hotels, before finally settling on running cash-and-carry’s and supplying the grocery trade.

Hayfield house fell into a state of disrepair until the Scally Family took it over and rebuilt the hotel to five star standard in 1995. The hotel opened its doors to the public and began welcoming guests in 1996 and to this day remains Cork city’s premier five star hotel.

The hotel’s popular casual dining restaurant, Perrott’s Garden Bistro, is named in honour of Richard Perrott. The Scally Family have also honoured tradition of the property by maintaining and developing Hayfield Manor with all the ambience and charm of the traditional manor house.

A drawing of the original house can be seen in the hotel today and it clearly shows that the Scally Family paid close attention to the original design when rebuilding the house to five star standard. The main staircase by reception is a replica of the original staircase of the old house.

The hotel does still hold some remaining pieces from the old manor house such as the fireplace in the lobby which is the original fireplace from the house and also some floor tiles which are located in the Lobby area.

The grounds and trees are over 150 years old. The beautiful Weeping Willow by the main entrance even has a preservation order on it. The walled gardens to the back of the hotel are based on Muckross Gardens in Killarney. Since it’s opening in 1996, Hayfield Manor has been recognised for providing a high quality product and exceptional service.

THE PRESIDENTIAL SUITE
The magnificent Presidential Suite offers an ultimate luxurious stay at the 5 Star Hayfield Manor Hotel. An impressive 1,200 sq ft/ 111m2, this exclusive suite is lavishly decorated with beautiful antique furnishings and classical décor.

A welcome hall sets the tone for this, our largest and most luxurious suite, which leads to an extensive comfortable Drawing Room ideal for relaxing or for private meetings. Original artistic impressions, a marble fireplace flanked by luxurious arm chairs and sofa, antique dining table and surround sound adds to the splendor of the Drawing Room.

The Presidential Suite features a King Size Bed with plush textiles, silk drapery, and an open fire, all which enhance the enchanting ambiance of this most exquisite bedroom. Adjacent to the Master Bedroom is a spacious dressing area with large antique wardrobes and a vanity bureau.

Incorporated into The Presidential Suite are two distinctly designed bathrooms. For the utmost extravagant luxury, both bathrooms feature a range of Elemis Spa products and oils, bathrobes and slippers.

‘Her’ bathroom is lavishly decorated to augment the aura of relaxation. ‘His’ bathroom features a state-of-the-art Steam Power Shower, which can be enjoyed using Elemis products to feel fresh and relaxed.

Guests enjoy private dining in the Drawing Room with dedicated wait staff for special occasions. THE SHANDON SUITE 
Named after Cork cities old fort (sean dún), Shandon lies north of the River Lee and is the northernmost point of the medieval city. Shandon was one of a number of settlements in and around ancient Cork, with a medieval church dedicated to St. Mary built close to the site of the fort.

One of the most iconic sights on the Cork skyline, the steeple at St. Anne’s Church in Shandon is famously known for the golden fish that sits on top. ‘Goldie the Fish’ is based on an ancient Christian symbol, and is also an ancient symbol of Cork city itself.

The Shandon Bells are always a popular tourist destination for guests to Hayfield Manor, with visitors able to ring the iconic bells for themselves and the observation deck offering incredible views of Cork city.

THE MERCHANT SUITE
The second largest natural harbour in the world, Cork has a fascinating maritime and export history, with its importance to the city signified by the merchant ship that adorns the City crest. Throughout the centuries Cork was seen as a vital trading port, with the quays regularly lined with merchant and cargo ships from all over the world.

Some of Cork’s most notable exports included oats, wheat, beef, and most famously butter, with the development of the Cork Butter Exchange in the 1700’s, which became the largest butter market in the world.

PERROTTS GARDEN BISTRO
Located in the conservatory area at the front of Hayfield Manor Hotel, Perrotts Garden Bistro restaurant Cork, has become a favourite among guests and locals alike since it first opened its doors back in 2005.

With a distinct relaxed atmosphere and bright, airy décor, it is the ideal restaurant venue to enjoy a sumptuous meal with family and friends, or take a break out of the office and have a delicious working lunch with colleagues. Perrotts Garden Bistro features a wide range of Mediterranean and International Specialty dishes appealing to all tastes.

BLOOM
Hayfield Manor’s newest addition, Bloom offers a luxurious escape in the midst of our manicured gardens. Situated in our stunning courtyard, Bloom is made entirely of glass and with retractable walls and ceiling, offers a breath of fresh air, and is the perfect venue for a casual drink, catching up with friends or for an exclusive private function.

A LITTLE BEYOND THE CITY
The village of Blarney is a must – see for any visitor to Cork and is only a short 20 minute drive from Hayfield Manor. Stroll through the stunning gardens of the Blarney Castle, and take the opportunity to kiss the legendary Blarney Stone, which will bestow you with the gift of eloquence.

The Harbour town of Kinsale has become one of the most popular tourist destinations in Cork. Famed for it’s abundance of delicious award winning restaurants & stunning Harbour views, a trip to Kinsale is worth the mere half hour journey from the city of Cork.

Beautiful scenic walks around historical grounds and coastal inlets are a great way to spend an afternoon, before dining in one of the many restaurants where seafood is a specialty. Kinsale is approximately a 35 minute drive from Hayfield Manor.

The harbour town of Cobh is a popular tourist destination and is just a short journey from Cork city, with a regular bus and train service to the town also. The last port of call for the Titanic, homage is paid to the thousands of Irish who emigrated in the Cobh Heritage Centre.

Sample the fare in one of the various restaurants, and visit the Cathedral high on the hill overlooking the town. Here you also visit the Titanic Experience which is a big hit with visitors.

FOTA HOUSE & GARDENS
Fota House, Arboretum and Gardens is a fabulous regency style great country house steeped in history. Guided tours allow you to explore the house and take you on a journey to discover fascinating insights into the contrasting lives of the masters of a former time.

There is always something to do with a range of cultural events for all ages as well as family events and evening concerts. The Bakestone Café on site also serves delicious food from the Victoria Working Garden and is the perfect place to relax and take some time out.

CORK’S COASTLINE
Cork’s coastline offers picturesque scenery for you to enjoy. Stroll along the white sands of Inchydoney Beach, surf in Ballycotton, or take the ferry from Glengariff to Garnish Island, famed for its stunning gardens and views. SPIKE ISLAND
Spike Island is an island of 104 acres in Lower Cork Harbour. Shortly after Christianity was introduced to Ireland, St Mochuda started a church here. He left 20 brothers on the island while he continued his mission around Ireland.

Smuggling was widely practiced in the 18th century and the dark rigidness of the Spike Island shoreline was a favourite hiding place for smugglers. The island’s rich history has included monks and monasteries, rioters and redcoats, captains and convicts and sinners and saints. This award winning attraction offers a fantastic day out!

GOLF IN CORK
Cork presents itself as an ultimate golfer’s paradise, with a number of Championship courses scattered around the city and county of Cork. The inclement weather that Ireland so often experiences has resulted in a lush and vibrant green landscape with the natural undulating terrain creating a challenge for golfers both novice and pro.

Old Head Golf Links in Kinsale is one of the most renowned courses in Cork. Sitting atop a peninsula jutting into the Atlantic Ocean, this course tests the mettle of all who play it, but regardless of your score, the stunning view will leave you absolutely breathless.

A round of golf at this 72 par private club is extremely sought after by golf enthusiasts from all over the World, and has been played by some of the greats such as Tiger Woods and Sergio Garcia. Old Head Golf Links is located 44km from Hayfield Manor, approximately 45 minutes journey time.

If you favour the challenges presented on Parkland Courses, why not visit Cork Golf Club, situated in the beautiful Cork Harbour. This mature course has played host to some of the major Amateur and Professional Championships including the Irish Open.

ENGLISH MARKET
Voted one of the top ten best food markets in Europe by the Observer Food Magazine, the English Market in Cork is an attraction which is most certainly not to be missed.

The atmosphere, sights and smells make the English Market a shopping experience unlike any other in the city of Cork. The bustling market is full of the freshest produce coming from local farmers and producers, including meat, seafood, and fruit & vegetables.

The most recent addition to Cork’s shopping scene is the Opera Lane Shopping Street in the heart of the vibrant city. The stylish and contemporary design of the complex merges well with the upgrade of Patrick Street.

OLIVER PLUNKETT STREET
This is the second busiest street in the city and is a long, partially pedestrianised thoroughfare with shops, buskers, cafes, excellent restaurants and historic buildings. CORN MARKET STREET
Corn Market Street is home to an outdoor market, with Saturday being the main trading day. An assorted range of stalls are to be found. Shop for clothes, shoes, gifts, drapery, toys, and traditional Irish music and instruments. After a hard day shopping, retire to the Hugenot Quarter where you can soak up the atmosphere in a vast range of cafes and restaurants.

MAHON POINT SHOPPING CENTRE
A number of shopping centres line the suburbs, the most popular of which is Mahon point. A short 15 minute drive from the hotel, Mahon Point is host to a range of the most popular shops on the High Street today. Whatever your needs, Mahon Point can meet them. Round off the trip with lunch in the food court and a trip to the luxurious 13 screen cinema.

BALLYCOTTON CLIFF WALK
The Cliff Walk is from Ballycotton village to Ballyandreen beach along a cliff track where you are flanked by meadows on one side and the ocean on the other. It starts at the end of Ballycotton village.

The walk extends over 5 miles on a foot worn track along the cliff face with stunning views and passes Ballytrasna beach. There are many stiles to cross on the route (therefore not suitable for bikes or buggies). Our dedicated Concierge team can provide a map of the walk as well as driving directions should you require them. The cliffs are located approximately 50mins from Hayfield Manor.

RIVER BLACKWATER FISHING
Hayfield Manor is situated within very close proximity to the River Blackwater, which is known as being one of the best fishing rivers, not just in Ireland but throughout the whole of Europe. We have our very own Ghillie/Guide that will help with the experience of having a memorable day on the River Blackwater.
