THE HISTORY
The history of Villa Sparina begins in the early seventies, when Mario Moccagatta and his wife Bruna bought the estate and founded the Villa Sparina farm.

The favourable position of the vineyards and the family’s excellent management skills and experience soon sealed the success of the wine business: Villa Sparina soon became one of the best producers of Gavi in the Piedmont region.

As they grew up, Stefano, Tiziana and Massimo Moccagatta sensed the potential of the Gavi region and decided to make Villa Sparina a place of hospitality: in 2004, they opened the doors of the Ostelliere, the 4-star superior hotel, and La Gallina, the gourmet restaurant.

The three of them run the family business with passion and expertise. Stefano, the eldest, has a great sense of humour and handles public relations. As a food lover with an excellent palate, he is also entrusted with managing the restaurant of the Resort in Gavi.

Tiziana, a woman of great charm, heads the hotel business. She is also responsible for weddings due to her charisma and organisational skills. The tireless Massimo can be described as the conductor who manages and carefully coordinates the three branches.

Our La Gallina restaurant in Gavi offers regional cuisine with a modern twist from our careful selection of ingredients. The vegetables come from our organic gardens, and the seasonal products are sourced locally from selected Piedmontese and Ligurian producers.

We serve excellent dishes in an intimate setting, straight from the old barn overlooking the vineyards and the panoramic terrace.

THE CHEF
Chef Thomas Papa has been in charge of the kitchen of the La Gallina restaurant in Gavi since 2019. After 5 years’ experience as a sous-chef, Thomas has now been managing his kitchen for one year with gentle determination and strong passion.

In 2019, Thomas was very proud to have been nominated by Guida dell’Espresso among “the best Chefs in Piedmont”, a recognition that highlights the skills of this talented 33-year-old.

His ambition and his humility mean he never feels he has “arrived” but, on the contrary, he always wants to learn more and improve his techniques.

Thomas has fully embraced the plans and the project of the Moccagatta family. He loves the region so much that all the ingredients he chooses for his refined cuisine are local.

COOKING CLASS
The kitchen at the “La Gallina” restaurant becomes the star of your stay, where you can learn the tricks of our region’s most traditional dishes. The cookery courses are reserved for hotel guests only.

2-hour breadmaking course focusing on bread, focaccia and pizza. All the secrets for perfect leavening, from the choice of flour to discovering the different types of yeast.

THE SWIMMING POOL

The pool area is complemented by a bar service, which offers a selection of healthy, fresh and light dishes prepared with high-quality products to accompany a glass of wine or a refreshing drink.

The pool is open to guests from June to September, with access allowed from 10:30 a.m. to 6:30 p.m. Out of respect for all our guests, pets are not allowed into the pool area and guests are asked not to spoil the quiet, relaxing atmosphere.

SALA DELLE VIGNE

Our Cantina Oltre Torchio is the estate’s historic cellar. Its uniqueness lends a special character and flavour to meetings, team-building activities, but also coffee breaks or buffet lunches.

CANTINA BARRIQUE
Our Cantina Barrique venue is used for large-scale events that take place at Villa Sparina Resort. It is a large, charming venue with magnificent vaulted ceilings that help create an evocative atmosphere and a unique setting that’s ideal for offering guests unforgettable moments: from gala evenings to weddings, from fashion shows to elegant, engaging corporate presentations.

We recommend the Cantina Barrique for large-scale events: the venue can accommodate up to 350 guests and can be equipped with high-end technical equipment on request.

ATRIO CANTINE
Our Atrio Cantine is conveniently located adjacent to the cellars, with direct access to a large green area where you can enjoy the tranquillity of the natural surroundings of Villa Sparina Resort.

We recommend the Atrio Cantine for medium to large-scale events and corporate functions: the venue can accommodate up to 80 guests and can be equipped with high-end technical equipment on request.

THE GAVI WINE
Villa Sparina is a Gavi winery in Piedmont, spread over 100 hectares of which 70 are reserved for the cultivation of native grape varieties dedicated to the production of Gavi and Barbera. The vineyards are located in the hills of Monterotondo, one of the best exposed areas for the production of the Cortese grape.

Villa Sparina covers 100 hectares, mostly located in the Monterotondo district, Piedmont, in the heart of the famous Gavi DOCG region where grape cultivation has been a part of this land’s tradition and the life of the people since time immemorial.

Most of the vineyards are close to Villa Sparina Resort, surrounded by woods, caressed by the gentle Ligurian breeze and kissed by the sun.

About 70 hectares of our region’s hills are reserved for the cultivation of the Cortese grape. This indigenous grape variety is used to make Gavi di Gavi, a variety that’s also turned into an elegant, fresh Spumante Brut following the Metodo Classico rules.

At Villa Sparina, we have been meticulously crafting wine ourselves since 1997. We use grapes from a favourably exposed historic vineyard from 1945. Our experience gives our wines great depth and complexity.

This is where we make our Monterotondo cru, which enhances the acidic, tangy salinity and mineral qualities characteristic of this grape variety. On the remaining hectares of our property we cultivate Barbera grapes, from which we produce the fresh, soft Barbera del Monferrato DOC.

As for the Cortese, this grape variety is at its best in a select cru, the Rivalta, cultivated on 9 hectares located in Rivalta Bormida, in the hills of Acqui Terme, in the Alto Monferrato. This riserva takes its intense, dark-red, nuanced colour from the perfectly ripe grapes. Deep and balanced, it has a long-lasting fruity finish

In order to stand out for our image as well as our wines, we commissioned a designer to create a bottle with a unique shape for our wines.

The innovation project that led to the bottle we know today was developed together with the designer, Giacomo Bersanetti, who found inspiration in an ancient vase found during the renovation of the Gavi winery in Piedmont.

THE 18TH CENTURY CELLARS
Our Gavi winery in Piedmont is an “open cellar” which welcomes you with guided tours and tastings.

There’s a tour to introduce you to how we produce our wines, to discover the vineyards surrounding the estate and the historic cellars of Villa Sparina, which date back to the 18th century and are still perfectly maintained and absolutely unique in the Gavi region.
