The hotel has three bars and restaurants at your disposal with different atmospheres, more than enough to suit every desire: there’s the refinement of the Loup de Mer, the Pool House situated around the swimming pool and the beach restaurant l’Escale.

At the bottom of the hotel, you can dive into the turquoise waters of the deep-blue Med and try out the paddle experience. Then borrow one of our mountain bikes and cycle along the greenway that links St Tropez and Lavandou, basking in the heated freshwater pool afterwards.

The sea-view rooms with Terrace, located on the floor, immerse you in peace and serenity. Enjoy your stay by the sea in these beautiful rooms of 32m2 equipped with sunbeds and offering a breathtaking view of the sea. This room with Terrace can accommodate up to 3 people (2 adults and 1 child under 12 years old).

POOL-LEVEL ROOMS
The pool-level rooms offer you peace and tranquillity. These large 32 m² rooms are located on the ground floor of this elegant building. The terraces on the ground floor provide direct access to the hotel pool where you can use the poolside loungers to soak up the sun.

BREAKFAST
Breakfast is served from 8 am to 10:30 am as a buffet-style at Le Loup de Mer indoors or on the terrace so you can enjoy the first rays of sunshine. It can also be served in your room as a continental breakfast.

LE LOUP DE MER RESTAURANT
In a prestigious setting facing the sea and Golden Islands, the Hotel’s restaurant Le Loup de Mer serves Mediterranean dishes that exalt the natural flavours of our local produce from both the land and sea.

Extravagant and creative dishes by our Chef who, every day, is inspired by the produce available at the market. Open from May to October, the restaurant Le Loup de Mer welcomes you for your evening meal. The restaurant seats up to 80 people.

L’ESCALE RESTAURANT
The beach restaurant l’Escale offers you moments of freshness during a sunny lunch. In evening, enjoy an exceptional spot by the sea. Whether raw, marinated or grilled, the fish remains the star of the Stopover.

LE POOL HOUSE RESTAURANT
Fresh, relaxed atmosphere around the pool. Light or gourmet salads, grilled over a wood-fire, homemade cocktails, seasonal Emkipops as well as organic sunscreens and board games.

BARS
The hotel has three bars with original menus and cocktails specific to each space. Bar du Loup de Mer: with its in&out bar and elegant terrace facing the sea, the bar welcomes you every day from 4 pm onwards with short and long-drinks, after-dinner drinks and eaux-de-vie together with a fine selection of whiskeys and rums, not to mention our home-made tapas.

Pool House Bar: in front of the pool and opposite the sea, this bar welcomes you every day from 10 am to 6 pm with classic and original cocktails and shared tapas as well as smoothies and milkshakes.

Bar de l’Escale: on the terrace of the restaurant on the beach, this bar welcomes you all day from 10 am onwards to the gentle sound of the waves with classic and original cocktails, together with a selection of rosé wines for you to taste with your feet in the sand.

Sailing courses for beginners, young sailors (from 5 years old) or old-hands with La Voile de Cavalière, a member of the French Sailing Federation.

Cavalière beach is ideal for making the most of the Med and getting your fill of thrills and moments you’ll never forget. ON THE ROUTE DU MIMOSA 
The Route du Mimosa stretches for 130 km, and we recommend taking it from January to March – the season when the mimosa flowers. Mimosa is the real symbol of the Côte d’Azur in winter, just as lemons are, and you’re sure to be amazed by this colourful itinerary that follows the blue of the sea and the yellow of the sun – the colours of our hotel!

The Route du Mimosa crosses eight municipalities: Grasse – Pégomas – Le Tanneron – Mandelieu la Napoule – Saint-Raphael – Sainte Maxime – Le Rayol-Canadel and Bormes-les-Mimosas. Each is a charming stopover that ranks as one of the most beautiful venues on the Côte d’Azur. Below we introduce you to three villages located at the beginning, middle and end of the route.

Le Tanneron with its 22 hamlets nestling in the heart of the massif 516 meters above sea level. Here you’ll discover a vast expanse dotted with wild and cultivated mimosas, whose velvet, fragrant yellow balls explode in a natural, hilly landscape. Guided walks with naturalists are available.

Le Rayol Canadel, where Le Bailli de Suffren Hotel is located, is a village full of charm and a gentle way of life in a natural, well-preserved environment.

This is a site of great beauty, where the wooded hills of the Corniche des Maures disappear into the azure-blue water of the Mediterranean opposite the magnificent Îles d’Or. Close to Le Bailli de Suffren are the Jardins de la Méditerranée, well-known to lovers of green spaces.

Bormes-les-Mimosas, where the origins of the village date back to the 12th century, is without doubt the mimosa capital of the Var. There are no less than 90 species waiting to be discovered on a range of walks high up in the hills with a bird’s eye view of the sea below and the port of La Favière.

THE VAR: A PRIME LOCATION FOR BLACK TRUFFLES.
Truffles are considered the “black diamond” of Provence. Also known as “rabasses” in Provencal, they are a noble product that grow in rich terroirs. Provence alone produces 80% of all the truffles produced in France. They are found in the heart of this picturesque region between the mountains and the sea.

It was back in 1810 that the first “truffle farmer” had the brilliant idea of planting acorns that he had collected under truffle oaks. Nowadays, between 10 and 30 tonnes of black truffles are harvested every year. Although the harvest begins in November, it is not until January that the truffle reaches its ideal maturity.

With its round but imperfect shape, the black truffle gives off a captivating fragrance that is highly sought-after by anyone who appreciates fine culinary flavours. Priced at between 100 and 1,000 euros a kilo, truffles can be found not just in the top Michelin-starred restaurants but also in many family homes, cooked in omelettes, for example.

There are a few precautions to take when preparing truffles. First of all, cook the truffles as little as possible so you do not impair the aroma, and take them out at least 12 hours before preparing them. Don’t add seasoning that is too strong, and use fat to release the truffle’s full flavour.

Don’t hesitate to try out a day discovering black truffles with a truffle farmer. This day out is devoted to digging up or harvesting truffles, with a meal in the form of a “snack” made – of course – from black truffles. All the secrets of the truffle will be revealed to you: how to choose them, clean and cook them.

The list of the best places to find black truffles includes the weekly winter market for black truffles in Aups, held from November to March every year. You’ll have realised by now that the black truffle is a mysterious and unique product worthy of being discovered and savoured.
