Inspirational setting
The avenue that leads to the medieval abbey meanders between centuries-old trees and carpets of lush green lawns. Here you are on the thresh-hold of an exceptional site steeped in history, shaped by the men who built it and those who lived here for centuries.

The majesty of its buildings, the pure and simple beauty of its stonework in the heart of a park of 7 hectares (17 acres). A feeling of peacefulness and deep serenity will delicately envelop you, as if the Cistercian monks had left a little of their spirituality beyond the ages.

Former Cistercian abbey
Our establishment is an authentic Cistercian abbey from the 12th century. In 1131, it was founded by Etienne Harding, third abbot of Cîteaux, the mother church of the religious order that was to extend its influence over all of Europe.

Our church was consecrated in 1172 and, from then on, many monks occupied this little corner of Burgundy. Around the church and over the centuries, therefore, were built a cellar, crypt, cloister, refectory, farmhouse, dovecote, outhouses, wine press, monastic dwellings, etc.

The abbaye today
Clive and Tanith Cummings took over the Abbaye in 2005. Transformed into a luxury hotel, and having since become a member of the prestigious network of Relais & Châteaux, the Abbaye has lost nothing of its distinguished air.

Through the centuries, Gothic architecture and Renaissance style have continued to characterize the location. The number of rooms at the hotel is being increased in line with building work undertaken by the Cummings family, always with respect for the ancient stonework.

The gastronomic restaurant, installed beneath the vaulted arches of the former cloister, enjoys a unique setting. It was granted a Michelin® star in 2007. Today, the Chef de Cuisine is Guillaume Royer, prestigious Meilleur Ouvrier de France 2015,orchestrates the 2 restaurants Le 1131 and Le Bistrot des Moines.

In 2008, the Abbaye de la Bussière received the title of “Hideaway of the Year 2008”, a prestigious distinction awarded by the American journalist, Andrew Harper.

Breakfast at the Abbaye de la Bussière
Served in the breakfast room, bedroom or on the terrace, breakfast at the Abbaye de la Bussière is a delicious moment. The buffet is made up of fresh products (seasonal fruits, pressed fruit juices, dairy produce) that are carefully selected, local and home-made produce (cheeses, jams) of great quality.

We also prepare the traditional full English breakfast for guests requesting it. It is a moment both pleasant and gourmet to start the lovely day to follow.

Le 1131 restaurant welcomes you amidst ogival vaulted arches, arcades and columns, all illuminated by dancing rays of sunlight through high stained-glass windows. You are immediately gripped by the understated natural beauty of this place.

So here you are, comfortably installed around an impeccably dressed table. You can choose to be placed around wide central sofa-style seating or more intimately on the upper gallery. At lunchtime, natural light is soft and when evening comes, scintillating lighting gives the room a new sparkle.

All around you, sculpted pillars, period embroideries and engravings offer a picturesque decoration that constantly recalls the long history of this location. The gastronomic restaurant Le 1131 is synonymous with magic.

The cuisine of our Chef
A local boy, Guillaume Royer is a passionate lover of his Burgundian terroir, knowing its villages and landscapes, markets and producers. From his wanderings and encounters, he brings back tastes and flavours through products of great quality.

In the restaurant Le 1131, fish and game, as also fruits and vegetables, are seasonal. They are authentic. Woodland mushrooms like morels, chanterelles, cèpes and bolets are the stars of the autumn; pumpkins, Jerusalem artichokes and cabbage warm up winter with roebuck and plump pigeon: organic trout from the Yonne welcome the arrival of spring together with fresh green shoots.

Orchards and gardens in summer offer up their fruits brimming with sunshine. Then there is honey, coming directly from the Abbaye’s own beehives.

Our Chef applies all the talent of a Meilleur Ouvrier de France and his creativity to honour these regional products and to pay homage to the men and women who have fashioned them. In this way, his cuisine is in their image, generous and full of taste. Perfectly arranged dishes compete in finesse and flavour.

The wine cellar
The history of Burgundy has been written through the vineyards that have shaped its landscapes, its men and women over many centuries.

Its regional gastronomy is intimately linked. Proud of this heritage, the restaurant Le 1131 reveals a superb cellar of highly prestigious crus. Our resident sommelier, Freddy Jaugey, will listen attentively to help you in the choice of wine to enhance the dishes you have chosen.

The Bistrot des Moines has a Michelin Bib Gourmand award.

The cuisine
Our Chef Guillaume Royer is inspired by the culinary repertoire of our grandmothers to prepare dishes celebrating the authenticity and simplicity of family moments. Each day, he brings back from market produce cultivated by local, regional producers he has always know.

In his basket, organic hens’ eggs, belly pork, seasonal fruits and vegetables, some Franche-Comté cheeses, freshly-caught fish. The Meilleur Ouvrier de France gets to work in his kitchen, conjuring up for you fricassées and sautés, dishes that will simmer for long hours in pots and pans… and not forgetting his fresh fruit tarts.

The terrace
From the first sunny days, benefit from the early sunshine on the terrace of the Bistrot des Moines. Around you, beautiful lawns with grass that is still fresh, flowers in their garden boxes, impeccably pruned bushes of boxwood; a little farther off, the park and its centuries-old trees invite you to stroll. Let time go by, listen to nature around you, savour this bucolic luncheon experience.

Route des Grands Crus: nicknamed the “Champs-Elysées de la Bourgogne”, this itinerary over sixty kilometers takes you between the Côte de Nuits and Côte de Beaune, passing through 37 villages from Dijon to Santenay, via Chambolle-Musigny, Vosne-Romanée, Nuits-Saint-Georges, Pommard… so many deliciously sounding names to the ears of lovers of great wines.

Discovery of Burgundian Heritage
Churches and abbeys: Burgundy includes a large number of religious edifices dating from the Middle Ages, with so many not-to-be-missed sites, as much for their artistic as historical features. Let yourself be enchanted by the abbeys of Fontenay, Cîteaux, Cluny, Tournus, the basilica of Vézelay, the cathedral of Autun.

Castles: Châteauneuf-en-Auxois , la Rochepot, Bussy-Rabutin, Commarin… Château du Clos de Vougeot , at the heart of the Route des Grands Crus wine trail, has housed the confraternity of the Chevaliers du Tastevin since 1944.

Sporting and Leisure Activities

Patrouille Breitling: based at the Dijon-Longvic airport, this civil aviation acrobatic team holds in store a lot of surprises for lovers of thrills and sensations. The Breitling Jet Team trains from November to March before moving on to air shows throughout Europe.

Dijon-PrenoisCircuit: addicts of motor sports can rendez-vous at this circuit which in particular stages the historic Grand Prix de Bourgogne and the Grand Prix de l’Age d’Or (Golden Age). Racing driver training and track initiations are also on offer.

The Morvan: this natural park in the region particularly includes numerous hiking trails like the GR13, Tour of the Morvan GR country trail, GR131 or the path from Bibracte to Alésia.
