Carpe Diem Santorini is an award-winning, adults-only, ultra-private spa resort. Just ten suites, the island’s largest, individually designed and developed by the island’s most renowned engineer, the late George Kopatsaris, who since 1982 and until 2011 led most of hotel development in Santorini.

THE ARCHITECTURE
The unique architecture of Carpe Diem brings together ultra-chic minimalist lines and combines them with Cycladic practicality; for example, the whitewashed buildings with their thick walls serve the meaningful function of reflecting the scorching heat of the summer.
THE CONSTRUCTION TECHNIQUES
The property’s design and construction by Georgios Kopatsaris, utilised a wide range of meticulous techniques, such as patiti tsimentokonia and stucco veneziano to achieve the highest craftsmanship possible. The property is renovated every year to maintain the original feel that its creator intended.
THE FAMILY
Carpe Diem Santorini is still run by the Kopatsaris family to ensure that the highest standards of service and quality are attained. Fotini, the mother, and her children, Sotiris and Sofia, are working hard to build on George Kopatsaris’s legacy.
Fotini is the Operations Manager of the property while Sotiris, the Managing Director, followed the footsteps of his father and studied Mechanical Engineering and Management with degrees from the University of Sheffield and Imperial College London.
Sofia on the other hand is the Hotel Manager and has majored in Tourism & Hospitality Management at the University of Surrey and ALBA Graduate Business School. Their hands-on approach to the guest experience ensures a continuous commitment to excellence and innovation.

WINE TASTING SANTORINI
The vineyards of Santorini are considered some of the most valuable in the world, due to their longstanding heritage, history and unique properties resulting from the volcanic soil, which gives all the wines an exquisite mineral taste.
The vineyards date back to the prehistoric times and have maintained their continuity, with each generation passing down the knowledge and expertise in making fine wine. For this reason, do not miss out on wine tasting in a boutique winery such as Santo Wines (Pyrgos) or Argyros Estate (Exo Gonia).
The first vineyards were planted approximately in 1700 BC and were destroyed due to the violent volcanic eruption in 1600 BC. However, according to Herodotus, new vineyards were planted in 1200 BC, which have been producing wine continually up to this day.
This means that Santorini’s vineyards are estimated to be older than 3200 years of age. The reason for their longevity is the absence of the insect phylloxera; the volcanic soil makes the vineyards immune to the pest.
Santorini’s millennia-old wine heritage and proprietary expertise have enabled it to become the producer of some of the world’s highest quality wines, boasting the oldest surviving vineyards in the world.
