Château de la Gaude, an 18th-century Provençal bastide nestled in a green haven in the heart of Aix en Provence, is opening its doors in 2019.

The man who dreamed of reviving this sleeping beauty of an estate has successfully transformed it into a unique place of life and conviviality, promoting a certain “art de vivre” around the worlds of wine, art and gastronomy.

Château de la Gaude opened its prestigious hotel in July 2019. A timeless venue in the heart of the vineyards with a breath-taking view of Montagne Sainte-Victoire. The 14 elegantly decorated rooms and suites of our 5-Stars boutique hotel are spread across the various buildings of the estate, akin to a small village.

The renovated Orangery and Chapel lounges as well as the various terraces, French gardens classified as a historical monument, and outdoor swimming pool (coming in 2020) provide a magical setting for romantic or family vacation.

Château de La Gaude is the ultimate Provençal bastide. Its various leisure and production functions have been perfectly preserved, and the estate offers remarkable balance in proportions and rigour in its construction.

The sublime French garden, classified as a historic monument, is ideal for long walks. The alley – haven for butterfly hunting – adds yet another dimension to this place of character. A pleasure for the eyes and an ode to the city of Paul Cézanne.

The composition of the garden oozes beauty, and is imbued with poetry and enchantment. It calls on our heart of child and provides a feeling of escape only a few minutes away from Aix-en-Provence.

Located in the northeastern Pinchinats district, just ten minutes from the city centre of Aix-en-Provence, the estate offers a breath-taking view of Montagne Sainte-Victoire, the ultimate symbol of Provence. The district has a rich history with for instance its water source, first discovered in the 12th century.

The name of the district comes from “Penchinats” in Provençal language, which designated a combing workshop in the Middle Ages. Very popular with the local bourgeoisie, this quarter has managed to preserve all its beauty and character.

LE ART RESTAURANT
Barely a few months after opening, the Michelin Star ws awarded. At the helm of our gourmet restaurant, chef Matthieu Dupuis Baumal and his team take on the challenge to amaze your eyes and enchant your taste buds with his elaborate cuisine that highlights the smells, colours and flavours of Provence through the seasons.

VINEYARDS

Located in the South-East of France in the heart of Aix-en-Provence. A stone-throw from the beautiful landmarks of Puyricard and Montagne Sainte-Victoire, Château de la Gaude is the only wine estate in the city of Cézanne.

The charming “Pinchinats” district is shielded from the mistral and remains nice and cool in summer. The land of Château de la Gaude spreads across a hilly terrain, from 250 to 400 metres above sea level.

Our “Le Capeou” plot is the high point of Aix-en-Provence and offers a breath-taking view of our vineyards. Our terroir enjoys long sunshine hours and is bathed in cicadas warbling on hot days. Evenings in Provence are particularly mild and relaxing.

The estate is home to 15 hectares of vineyards classified as “Coteaux d’Aix-en-Provence” PDO that mainly produce Grenache, Syrah, Cinsault, Cabernet Sauvignon, Rolle, Sémillon, Grenache blanc, and Clairette. The symbiosis of both temporalities described above confers great acidity and freshness to our grapes.

Our sandy and silty soils possess great mineral levels, which are carefully assessed for every plot to grow wines according to their terroirs, typicalities and best-suited grape varieties.

Our oldest vines are 1958 Grenache, for which we practice the “gobelet” pruning method, an ancient technique very common in the South of France. All grapes are harvested manually in small crates in the early morning to preserve their freshness.

Our grape pickers use a double sorting method: first, they put aside the most beautiful bunches; then, a second sorting is carried out by the cellar master, who tirelessly removes the last bad grapes from the sorting table.

Respect for nature and organic farming have been at the heart of our philosophy since the Estate was founded.

THE QUALITY OF A WINE IS WORKED IN THE VINEYARD!

Aware of the importance of our terroir: the land, the vines and the climate form the basis of our work. In accordance with the principles of biodynamics, we practice viticulture that respects our environment and our soils.

Concerned about the quality of our work, each gesture, action and method is carefully thought out and thought out with the aim of preserving and ensuring the quality of our heritage over time.

This daily requirement has come at a price since all of Château de la Gaude wines have been labeled and certified “organic farming” for over twenty years now. We therefore strive to produce highly qualitative and healthy grapes, thereby creating “haute couture” wines and expressing our terroir in the most sincere way possible.

THE WINERY

The renovation of our winery to start in 2016 when the estate was taken over. Priority being put on the quality of winemaking and the practicality of the work in the winery, we also wanted to associate elegance and aesthetics to this project.

We entrusted the realization of the cellar to the Italian specialized company DeFranceschi which knew how to take up the challenge of the technicality of high flight while conceiving to measure with Olivier Chadebost, a unique tank design for the Château de la Gaude.

The wine and aging tanks are made of anodized stainless steel, the coating of mirror stainless steel, glass platforms, it is ultimately an exceptional space that currently allows us to vinify in the best conditions.

We have designed the wine-making system entirely by gravity with a difference in levels between the reception of the harvest and the final aging tanks in order to work as much as possible by natural flow.

Three separate spaces are found in our cellar: a wine-making vat for our reds, a vat dedicated to whites / rosés and finally a concrete vat intended for the breeding of our great reds. The second part of the breeding is done in wooden container.

We apply the same thoroughness and the same rigor in the choice of our coopers as what we apply in our vines and practice a fine selection of each barrel that we use in order to maintain the level of quality sought at each stage of our process.

This allows us to raise our wines in the best possible conditions and to shape them in the best possible way.

ART

Located at the foot of Montagne Sainte-Victoire, Château de la Gaude offers an ideal setting to exhibit the works of the great masters of contemporary art. In the gardens and rooms of the Château, you might stumble upon Philippe Pasqua’s canvases as well as monumental sculptures. Moreover, an exhibition venue will soon open.

SHOPPING

In Provence, Aix is renowned for being the capital of fashion and shopping. Leading luxury brands have established their base here, in particular in the triangle formed by Rue Fabrot, Rue Marius Reynaud and the Cours Mirabeau.

Off-the-peg fashion stores or haute couture boutiques, prestigious jewellers, famous shoemakers: you will be spoilt for choice.

The town centre’s streets are also lined with shops of all kinds. Take a stroll and enjoy a drink or a snack on a terrace, for example, on the Cours Mirabeau, where there are many well-established bars and restaurants.
