Indochine Restaurant
AN INDO-ASIAN EXPERIENCE
Embark on a thrilling epicurean adventure with Head Chef Virgil Kahn at Indochine Restaurant. One of the earliest meeting points between East and West, Cape sailors returned from Asia’s spice lands with great riches, and it is these flavours that are celebrated at Indochine, together with the expression they found in South Africa’s Cape Malay cuisine.

The Terrace and Swallows
Dine al fresco with views of Table Mountain on the western horizon or beneath the eye-catching Swallows in Flight art installation by Lionel Smit and André Stead in Indochine’s rich and intimate blue- and copper-toned interior.

Past and Present
Balancing authenticity and innovation, Head Chef Virgil Kahn draws on old Cape Malay family recipes and his frequent trips to Asia to offer fresh, delicate food as light as it is satisfying, served with an imaginative touch of theatre

Homegrown Gastronomy
The ingredients from which Virgil conjures his unique Afro-Asian cuisine are grown especially for Indochine Restaurant on the Estate and picked daily from the biodynamic greenhouse.

Morning Indulgence
For Lodge guests in residence, start the day with a luxurious breakfast at Indochine. Local, organic produce is served alongside freshly baked breads, cold-press juices and tempting brunch dishes.

HEAD CHEF
Virgil Kahn
Head Chef Virgil Kahn is behind the evocative, fine dining food theatre that is Indochine. He comes to Delaire Graff Estate from an esteemed background, having cooked at Gordon Ramsay’s Maze and Nobu at The One&Only Cape Town.

Kahn’s philosophy is centred on an all-sensory dining experience, combining exquisitely balanced flavours with imaginative presentation. “The restaurant is Asian influenced, but definitely not a fusion of any sort,” he explains.

“It is a collaboration between fine dining, the European kitchen and South African style.” The result is an authentic, exciting menu that defies categorisation.

Artful Cuisine
At Indochine restaurant at the Delaire Graff Estate guests dine under a huge art installation where 1,000 birds become part of the stunning view that the dining room affords over the Stellenbosch vineyards and Table Mountain in the distance.

Called Swallows in Flight, the sculpture is a fitting metaphor for head chef Virgil Kahn’s progressive modern Asian cooking – dynamic, inspiring and something to behold. Indochine isn’t a typical Stellenbosch restaurant. In an area known for its high-reaching places serving South African or European cuisine, Indochine is a breath of fresh mountain air.

At this luxury restaurant Kahn serves vibrant and creative Indo-Asian dishes inspired by the live-fire cooking of Cambodia, Thailand, India and Japan but filtered through a South African lens. It is food befitting of the restaurant’s spectacular views.

It’s been a journey of discovery for Khan, who joined the restaurant as chef de partie but quickly impressed, moving up the ranks to eventually head up the kitchen. At Indochine, Khan has been on a mission to showcase the flavours and nuances of traditional Asian cooking while adding his own modern spin.

While many dishes on the a la carte menu might seem familiar by name, Khan has combined authentic ingredients with more contemporary cooking techniques to create a unique style of cuisine.

The Art and Gardens
AN EXTRAORDINARY COLOUR PALETTE
A botanical paradise nestled within a dramatic mountain setting, discover acres of tranquil gardens planted to reflect the changing seasons. Spectacularly in bloom every day of the year, the Estate acts as an incredible backdrop for art and sculpture, where Laurence Graff’s personal collection is a carefully curated to showcase South Africa’s finest contemporary artists.

The Gardens: a Living Canvas
A garden that dares to be different, designed to please the senses and complement the abundant flora and fauna. To encourage biodiversity, over 350 indigenous plants and other imported, non-invasive species nestle among art, sculpture, rippling water features and reflective pools that work in harmony to create the ultimate tranquil garden setting.

THE LANDSCAPE ARTIST
Keith Kirsten
Keith Kirsten is the globally recognised talent behind the gardens and landscaping. A celebrity horticulturist and global award-winning landscape designer, his expansive knowledge of African flora creates an uncompromisingly spectacular display day after day. A fitting backdrop to the Estate – and testament to his boundless passion for plants, people and the environment.

SCULPTURES
Anton Smit
Anton Smit’s sculptures epitomise his exceptional skill at imbuing his pieces, motionless though they are, with an undeniable feeling of movement. Each sculpture gives the impression that it is about to reach out and touch or speak to the viewer, and even the most abstract pieces express the instincts and feeling of humanity.

SCULPTURES
Lionel Smit
Lionel Smit is a South African artist who operates a remarkable studio just outside of Cape Town wherein he pursues his craft in all manner of media with areas dedicated to sculpture, painting and printmaking. Inspired by reflection, symmetry and the psychology of the Rorschach inkblot technique, Lionel Smit’s ‘Morphous’ is an illustration of the duality of human existence, encompassed by the mirrored figure of a Cape Malay woman.

SCULPTURES
Dylan Lewis
Dylan Lewis´s primary inspiration is nature. On one level, his bronze sculptures celebrate the power and movement of Africa´s fauna; on another, the textures he creates capture the ancient rhythms and primeval ruggedness of the African continent’s landscapes.

The Art: a Personal Passion
The Estate serves as a remarkable art gallery, with more than 400 works from Laurence Graff’s private collection on display. An extraordinary testament to Laurence Graff’s passion for African art, works by Deborah Bell, Vladimir Tretchikoff, Lionel Smit and William Kentridge, amongst many others, draw your gaze. Whether gracing the walls, ceilings or gardens, these pieces are the finishing touches to a rarefied destination without parallel.

LODGES & SPA RECEPTION
Ndikhumbule Ngqinambi
Ndikhumbule Ngqinambi’s primary medium is oil on canvas with his inspirations rooted in film, theatre and real life. He describes his work as figurative expression. Ngqinambi deals with the motion of figures and how they react to certain situations through composition, colour and contrast.

RECEPTION
Vladimir Tretchikoff
Delaire Graff is home to a very special painting. One of the most iconic pieces of the 20th Century – and the first piece of art to inspire a lifelong passion in Laurence Graff – guests can view Vladimir Tretchikoff’s iconic Chinese Girl, currently on display in the entrance to our main building.

THE SPA
Deborah Bell
Deborah Bell is one of South Africa’s most acclaimed artists; a transcendent sculptor, painter, printmaker and collaborator. Her experience of mark-making is a highly spiritual and deeply personal. Memory and its private and public role is a prevailing theme within her works, a number of which are to be discovered throughout the Estate.

WINE LOUNGE
Kendell Geers
By weaving together the socio-political, the activist, the mystical and the animistic traditions while drawing on sign, sigil and symbol, Kendell Geer’s work asserts a talismanic and totemic identity which radiates strong transformative energies. Each work is distilled from the process of the ‘word’ being made manifest.

DELAIRE GRAFF RESTAURANT
Fred Schimmel
Fred Schimmel’s work epitomises twentieth-century abstract art within the South African context. Schimmel is not bound by the dictates of style, genre or medium. His strength as an artist resides in the versatility of styles, techniques and mediums that reflect his freedom of expression.

THE VINOTEQUE
Nicolas Moreton
Nicolas Moreton is a modern master of the medium of stone carving. Within the quarried block, he sees the imaginings of his mind’s eye when, to the rest of us, the inert stone may as well be a mere doorstop. His work suggests the primordial power of the material with which he so deftly wrestles.

DELAIRE GRAFF RESTAURANT
Sydney Kumalo
It was Sydney Kumalo’s choice of subjects, his conscious decision to use universal frames of reference and combine a wide range of sources, that made him tower above his peers and contemporaries. He draws strongly on African sculptural tradition, while articulately reflecting international modernism.

OUTSIDE RECEPTION
Hank Willis Thomas
A photographic conceptual artist primarily working with themes related to identity, history and popular culture. Hank’s interest in representing photographic ideas through unconventional materials results in a fascinating combination of works that exploit the visual complexities of the not so distant past.

DELAIRE GRAFF RESTAURANT
William Kentridge
William Kentridge is undoubtedly the best-known South African artist. Working conceptually from a fixed point and with what is in essence, a very restricted technique – charcoal drawings with limited touches of pastel colour – Kentridge has developed these drawings into an oeuvre of astounding depth.

INDOCHINE RESTAURANT
André Stead
Working in collaboration with Lionel Smit, André Stead produced ‘Swallows in Flight’ featuring over 1,300 swirling Perspex swallows suspended over Indochine restaurant. Stead says the installation is “a symbol of freedom and endurance that describes the innate liberty and graceful beauty of the human spirit”.

Sustainability at Delaire Graff
COMMITTED TO AFRICA’S FUTURE
We are committed to Africa’s future and our philosophy at Delaire Graff Estate is to “Create responsibly, Give whole-heartedly, Leave no trace”. This founding principle drives many exciting initiatives and innovations across the Estate and into other projects and initiatives supported by Delaire Graff such as the FACET Foundation.

Established by the founder of Delaire, Laurence Graff, the FACET Foundation (For Africa’s Children Every Time) is a charity that works with local partners to improve the lives of children and young adults in southern Africa.

Each guest contributes to our ability to support FACET’s many programmes, especially the Pebbles Project, which enriches the lives of many in the local Winelands farming communities.

South Africa
The Pebbles Project works directly with the local Stellenbosch community, of which Delaire Graff Estate forms a part. FACET provides funding to the Pebbles Project and supports several initiatives, including six Graff Mobile Learning Centres that tour the Winelands, providing access to books, computers and internet learning, alongside an engaging programme of after-school clubs, outings and activities.

Lesotho
Working in partnership with Help Lesotho, FACET funds a Graff Leadership Centre in Leribe that is devoted to improving the lives of vulnerable girls and members of the local community who have been affected by the proliferation of AIDS and HIV in the adult population.

The centre has become a central meeting place for thousands of children, youth and grandmothers, as well as neighbouring communities and schools.

Botswana
Run by Stepping Stones International, the FACET Foundation funds a Graff Leadership Centre in Mochudi offering varied programmes designed to educate and teach life skills to local youth of all ages, with the aim of making them self-sufficient leaders of their communities, as well as providing counselling and welfare support.

On the Estate
Various initiatives and programmes have been launched at Delaire Graff Estate to facilitate the growth and development of staff, and to ensure members of the Estate community always feel supported.

These are diverse and range from a fully funded Delaire Graff football team and health-oriented staff canteen to skills training and access to affordable health care. Where possible, Delaire is committed to hiring employees directly from the surrounding Winelands.

In the Kitchens
We use organic, home-grown and ethically sourced produce wherever possible throughout Delaire Graff Estate. Any food waste from the kitchens and offices is put to good use and converted into compost at the Estate Wormery, which is used to nourish the gardens, and biodegradable packaging is widely used.

Our Estate Wormery
A nutrition factory that never sleeps, our Estate Wormery continuously recycles and transforms leftovers from our kitchens and the Estate into organic, nutrient-rich compost and fertiliser. Absorbed at a slower rate than chemically created feed, it is one of the reasons why our greenhouse, vegetable garden and vineyards are thriving.

In the Gardens and Vineyards
With gardens planted by world-renowned horticulturist Keith Kirsten and vineyards managed by hand, the natural environment at Delaire Graff Estate is carefully tended to maintain a delicate balance. Our water-wise gardens feature more than 350 species of plant, 70% of which are indigenous.

By committing to best practices, the ongoing preservation of the inherited biodiversity at Delaire is assured and local bird and insect species are flourishing in this vibrant corner of the Banghoek Valley.

In the Lodges and broader Estate
“Creating responsibly” is integral to our philosophy at Delaire Graff. Every aspect of our Estate has been carefully considered to have a positive impact upon the earth, our guests and the people who work here.

Still and sparkling water is filtered and bottled on site, and linen is washed every second day (or on request) to help reduce water usage. Wherever possible, we build using sustainable materials and our flowers and produce are locally and responsibly sourced.
