GREEN THINKING AT CALAROSSA
Nature is omnipresent at Cala Rossa, so it is only natural for us to make protecting the environment a real priority.

It is also a unique opportunity to get all of our employees involved in setting up a sorting system for recycling, being more energy efficient, redesigning gardens and creating an organic vegetable garden, and also buying from responsible and local sources as much as possible.

Your help is also essential to reduce waste in all its forms. Thanks to your efforts, we have already been able to significantly reduce the number of laundry loads, but there is still a long way to go.

In today’s world, it is certainly hard to imagine giving up the comfort of air-conditioning. But far too often, windows are left open and rooms temporarily empty with air conditioners running… Apart from the negative impact on appliance systems, such actions lead to a generally unacceptable situation.

Our facilities make it possible to cool down your space in just 15 minutes if all guidelines are followed. Thank you in advance for your vigilance. Greater awareness of ecological issues also led us to create our natural cosmetics brand, NUCCA.

To respect the health of our customers and therapists, we made the choice to ban all chemicals in making our brand, and opted to source the ingredients for our cosmetics from an exceptionally preserved natural environment in Corsica. The toiletry items placed in the room are packaged in recyclable containers.

The marine environment is another area that must be respected and protected. After almost two decades of absence, molluscs and sea urchins have returned to the Gulf of Porto-Vecchio. On our own small scale, we want to help to protect marine fauna and preserve bathing water quality.

Guests can join us in this ambitious mission during their stay. This is why we ask that guests not use traditional sunscreens containing chemical filters and nanoparticles.

IRIS SUITE
A comfortable air-conditioned suite, “IRIS” of 50m², air conditioning, composed of one bedroom with a large bed, bathroom (bath & shower), toilet, telephone, television, wifi, mini bar, safety box, dressing room, sitting area separated of the children room (bunk beds), terrace south facing (without direct sea view because of the pine wood between the hotel and the beach), on the 2nd floor without lift.

HIBISCUS SUITE
A very comfortable two bedrooms suite, « HIBISCUS » of 60m², air conditioning, composed of two bedrooms (one with a large bed and the other one for children), 2 bathrooms, toilet not separated, telephone, television, wifi, mini bar, safety box, sitting area, terrace north facing (in direction of the spa).

SPA BY NUCCA
The Spa by Nucca, an intimate yet radiant place, offers 7 treatment rooms built along tree-lined patios and teak walkways in a 500 m² area. The services available also include a nail bar, a Léonor Greyl & VP hair salon, a herbal tea room, a swimming pool with underwater music and a sauna. This area is for adults only.

LA PINÈDE
A bistro for lunch and dinner

For relaxed lunchtime meals by the beach and delicious dinners in the evening on the terrace under the pine trees. Unabashed hedonism with very simple yet nonetheless inspired Mediterranean cuisine.

A mouth-watering menu, radiating warmth and sunshine, featuring the finest southern products and amazing produce from our kitchen garden.

There is a hint of Italy on some evenings, with a choice of delicious, classic pasta dishes, and soft yet crisp Modena crescentine, to be garnished with a variety of fillings. For pudding, light and original desserts and, as always, our delicious home-made ice creams and sorbets.

I PIATTINI
FOR DINNER, AT THE BAR, IN THE GARDENS OR ON THE BEACH
A menu of small sharing dishes. Piattini (Corsican tapas) in the form of sharing platters are served in the gardens: semolina rice with botargo; crescentine stuffed with mozarella and confit tomato, prawn carpaccio with fresh herb oil, tender octopus pan-fried with garlic and citron, and sweet treats of the day, to enjoy with a glass of wine or a house cocktail.

The indoor bar
In the heart of the hotel, with its superb terrace set in greenery and smoking room with immaculate linen curtains, this is the place to relax at the end of the day. As the sun sets, tranquillity returns, interrupted as you draw closer by the clinking of shakers heralding treats in store.

If you are a whisky, gin or rum lover, our bartenders will be delighted to present their highly specialised collections, featuring the world’s finest names.

For smokers, there is an excellent selection from Cuba. And during concert events, or for evenings when you feel a little peckish, you can prolong the pleasure by choosing piattini, plates to share, accompanied by excellent local wines.

The beach bar
On the waterfront, entirely built from wood, it’s the place to be! For a morning coffee, facing the sea as the bay slowly awakens, for a peaceful look at the day’s news, for a large glass of rosé on ice at aperitif time, for gourmet and ice-cold teatime treats, for a coupe of champagne at sunset.

La Tisanerie
Every sunny morning under the Cala Rossa gazebos in the garden, complimentary natural drinks with abundant therapeutic virtues, created by our “home-made” brand Nucca, are offered for you to slake your thirst or to enjoy during a moment of meditation.

“So green”! The warm beverages are served in small, stylish thermos flasks, while recyclable cups and straws are used for the cold refreshments. The gentle magic of these blends offers relaxation, purification and properties to boost slimming and blood circulation.

At Cala Rossa, gastronomy is a four-hand art, headed by Chef Pascal Cayeux and assisted by Sébastien Chauchat. This powerful and talented duo is keen on reinventing daily new delicious recipes, inspired by the Mediterranean cuisine and their morning pick at the hotel’s private garden. With a success recipe of their own : authenticity, seasonal products and simplicity.

FRANCIS PEAN
For three decades now, Francis Péan’s delicious deserts have seduced the most demanding palates. He really loves his island and selects the best ingredients with the utmost attention (honey, citruses, hazelnut) and takes his inspiration from the hotel’s herb garden.

CALA ROSSA’S GARDEN OF EDEN
Cala Rossa’s kitchen garden is quite simply amazing. A paradise of vegetation a few metres from the kitchens, encouraging and enhancing gourmet creativity.

Landscape architect Philippe Niez, a poet of the senses and the emotions, was inspired by the Mediterranean basin’s outstanding natural environment to design a deliciously sensual and prolific garden.

Surrounded by mimosa and tamarisk, lavender and fig trees stand side by side with aromatic herbs, tomatoes, aubergines, rocket, mangetout and a multitude of other species.

The aim is to attract pollinating insects, with a method that uses straw and compost to protect the soil microfauna, obtaining an entirely organic vegetable garden. The rewards are apparent, since this kitchen garden has become a marvellous setting for meditation and exploration.

The oyster flavoured mertensia maritima grows here, along with turmeric, ginger and Sichuan pepper; at the end is a circle of citrus teas (citron, kaffir lime, limequat, Buddha’s hand fruit and the rare finger lime, or citrus australasica…)

Before sunset, the chef’s assistants appear as if in a culinary dream to gather borage flowers, herba-barona thyme, lesser calamint, raspberries and wild strawberries to complement the chefs’ dishes.

PORTO-VECCHIO
Porto Vecchio is Corsica’s third biggest town.
It is ideally located between sea and mountain, bordered on the east by the Tyrrhenian Sea and on the west by the Ospedale and Cagna mountains.

The slogan “city of salt” is sometimes used, with the presence of salt marshes that are still active adjacent to the harbour. Surrounded by 4 bastions, the upper town, with its cosy small bars and elegant boutiques, hosts ongoing cultural and leisure activities during the summer months.
