Gourmet Restaurant
Coming from Champagne, his entourage and his region have passed on to Chef Julien Bontus, the new chef of the Restaurant des Bories, the passion for gastronomy and wine. With more than 15 years of experience in many starred establishments, he has been marked by the influence of renowned Chefs.
His love for haute cuisine became concrete during his first classes with Jean-Pierre Gillot – 1 Michelin star, and his experience with Patrick Henriroux – 2 Michelin stars, confirmed his choice. In 2016, he joined the teams of Nicolas Davouze – Bocuse d’or France, where he developed his unifying spirit and ambitions.
A true Epicurean, Chef Bontus sums up his cuisine as “instinctive, vegetal and graphic”. It offers flavors with unexpected combinations, such as a pigeon served with salsify, lychees and almond milk.

Spa & Wellness
“I chose a natural concept based on relaxation, plants, oils and energy. At the Spa Les Bories, for body and mind, I develop ancestral methods of active cares. The founding principles of my Spa are aromatherapy and albutherapy.
Aromatherapy has therapy properties as well as preventive and curative properties and albutherapy regenerates with light and white color. As a whole, the hotel Les Bories has soothing properties thanks to the selection of colors and texture, which allows, of course, to gain serenity.
For the face care, I chose the products from Codage because of the quality of their codified active ingredients perfectly adapted to our modern world. The results are fast.
For the philosophical explanation, I chose the name Ennea with reference to my philosophical tale released in 1999, “Ennea Mater”. Ennea is the Greek root of number 9.” (Françoise Bernard Gallon, Ennea)
Stay in Provence
From the hotel Les Bories & Spa, you can easily visit Gordes and Bonnieux, two of the most beautiful villages in France, but also the whole Provence and Luberon with its famous typical villages.
A few kilometers as the crow flies from Gordes, you will find the medieval abbey of Notre-Dame de Sénanque, the mysterious “Fontaine de Vaucluse”, the unfathomable chasm of Saint Véran.
Do not miss Roussillon, a village of artists and potters famous for its ochers, or the city of Avignon. Then, continue to the beautiful landscapes of Provence.
If you like theater or opera, do not miss the Lacoste festival. This event, created by Pierre Cardin around twelve years ago, allows the audience to discover young singers within surprising carries of the Marquis de Sade castle.
