The immaculate façades of the Le Chabichou Courchevel are as white as driven snow. This typically Savoyard chalet at the foot of the ski slopes exudes discreet elegance with its traditional décor and no-one is left unmoved by the warm welcome of a family who are passionate about their profession.
The large spa takes you on a veritable sensory journey, and Le Chabichou especially offers a memorable occasion to taste the refined gastronomic cuisine of Stéphane Buron, distinguished as Meilleur Ouvrier de France in 2004.
It showcases fine ingredients such as Bresse pigeon and creates subtle pairings of flavours such as caramelised pork belly and verbena and creamy truffled polenta.
1963 – The beginning of a great adventure
It all started in 1963 when the young couple contracted a loan to purchase a small 9 bedroom chalet in Courchevel 1850. Michel took charge of the restaurant and Maryse the hotel.
1970 – On the road to success
After seven years of force and determination, Le Chabichou boasts 25 rooms and is awarded 2 stars in the hotel business. Although a very satisfactory reward, the Rochedy family has greater goals.
1975 – Stage 3
In 1975, a 3rd stage of development to create 41 rooms and suites at Le Chabichou is completed.
1979 – First star in the Michelin Guide
1979 is a specific year for the gastronomic restaurant awarded by its first Michelin Guide’s star. It became the first restaurant awarded by the Michelin Guide in Courchevel.
1984 – 2 Michelin stars
In 1984 the reputation of the hotel is indisputable. It is however, time for the restaurant to climb the ranks. The Chef Michel Rochedy is awarded a 2nd star in the Michelin Guide for his gourmet restaurant, previously referenced in the “Bottin Gourmand” and “Gault et Millau” guide books.
1988 – The hotel upgraded
Thirty-five years after their arrival in Courchevel, the Rochedy’s hotel is awarded a 4th star.
2003 – Le Chabichou adorns a white mantle
Always on the lookout for trends, the family decided to give Le Chabichou a major facelift in stylish white washed wood, unique in Courchevel.
2006 – «Le Boulevard du Chabichou», a fixture in the 3 Valleys
Le Chabichou is now a landmark in Courchevel. The resort even named a ski slope, «Le boulevard du Chabichou». This famous run in the 3 valleys area guides skiers to this most renowned table.
2014 – 30th anniversary of the second star Michelin
Le Chabichou celebrates the 30th anniversary of its second star in the Michelin Guide and renovates some of its rooms as well as 1000m2 carpet in the hallway and the gastronomic restaurant, wearing the famous “C” of le Chabichou.
2018 – Groupe Lavorel Hotels
Mr and Mrs Rochedy decided to take a well-deserved retirement, with a single objective: to preserve the family spirit of Le Chabichou. The Rochedy family perpetuates the tradition by handing over to a new family, that of Jean-Claude and the Lavorel Hotels Group.
2019 – Metamorphosis, 5th star
Le Chabichou is metamorphosing thanks to 8 months of work. This complete facelift allows the establishment to reinvent itself to offer all the ingredients necessary for a unique experience that meets all expectations.

Le Chabichou by Stephane Buron
In the evening, Stephane Buron offers himself a challenge and proposes you an Experience Menu of 5,7 or 9 dishes! This menu changes according to his desires and inspirations for a surprise discovery. His flagship recipe: The farmer pig cooked from head to toe, “to decline the product from A to Z”!
For more than 30 years, Stéphane Buron put all his passion in the Chabichou’s cuisines . This chef from Nancy boasts a CV as attractive as the hundreds of dishes he sends into the dining room daily. He was awarded the Taittinger International first prize in 2002 and “Meilleur ouvrier de France” in 2004.
He arrived in Courchevel in 1987, with solid and eclectic work experience forged at the Grand hotel Bragard in Gérardmer, with Christian Willer at the hotel Martinez in Cannes, in Palm beach in the United States and at the Palais de l’Elysée in Paris.
The international reputation of Le Chabichou relies on the reputation of its gourmet restaurant: inventive, refined and generous cuisine prepared with fresh, natural produces.

The Sidonie BAR
For the anecdote, it’s here, close to the fireplace that Daniel Auteuil presented for the first time The Well Digger’s Daughter. Sidonie is a cozy place with a warm atmosphere.
It’s the soul of the establishment: a friendly place where we like to relax around a macchiato after a day of skiing, a pastry for the parents or a pancake for the children. It’s also the perfect place to enjoy a vitamin cocktail.
Its name refers to Sidonie, the first owner of Le Chabichou. She decided to name the hotel Le Chabichou in tribute to the Sidonie Panache opera which one of scene is named “The Faction of the Chabichou”.
The Sidonie proposes a catering offer for those who would like some velouté or salad, comfortably installed in one of the soft armchairs of the Bar.
