Le Fabriche – Masseria in vigna was brought to light at the end of the 1990s from Alessia Perrucci’s idea of creating a travel experience that links to a charming hospitality with wine production, to which the area has been devoted for centuries.

Le Fabriche Relais consists of three main buildings the Masseria (in Italian, a traditional farmhouse), with a restaurant, relax rooms, and a lounge bar; the Ovili (lit. the sheepfold), an independent space next to the main building – which once was a sheepfolds,while now it’s a large multifunctional room with a panoramic view, used for meetings and small events.

Next to it, there is Le Fabriche Suite. Lastly, our Junior Suites, located in the olive grove, in a contemporary design, completely surrounded by nature.

It’s a place of history, a 17th-century residence overlooking the estate from the heights of the Murge plateau. Its position offers a unique view over a picturesque natural amphitheater, shaped by the olive trees and the vineyards, both facing South towards the Jonian Sea, which is only 3 km away.

THE HISTORY
The estate has kept its historic name: in the 10th century, the word “Fabrice” (see Lizier) was referred to the buildings intended for the Lord’s dwellings and the premises devoted to the needs of the farm.

Le Fabriche is situated on the Jonian coast of Salento, in Maruggio, a small town in the province of Taranto, settled between the 11th and 10th century over the ruins of the old hamlets of Castigno, Olivaro, and S. Nicolò (see De Giorgi).

The origin of this town’s name it’s controversial: it was either named after “Marrubio” – once a common plant in the area, widely used for its healing properties, or “Marubium” – due to its proximity to the Jonian sea.

Historians have mentioned it among the places given in fief in Terra d’Otranto (land of Otranto) “Casale Marugii quod fuit Templariorum” – thus demonstrating that its territory was partly granted to the Knights Templar until the suppression of the Order in 1312, and partly to the Benedictine monks of Brindisi.

The fief was later donated to the Sovereign Military Order of Malta and became their Master Commenda between the 14th and 19th century.

JUNIOR SUITE
The junior suite are equipped with all comforts to make your stay comfortable and satisfying. Spacious rooms, with king size double bed, air conditioning, heating, minibar, TV with sky, free wifi, telephone, safe, herbal tea corner, courtesy set, hairdryer, terrace with private garden. Possibility of connecting rooms – double or twin – for families.

SUITE LE FABRICHE
The Le Fabriche suite is a nest of intimacy and well-being, framed by an exclusive view of the farm’s vineyard and overlooking the garden of the internal courtyard. The elegant suite is equipped with a fireplace corner with sofa and all comforts: king size double bed, air conditioning, heating, whirlpool tub with glass cover that opens onto the starry sky.

THE BREAKFAST
Breakfast at Le Fabriche is a ritual: from our rooftop terrace, our guests can fully enjoy the beauty of the surrounding rural landscape. A rich buffet featuring a wide selection of sweet and savory food with special attention to local products, a variety of fresh fruits, and our staff’s smile will make our guests feel welcome and let them start their day with the right energy.

THE RESTAURANT
After becoming well-known to the general public for participating in the TV show “Quattro ristoranti” with Alessandro Borghese, our restaurant still delights our guests with an ever-changing menu.

A wide variety of fresh raw material generously offered by the surrounding territory is the foundation of our dishes that highlight and enhance the fragrance of the Mediterranean herbs. Seasonal vegetables are the main ingredients – paramount to a healthy, balanced, and natural diet.

Our farm-to-table and organic extra virgin olive oil and wines are the leitmotifs of the culinary experience at Le Fabriche. The Masseria’s rooftop terrace is the perfect location to dine during summertime, caressed by the warm sea breeze that cools off the hot summer nights.

LOUNGE BAR & EXTRA SERVICES
It is possible to arrange wine tastings, cooking classes, and in-room wellness treatments. The staff can take care of organizing a variety of services with external providers: horseback riding excursions, guided tours of the landmarks, sailing and diving classes, boat trips, and airport pick-up and drop-off.

EVENTS & MEETINGS
The multifunctional room Ovili, next to the main building, features wide glass walls with a view over vineyards and olive groove. This separate area, equipped with independent services, is the perfect place to hold conventions, meetings, presentations and other events.

It can accommodate around 60 people and it’s equipped with comfortable chairs. The room can be set up with audio and video diffusion systems as well as a projection screen on request.

THE SWIMMING POOL 
Our recently built pool blends perfectly into the landscape. It is located in a dominant position and surrounded by greenery. It is furnished with comfy sun loungers where our guests can enjoy sunbathing while reading a good book: a perfect way to reinvigorate body and mind.

Our gazebos, equipped with a bar and cooking area, allow our guests to enjoy every comfort and taste excellent aperitifs or a simple and healthy meal.

THE FARM
Le Fabriche project was born at the end of the 1990s with the aim of working with the vine varieties native of the area, focusing on quality: utmost care of the vineyard and, as a consequence, of the product and its consumers. Organic farming and research on vines and vineyards through collaborations with the best agronomists, enologists, and Universities.

THE VINEYARDS
Le Fabriche vineyard surface area covers 13 hectares, including in the countryside of Maruggio the vineyards situated in front of the Masseria that stretch over 10 hectares, and about 3 hectares of Primitivo DOC located in contrada Bagnolo in the territory of Manduria.

The longstanding plantations have been restored over the years while preserving the old, pre-existing varieties, duly selected and replicated in the new plantations.

THE VINE VARIETIES
Apulia is rich in noble native vine species, some of which come from ancient Greece. As a land of longstanding winemaking tradition, the Jonian area can be represented by a vine variety in particular: Primitivo, a symbol of the most iconic ancestral bond between man and the earth.

Primitivo originates from Dalmatia, and it was later imported by Illyrians more than 2000 years ago. It shares its DNA with the Californian Zinfandel. Primitivo wine, eulogized by Virgil and Horace in their odes, is the most direct successor of the ancient Peucetian “merum” – the iconic Apulian wine: Pliny the Elder defined Manduria, main hub of this wine, “viticulosa” – that means full of vineyards.

Another iconic variety of the area is Negroamaro, which widely prevails in its typical head-trained pruning style and has a predominant role in the DOC scene of Brindisi and Lecce and the IGT panorama of the Jonian area.

Two other varieties with a strong local identity are Malvasia Nera – or Black Malvasia, which produces a deep red wine with a characteristically sweet taste, and Aglianico – an age-old variety cultivated in Southern Italy and especially Campania, Basilicata, and Puglia. Aglianico is particularly suited for aging and it is considered, for his longevity, the “Barolo of the South.”

Impressive results are being achieved from an experimental Aglianico cultivation where more than 200 different clones of this variety were installed.

THE WINES
We designed our labels keeping in mind the “signs” that our ancestors left on the old stone walls of the Masseria. Signs that tell a far and ancient story, a repository of the wisdom of men that, with their hard work over the centuries, were able to prune and shape the vine and the olive trees, accommodating their nature, in this picturesque natural amphitheater.

That stone is echoed in our labels to give depth and character to the elements characterizing the origin of Le Fabriche wines. Our red wines – red like the Apulian soil, rich in iron and limestone rock. Our wines have a strong character and unique personality.

THE EXTRA VIRGIN OLIVE OIL 
Le Fabriche extra virgin olive oil is obtained from century-old Celina and Ogliarola variety olive trees situated in the ancient Contrada Olivaro, after which it is named. Its fragrance and aroma enhance the delicate balance of its components. Its structure is exalted by vegetal and fruity notes, such as tomato and artichoke. The formats available are 500 ml bottles and 5 ltr tin cans.

THE SEA
Just a few kilometers away from the Masseria, beach clubs and beautiful beaches are the best way to experience the crystal clear sea and its lively sea bottom.

Campomarino, a district of Maruggio, is famous for its dunes, classified as a site of Community interest, where the intense green of the brooms and the shrubland blend with the shades of the sea, whose iridescent color and clear waters are able to amaze any visitor.

This short section of the Jonian coastline has been praised on several occasions by national and international newspapers. As a result, the sea of Campomarino – in addition to winning several awards from the Environmental League – has earned the epithet of the “Seven Colors Sea.” Masseria Le Fabriche has affiliations with the best beach clubs in the area.

BIKES
Bikes are also available for our guests, who can explore the surroundings in the Apulian countryside, cycling at sunset with cicadas chirping in the background, or along the Jonian sea coastline.
