THE RESTAURANT
The Villa d’Amelia restaurant, awarded by the most prestigious gastronomy guides, has a new identity this year: a renovated dining room, a refined ambience and an informal atmosphere. A new gastronomic concept called DaMà under the direction of chef Dennis Cesco.

The cuisine of DaMà is a combination of tradition and experimentation, with particular attention to the use of excellent raw materials, with local ingredients from farmers, breeders and shepherds in the area.

The protagonists are the typical Piedmontese dishes: stories refreshed and renewed by the young chef’s gaze speaking of the magical land of Alta Langa.

THE CHEF
At only 16, Dennis Cesco’s passion for cooking took him to follow a professional path starting from the most humble roles in the kitchen brigade to working alongside the most famous international chefs: in France and Paris, Dennis Cesco works with chef Alain Solivérès at Le Taillevent, 2 Michelin Stars. Yannick Alléno at Pavillon Ledoyen, 3 Michelin Stars.

Christoph Pelé at Le Clarence 2 Michelin stars. In Italy, in 2013, he became the favourite pupil of Chef Damiano Nigro who, in 2021, handed over to him the kitchen of the Relais Villa D’amelia restaurant where now he serves as head chef.

Dennis Cesco’s cuisine at DaMà restaurant will focus on local ingredients and the authenticity of the countryside, which in Alta Langa is still genuine and intact, with its products to be found among shepherds and small farmers.

The simplest dishes are usually the most delicious and they look like they have been specially created to espouse the most precious autumnal ingredient, the Alba White Truffle, which will enhance their perfumes and tastes.

In fact the movement “Slow Food” was born in Bra (30 km away from Benevello), an association that “works to preserve the local cuisine, the traditional production, the animals or vegetables threatened with extinction and sustains a new model of agriculture, less intensive and cleaner” (www.slowfood.it)
