History

Originally from the fisherman town of Noto, I grew up surrounded by fresh fish and vegetables from an early age and enjoyed the real taste as a matter of course.

Taking advantage of the sensibility cultivated through that experience, after joining Kinjohro at the age of 19, he has continued to earnestly improve his skills as a cook.

As a cook, I am proud that my commitment to the freshness of ingredients sets me apart from the rest. Especially for fish, we basically bid in the morning, but we also develop our own route to purchase from the fishing port and prepare the one that we have determined the quality with our own eyes.

Rice is contracted directly with farmers in Noto, and other ingredients are basically mainly featured, but we also purchase from Hokkaido, Kyushu, and Toyosu in search of the best ingredients.

When you confront the ingredients of the four seasons, your brain as a cook works and the best cooking method is derived. And we believe that we can deliver genuine deliciousness to our customers by hand-crafting all the ingredients we use, and we are devoting ourselves every day.

Kaiseki / Course

The room

A large hall with dignity and brilliance. The 110 tatami mat room, which can accommodate up to 100 people, can be used for weddings, various meetings, and various events.

A gorgeous stage is set up in front, and traditional craft works add color everywhere. The window facing the corridor overlooks Maeda Tsushimamori Garden.

Western-style convention hall

This is a 370 m2 convention hall that was expanded with the aim of becoming a “restaurant inn open to the world” on the occasion of the 100th anniversary of Kinjohro.

In a calm atmosphere that is a mixture of Japanese and Western styles, we will support various gatherings such as meetings of 120 people, various commemorative ceremonies, parties, concerts, etc.

3 rooms of “Fujian” overlooking Fujiishi

“Fujian” has a venerable appearance and was completed in 1933 to commemorate the Great Enthronement. This annex, which was named by Omotesenke’s Iemoto Immediately Chusai, has not been refurbished and remains as it was at that time.

In each room, the traditional vermilion walls of Kanazawa are glossy, and the contrast with the lush garden is beautiful, making it a space suitable for entertaining important customers. It can also be used as a tea room during Suehiro-no-ma and Phoenix-no-ma.

Suehiro no Ma

Suehiro’s room can accommodate up to 40 people and gives a modern feel to it. Tateyama cedar is used for the ceiling board, and the window glass by the hand-blown cylinder method, which is rare nowadays, is left as it is.

In the space between the columns created by Inami sculpture, the design of “fan”, which means the spread of the end, is arranged.

Phoenix room

The Phoenix Room is one of the most prestigious rooms that can accommodate up to 8 people. The famous tree Senna siamea is used for the floor pillars as it was when it was completed.

“Phoenix” named after the room is placed in the space between the columns, and “Mt. Fuji” is beautifully expressed by the technique of Inami sculpture in a symmetrical position with the Fuji stone in the garden.

Paulownia

A paulownia room that can accommodate up to 4 people. The design of “paulownia” is elaborated in the column by Inami sculpture. This room is the closest to seeing the splendid branches of the Maki tree, which is over hundreds of years old, and is suitable for small-group banquets and hospitality.

Between the buds

The oldest bud room in Kinjohro, which has not changed its appearance since its establishment. The garden that spreads out from the window is the same as it was at that time.

The space with elaborate details such as the glossy vermilion wall, the ceiling board of Yakusugi, and the long press made of pine wood with the skin is truly exceptional. It is suitable for a small group of 2 people and can also be used as a tea room.

Tenkane

The banks of the Asano River are related to Kyoka Izumi’s “Taki no Shiraito”. The tempura specialty store “Tenkin” , which stands in the townscape that praises the atmosphere, is a restaurant that the chef is particular about.

Kinjohro’s wedding dishes are basically kaiseki cuisine that inherits traditional Kaga cuisine. The sea of ​​Japan and Roku Hakusan, each of which is hand-salted, has a number of delicious dishes that look gorgeous and congratulations.

The “Matsu no Ma” facing the courtyard is attractive because it overlooks the “Fujian” in the old building. You can spend the Shinto ceremony in the hall without worrying about the season and the weather. It can also be used for banquets with a small number of people.

Annex “Fujian”

“Fujian” is a memorable one for old-fashioned customers. At that time, with the demise of Emperor Taisho, Prince Hirohito became the 124th emperor (Emperor Showa). Kinjohro was built on the premises to commemorate the Great Enthronement.

Former Maeda Tsushima Mamoru Garden

A Japanese garden that accentuates the quiet appearance. It has hardly changed its appearance since it was the Maeda family’s garden, and it has the same special taste as it was over 150 years ago. A quiet space spreads out everywhere, and the atmosphere of each season will wash your heart.

Fuji stone

One of the seven taiko stones that Hideyoshi Taiko loved long ago. Hideyoshi, who was also a world-renowned person in the cultural world, owned a number of inscriptions related to the tea ceremony. It is said that Fujiishi was transferred to the Maeda family because of a relationship with a famous family in Kansai.

Maki tree

It is over hundreds of years old and is the oldest old tree in Kinjohro. It has been a long time since it was the residence of the Maeda clan, and it has been beautifully arranged by the gardener’s skill. The unusual branching can be seen especially from the “paulownia room” and “pine room”.

Lion seal lantern

A bronze guardian dog co-produced by the 12th and 13th generations of the Kaga domain’s potter, Miyazaki Kanzo. The existing one in Kinjohro is an open-mouthed “A-un” lion statue, and a pair of closed-mouthed “A-un” guardian dog statues exist on the site of the former Maeda residence in Kamakura.

Saber hanging for officers under the division commander

During the special army exercises held in Ishikawa Prefecture from November 2, 1918, the Otsu Army Command was set up in Kanazawa Castle.

Even after that, there were many military customers until the outbreak of the Pacific War, and Kinjohro became a lodging place for expeditionary soldiers. At the time of the feast, the soldiers would have unequipped and relaxed a lot.

Zodiac cup

The traditional “Zodiac Cup” of Kinjohro, which started in 1954 to support Kutani ware writers after the war, continues to this day.

Every year, we give customers who come to Kadomatsu a unique sake cup, which was commissioned by Kutani Yaki Kiln Moto Kaburagi Shoten. You can see the successive cups in the showcase inside the building.

Zodiac lantern

It has existed before the founder Kyubei Tsuchiya got the mansion, and it is the largest and finest lantern of the Maeda family in Kinjohro. The lanterns engraved with the zodiac are rare and are considered to be very prestigious, and you can feel the glory of the Maeda clan.

Sakura lion

It is a ceramic lion head that sits between the red-crowned cranes and is enshrined as the guardian deity of Kinjohro.

Wood carving is a common lion head, but it is a gem of Ohi ware that was commissioned by the predecessor Ohi Choami after the renovation of the main building in 1958, and it is dignified in the prestigious hall.

Stage

A stage between Tancho that can be used for weddings, various meetings, and various events. The background is a dyed work by Eiji, a master of Kaga Yuzenn, depicting Fujian’s Akamatsu.

Like the Sakura Lion, it was made when the main building was renovated in 1958, and represents the attitude of Kinjohro as a “cultural bearer.”
