Executive Chef Josh Tomson

Executive Chef Josh TomsonA graduate of the French Culinary Institute in New York City and the New York Wine Tasting School, Executive Chef Josh Tomson brings in over 15 years of culinary expertise and preference for local, organic and sustainable products.

He enjoys visiting farmers markets, and purchases local products whenever possible. Throughout the years of his culinary career Chef Tomson has been incorporating a farm-to-table philosophy, and assisting the properties he worked for, to become more sustainable and green-friendly.

“I am thrilled to lead this talented team at The Lodge at Woodloch toward a path that is so engrained in my own beliefs. The philosophy of letting nature nurture takes my passion toward local farm foods and pairs it with our amazing surroundings and the result speaks for itself,” shared Chef Tomson.

An Unexpected Approach to Gourmet Spa Food Preparation
TREE Restaurant, our restaurant and bar, embodies our belief that food that is good for you can also be sophisticated, artfully presented and graciously served. The Blackmore Farm and Orchard is approximately two acres and is in walking distance of our destination spa resort.

Within the two acres are a hoop house and two high-tunnels to help provide year-round growing opportunities. We also have lots of compost – three resorts-worth, preventing over 80,000 pounds of food scraps in our landfills per year.

While building the footprint of the farm, a 50-year old hand-built cistern was discovered from the previous farm. We love discovering pieces of history on our land!

The Blackmore Farm and Orchard provides a selection of the vegetables and herbs used at TREE Restaurant, as well as our occasional Farm-to-Table Cooking Demonstrations featuring just-picked items.

Additionally, the garden provides farm-to-massage table healing herbs and flowers for select spa treatments. Items such as rosemary, lavender, and calendula have abundant healing qualities and are grown with care each year.

We have also designed the Blackmore Farm and Orchard to act as a learning environment, with gardening classes that provide practical tips for your own gardening practice at home.

Our talented team of Chefs often share recipes using our farm fresh produce and herbs in our monthly emails and in cooking demonstrations. The Lodge at Woodloch is committed to local, fresh foods.

Our Chef team has searched high and low to find like-minded local farms to help supplement our seasonal menus. We are proud to support local farms and to have a true connection to where our food is coming from and how it is grown/raised.

Chef Curated Garden Dinners
Executive Chef Josh Tomson is switching up the typical Farm to Table dinner by bringing the Table to the Farm! Intimate Chef-led tasting dinners will take place right on the deck at the Garden Shed. The two-hour tasting will be led by Chef Josh as he selects the harvest focus for the dinner.

Our chef will prepare and discuss the dinner that will be paired with our Sommelier-selected wine. The dinners will take place seasonally each Monday, Wednesday, and Saturday evening from 6:00-8:00 pm and are weather dependent.

Honey Bees
A honey bee haven has been established in one corner of the garden to help naturally pollinate the garden and surrounding area. Four fully functioning hives reside in our garden and our Beekeepers have developed a bee education workshop to share their knowledge with the guests.

The four hives (or colonies) house over 200,000 bees and create honey to harvest year after year. Having home-grown honey for spa treatments, cooking demonstrations, and seasonal menus is a very sweet perk of having the bees on property.

However, the biggest perk of this workforce is how they sustain the natural biodiversity that surrounds the property. With remnants of an old orchard, a naturally occurring cranberry bog, and three herb and vegetable gardens, there is no shortage of work that needs to be done for these mighty masters.

Cooking Demonstrations
The Lodge at Woodloch has created a state-of-the-art demonstration kitchen that allows you to enjoy special cooking and baking presentations with our talented Chef team. Learn new cooking techniques, healthy and surprising ingredient alternatives, and elegant and fun presentation skills.

You’ll learn how to plan a menu around seasonal produce and herbs from the Chef’s Garden and prepare the new “superfoods” – the key to your healthy, active lifestyle.

The Lodge at Woodloch offers unique all-inclusive gourmet retreats. Private cooking demonstrations can also be arranged for individual guests as well as for corporate groups.

Wine List
Woman sitting on stone the wall of a wine farmOur award-winning wine list was hand-selected by our in-house Sommelier, Leslie S. Britt.

Leslie S. Britt DipWSET/ CSW/Sommelier:
Leslie began her love of wine in a small unpretentious Oregon vineyard after graduation from Northern Arizona University in Flagstaff Arizona.

As a West coast girl she never dreamed she would someday have the opportunity to manage a 9,000 bottle cellar on the East Coast, work a harvest in Italy and move to London to finish her education, earning a Diploma in Wine and Spirits with the Wine and Spirit Education Trust (the stepping stone for the Masters of Wine).

Her love of travel has taken her to some of the most exciting and remote places where wine plays an integral part of everyday life. When asked what the best part of this job is? “Hearing the stories behind the labels from the folks who lived them.” And the worst? “Counting those 9,000 bottles.”

Leslie’s role at The Lodge at Woodloch has blossomed as a wine educator, Sommelier, Mixologist, presenter, and mentor.

Whether you desire an artfully mixed cocktail or a glass of wine, the extensive list of fine wines, spirits, and ales available in our TREE Restaurant will both complement and complete your fine dining experience.

What is a Labyrinth? According to Veriditas: “The labyrinth is a walking meditation, a path of prayer and an archetypal blueprint where psyche meets Spirit. It has only one path that leads from the outer edge in a circuitous way to the center.

There are no tricks to it and no dead ends. Unlike a maze where you lose your way, the labyrinth is a spiritual tool that can help you find your way.

TRX
TRX is a form of suspension training that uses body weight exercises to develop strength, balance, flexibility, and core stability while having fun.

Through a TRX Suspension Trainer, our team of experts will guide you to leverage gravity and your own body weight to complete a set of exercises. TRX can be easily modified for all fitness levels.

YOGA
A wide variety of yoga classes are offered at The Lodge at Woodloch that allow yogis of all levels to explore their practice on the mat. Classes like Barry White Yoga and Chair Yoga are great ways to learn about the practice with limited movement.

The Great Wall of Yoga and Vinyasa Flow are a greater challenge for deeper stretches and poses. The options go on with Honey Lounge Yoga, Nature Yoga, Yoga for a Healthy Back, Hatha Yoga, Heart Opener Yoga and more. Or, just come for the Savasana.

MEDITATION
Did you know that meditation has been known as the fountain of youth? Some studies show that those who meditate have a younger mind (by decades) than those that don’t meditate. Whether you are new to the practice or are heavily meditated, enhancing your knowledge and practice is always helpful.

Try unique takes on a meditation practice through classes such as Walking Meditation, Meditation to Rumi’s Poetry, or Inner Smile Meditation. A guest favorite is Breathe and Change Your Life. Start your day in the perfect way with Gracious Intentions. The list is extensive and ever-changing.

TAI CHI & CHI GONG
Tai Chi and Chi Gong (Qigong) are ancient practices that combine slow, deliberate movement, breathing practice, and meditation. Rather than an aerobic exercise, the practice helps with balance, circulation, and alignment and help to restore your energy (or Qi).

These practices are great ways to stay active and increase vitality throughout the years. While it is great for beginners, many professional athletes also find great benefits in honing their practice as well.

SOUND THERAPY CLASSES
Vibrational Sound Therapy is gaining popularity as people realize the benefits of the practice. There are many different types of sound therapy and The Lodge at Woodloch explores a few of the options through unique class offerings.

Classes like Gong With the Wind, Gong Chi, and Chakra Meditation with Singing Bowls will allow a peaceful exploration of the practice and benefits. Benefits include stress reduction, decreased anxiety and depression, improved memory, decreased blood pressure, pain reduction, and more.
