Stroll along the castle’s wide halls to find a small chapel hidden away inside one tower, or down the immense staircases to the underground cellar where our wine is aged. A perfect combination of elegance, gastronomy, fine wines and the beauty of nature.
Château de Mercuès dates from the 13th century, but there was already a chapel here under Saint Didier, the first Bishop of Cahors, in the 7th century. It served as the residence of the Bishops of Cahors until the separation of church and state in 1905.
After World War II it became a château-hotel, but had fallen into disuse by the time it was bought by Georges Vigouroux in 1983. Georges Vigouroux renovated the castle to restore it to its former glory and to qualify it for the Relais & Château network.
After the first harvest in 1987, Château de Mercuès became one of the few ‘Cru hotels’ where guests can take part fully in the harvest and vinification process.

LE DUEZE RESTAURANT
Our refined cuisine is lauded in the major national and international guides, above all in the Michelin guide 2017 with one star. It pays tribute to the world-famous gastronomy of the Quercy region based on saffron, duck, lamb and black truffles, and was developed by our former Chef, Julien Poisot.
For the opening, the Michelin-starred restaurant Le Duèze offers a unique menu “Le Grand Opuscule” at 160 € & a menu “Petit Opuscule” at 110 €. Le Duèze restaurant seats up to 100 people in two spacious dining rooms. In summer, dinner is served in the royal courtyard.
The restaurant proposes various set menus and a fine selection of gourmet dishes à la carte. The menu can change depending on arrivals and availabilities. On the occasion of the Toques N’ Truffles Festival, the Tuber Melanosporum is honoured in a place with an exceptional history.
The Château de Mercuès will celebrate the black Quercy truffle in February and the starred Chef @julienpoisot will treat you to this exceptional dish. Let yourself be bewitched by the menu L’Opuscule Mélano, where the black diamond will exalt your taste buds.

Table du Chef
Julien Poisot starred chef at the restaurant “Le Duèze” offers a unique gastronomic experience in the heart of the new kitchen’s “technico-design” at Château de Mercuès. A magnificent exclusive table of 5 seats maximum and an exceptional tasting menu awaits the most hedonistic customers.
The unusual dinner in the kitchen of the chateau is orchestrated around a tasting of 9 dishes specially designed for this singular experience. Julien Poisot combines his territory and the seasons.
He likes to work with noble products of OCCITANIE rich of a terroir and rare quality: the Quercy Lamb, Aubrac Beef, Quercy Saffron, the Tuber melanosporum of Lalbenque, mushrooms and chanterelles.
While respecting the rhythm of the seasons. Julien Poisot does not hesitate in addition to his culinary creations to look for recipes from the past and especially those that have marked the life of the Château de Mercuès and the famous characters who have stayed there.
The selection of Maude Fortin sommelier wines at the Château de Mercuès puts the accent on Occitanie, the first wine basin which continues to take a prominent place in the esteem of the consumers and which includes the Cadurcien vineyard.
The wine list opens with magnificent vine to discover including the great Malbec of the Maison Georges Vigouroux.
But even beyond the discovery of the flavors of the unusual dinner, the guests are immersed in the heart of a real show in the experiential gastronomy that represents the orchestration of a starred restaurant brigade.
They will get to experience as if they were in a theater, the insanity of the rush in the kitchen that everyone knows about but have never seen. In addition the direct relationship with the Chef while he completes his dressings and cuts in front of them will be a special moment and will be unforgettable.

Chef Julien Poisot
Chef Julien Poisot, one-starred in the Michelin Guide 2017, has a passion for ‘terroir’ plus the talent for choosing the best produce and creating innovative dishes. He says: “My cooking is instinctive. Above all I transform produce to allow it to express its quintessential nature and enhance it visually in a natural way.”
Award-winning
Julien Poisot began working as a chef at the age of 23 at La Manufacture, a restaurant created for Hôtel Le Colbert in Châteauroux. Then came six years with Bernard Loiseau, at Tante Louise in Paris and as the assistant to Patrick Bertron at the Relais Bernard Loiseau 3 Macarons Michelin at Saulieu in Burgundy.
He has won many prizes, including 2nd prize at Toques d’Or Internationales in 2006 and best Young Chef (Chef Espoir) of the year from Chef Magazine in 2010. In 2017, Julien Poisot obtain one star in the Guide Michelin.
