The Château de Saulon is located in Saulon-la-Rue, a small village of Côte d’Or between Beaune and Dijon, and a few steps from the “Route des Grands Crus de Bourgogne”.

The ladder passes passes between the Côte de Nuit and the Côte de Beaune, and stretches over 60 kilometres between Dijon and Santenay through the most prestigious wine-producing villages such as Gevrey-Chambertin, Nuit Saint-Georges, Vosne-Romanée, Pommard.

Built in the 17th century and completely renovated in the 19th century, the Château underwent a metamorphosis in 2018 with a new phase of work, carried out by the Parisian interior designer Rinck.

The architectural and decorative concept was thought out in its entirety, with work on the buildings as well as the gardens. A real tribute to Burgundy and its terroir, highlighted by Rinck teams.

The domain has several outbuildings in addition to the main building: the two former stables, located on either side of the main courtyard, house a restaurant and a series of suites.

The Pavilion, the other outbuilding of the domain, also shelters a suite and two deluxe bedrooms. The Orangery, a beautiful 360m2 canopy, was built in 2018 to host the Château’s events, weddings and seminars.

The Castle
With its subtle blend of Burgundian regionalism, Gustavian inspirations and contemporary touches, the Château diffuses an elegant yet pleasant atmosphere, where it feels good to huddle together.

You can enjoy a glass of wine in the warm winter garden or sit comfortably in the library to explore the beautiful collection of antique books. It shelters 24 rooms, 2 of which are suitable for people with reduced mobility, and offers an unobstructed view on the park and the river that runs through the estate.

The Barn
Abandoned for many decades, these former stables, built in the 19th century, were renovated in 2019 in keeping with the original architecture. They now house ten deluxe rooms and junior suites with a rustic chic ambience, featuring raw materials, woodwork and stone.

The private terrace overlooking the woods, the river and the canopy makes this former farm building a haven of peace, with no other view than the surrounding flora and fauna.

The Pavilion
Facing the French vegetable gardens and the restaurant, this charming outbuilding shelters 3 rooms, two deluxe and one junior suite.

A private terrace overhanging the river allows you to bask in the sun as soon as the sunny days arrive, isolated from the rest of the hotel activity. Depending on the season, one can take the time to watch the horses frolic in the small meadow adjoining the property.

Farm-to-Table Restaurant
Under the vaults of Deux Rivières restaurant, you will discover a very Burgundian elegance. A gourmet interlude inspired by the rhythm of the seasons, which puts the product at the heart of its creations.

Arising out an in-depth reflection with the Château’s market gardener, Maxime Boront, the cuisine of Chef Mohamed Henni evolves according to the gardeners’ harvests and the arrivals of local partners.

Mohamed Henni
…expresses all his creativity at Deux Rivières restaurant, drawing on his different inspirations to articulate tastes and textures in harmony.

From Thursday to Monday, he invites you to an inspired culinary experience, an invitation to journey in the form of a 5-course “Traversée” and a 7-course “Odyssée”. Every week, he proposes a new seasonal menu to be discovered at lunch.

The Farm.
The vegetable gardens assume a vital role in the hotel everyday life. They supply the kitchens with fresh and organic vegetables, fruits and aromatic herbs thanks to the seven acres which have been cultivated since 2018.

The Château de Saulon benefits from an extremely fertile and nourishing soil thanks to the presence of the Sans-Fond, the river which finds its source in the heart of the woods. It is a real fishpond, which abounds in trout, red mullet, koi carp…and will very soon allow the setting up of a fish farm.

Weddings
Whether for a traditional or secular ceremony, reception in great fanfare or intimate evening, the Château de Saulon offers a wide range of possibilities for the organization of your wedding. You will have the possibility of privatizing part or all of the establishment, according to your desires and your needs.

15 minutes away from Dijon and only 2 hours from Paris, the Château de Saulon offers an ideal setting for the organization of seminars. The charm of the buildings, the quality of the infrastructures and the serenity that emanates from its green oasis make it a place perfectly suited to reflection and teamwork.

The establishment provides three meeting rooms and a sub-commission area that can accommodate from 10 to 110 people. They are modular and therefore lend themselves to any type of professional event: a day or half-day study, conference, executive committee, meeting, seminar.
