Loire Valley
One of France’s most beautiful regions is preparing to welcome you with open arms… The Loire Valley, commonly referred to as ‘the garden of France’ is the ultimate land of the kings.
The jewels in France’s heritage crown are the over 3,000 châteaux built or heavily modified here during the Renaissance period (15th and 16th Centuries) and showcasing the architectural styles typical of the key centuries in the country’s history, their sheer splendour earning the Loire Valley its place on the UNESCO World Heritage List.
The region is also renowned for its vineyards, spanning over 70,000 hectares, and the great diversity of the soil types to be found here, resulting in the production of a variety of wines in large quantities, including Bourgueil, Chinon and Vouvray, each bringing their own unique characteristics to the most demanding of tables.
The Hauts de Loire – a first-class hotel

All of the owners that the Hauts de Loire has had over the years have had a certain enthusiasm for artistic expression, from painting in the portrait age to today’s contemporary pieces showcasing the best that nature has to offer, and this has had a positive effect on its grounds.
Over time, the estate has become an extraordinary platform for such expression and regularly hosts exhibitions of works by contemporary artists.
Nowadays, guests arriving at the château are immediately greeted by Pierre Yermia’s monumental piece entitled Le Grand Cerf des Hauts de Loire (‘The Great Deer of the Hauts de Loire’) – a prime example of the property’s ability to incorporate art into its natural surroundings.
The grounds themselves are, in fact, something of a living exhibition, peppered with works that are showcased here for a season at a time.

Sleep in a hunting lodge at the Château
The Château offers a variety of welcoming, tastefully decorated rooms designed with rest and relaxation in mind. Each room comes with standard amenities including Internet access, a direct-dial phone line, a mini-bar, a safe deposit box and a TV broadcasting both French and international channels.

Sleep in a typical Solognote home
Located 30 meters from the Château, This home features typically Solognote architecture and comprises a variety of bedrooms and suites of up to 70m2. Some rooms have a terrace overlooking the grounds or the kitchen garden.
Family Room
This family room comprises two separate bedrooms, making it perfect for families. The views across the grounds/kitchen garden are a real asset and will give you a sense of real immersion in the lush green surroundings. The two bedrooms have adjoining doors.

Chef Dominique Pépin
Since 1986 Dominique Pépin has been working in Rémy Giraud’s shadow, the emblematic 2 Michelin starred chef, and it’s completely logical that he replace Rémy in October 2020.
By becoming the new chef at Hauts de Loire, Dominique Pépin is taking on a new challenge, he will continue Rémy Giraud’s neoclassical style of coooking, but he will of course bring his personal touch and a modern twist.
His takes on the great classics really are an ode to French heritage, incorporating game, fruits and vegetables from the vegetable garden and taking even the most demanding of guests on a rich and impeccable gastronomic journey.
In what has become a new exercise in style, Dominique Pepin’s Bistrot menu comprises a selection of carefully prepared typical dishes that reflect both the changing seasons and his sources of inspiration, served in a relaxed setting overlooking the vegetable garden.
The 2-Michelin-starred Restaurant
The cosy, well-appointed surroundings of the restaurant make it the perfect haven of peace and tranquillity in which to sample the culinary delights on offer. Chef Dominique Pépin serves up a selection of dishes representing his own take on some of the great French classics and prepared using seasonal produce.

Home-made Hauts de Loire produce
The Hauts de Loire is simply bursting with gourmet secrets, including its very own protected beehives, which you will come across if you decide to take a stroll down to the pond just a few hundred metres from the château itself.
This provides us with a generous supply of ‘home-made’ honey that is served to our guests at breakfast, used in dishes prepared by the hotel’s chef or made available to our customers, where production allows.
We also produce our own chocolate thanks to the talents of our pastry chef, Tom Duclos, allowing him to create the best pastries and other indulgent cocoa-based desserts that reflect his current sources of inspiration.

A dedicated well-being area
The Spa by Clarins includes a sauna, a hammam, treatment cabins for one or two people, and a relaxation lounge with Clarins products. The treatments available are all Clarins exclusives and the Spa staff have been trained by the brand.
The Spa is open everyday from 10am to 12pm and from 1pm to 8pm only for treatments and by appointment. Within the framework of the new standards imposed on us, we have reinvented our treatment path. As a result, the sauna, hammam, relaxation lounge and duo cabin remain closed.
Fitness Club and pool
A stay at the Hauts de Loire provides the perfect opportunity to take some ‘me-time’, and what better way to indulge than with a bit of exercise and relaxation.
Our outdoor pool is open all summer season and is perfect for a few lengths, or even just to cool off when the temperatures start to rise, whilst the nearby gym is equipped with a number of top-of-the-range machines for those who like to work out and take advantage of the many benefits that exercise provides for the body.
The changing rooms adjacent to the gym have been carefully designed to ensure your comfort and convenience.
Lessons in good taste with a double-Michelin-starred chef
Why not combine a relaxing break in the Hauts de Loire with an opportunity to improve your culinary skills with a leading chef? This is the idea behind Rémy Giraud’s Art des Mets programme, which invites both curious participants and those with a passion for gastronomy to spend a few hours at the stoves.
L’Art Des Mets
Believing transmission and the sharing of knowledge to be a fundamental part of his role, the chef provides the recipe for a dish that he will then take foodies and curious hedonists through step by step in a dedicated kitchen every Saturday and Sunday.
The class culminates in a meal where those participating in the cooking class will get the opportunity to sample the delights they have created. Sunday is all about sweet treats and gourmet lessons.
The kitchen is also reserved exclusively for budding young pastry chefs in the making once a month. Please book your cooking lesson at least 48 hours before your arrival.
