Are you ready to embark on a unique journey of discovery into the exciting flavors of Mexico? We present the best culinary event ‘Chef’s Table’ where Chef Eleazar Bonilla delights the senses with his 8 course tasting menu.

Taking traditional Mexican ingredients and recipes, Chef Bonilla then creatively and expertly transforms them into culinary creations for the modern table.

The menus are paired with signature cocktails, local artisanal beers, and show case some of the exquisite New World wines that Mexico now has on offer, resulting in a Mexican gastronomical experience for the true epicurean at heart!

Chef Bonilla and his team are your hosts for the evening. The air conditioned room itself is very comfortable with a homely candlelit ambiance and decorated with Mexican antiques.

MULBERRY PROJECT
New York city’s Mulberry Project “bespoke drink masters” bring their magic to Tulum with their seasonal pop up at La Zebra’s beach bar (October to July).

The pop up has been so popular it is now in its sixth year and a staple in the Tulum scene and has just been nominated for Best International Hotel Bar in Tales of the Cocktail 2020 Spirited Awards (the Oscars of bars/bartending).

Jasper Soffer knows that a hot day at the beach calls for a cool, craft cocktail to complete the experience. Bringing back his internationally acclaimed Mulberry Project and its team of cocktail masters to Colibri Boutique Hotels La Zebra for the sixth year, Soffer is excited to create even more creative and personalized beverages for the hotel’s guests.

CHEF
Chef Eleazar Bonilla was raised in Santiago de Querétaro, Mexico by a mother who was an exceptional cook and baker and a father who was a ‘tortillero’. As a child, Eleazar was delighted in classic Mexican ‘antojitos’ prepared by his parents – sparking a life-long love for Mexican food.

At the age of 8, frustrated with the food he was served while his parents were at work, Eleazar began to follow recipes found in his mothers cook books and culinary magazines.

MIXOLOGIST
Jasper Soffer, master mixologist, has had a career in the bar industry as interesting and as lauded as the cocktails that he creates. Jasper began his career in London at the ShoChu Lounge and his Asian inspired cocktail menu was heralded by Time Out Magazine five times during his tenure at this London hot spot.

He then moved to New York working in venues such as Spice Market and the legendary SoHo House, an exclusive, members-only club and hotel. During his tenure at the SoHo House Jasper was asked to join the Pegu Club by its founder Audrey Saunders, widely recognized as the leader of the high-end bar industry.

RUINS
The ruins of the ancient Mayan people have lured adventurous souls for decades, and a visit to one or more of these beautiful sights is a must during your stay.

TULUM
Just a few minutes bike ride from La Zebra, the Tulum site holds the honor of being the most picturesque archaeological site in the Riviera Maya and the only one to have been built overlooking the ocean. A visit here offers spectacular views of the Riviera Maya beaches, Caribbean Sea and surrounding coastal region.

COBA
Coba site is a 40 minute drive inland from Tulum and well worth the visit. Unlike most archaeological sites on the Yucatan Peninsula, Coba is in the middle of dense jungle giving a different experience.

Here you can still climb the main pyramid, Nohoch Mul, the highest pyramid in the Yucatan Peninsula. We recommend to hire a bike once inside the site to zoom around the jungle paths discovering the pyramids, the ball court and the observatory.

MUYIL
Located 25 km south of Tulum, the Muyil archaeological ruins are located on the inland side of the Sian Ka’an biosphere. This visit can be combined in a tour where you can float down an ancient mayan canal once used by trading boats visiting the city.

CHICHÉN ITZÁ
The most famous of the sites as it is one of the Seven Wonders of the Modern World. Count on a long journey (2.5-3 hours each way) but well worth it for this incredible site.

Chichén Itzá shows evidence of a dazzling ancient city that was once one of the main centers of the Mayan empire. Visit during the equinox and you can see the snake shadow moving down the stone stairs of the huge main pyramid.

EK-BALAM
This lesser known site around 1.5-2 hours drive from Tulum is one of our favorites. You will want to check out the wall paintings in the Acropolis building. Only the center of this site has been excavated so far, so new discoveries are still being made!

CENOTES
Part of an extensive underground river system, cenotes are sinkholes in the limestone that allow access to the fresh water below. Swimming, snorkeling, and diving are popular ways to explore these interesting natural formations.

Some cenotes are more like swimming holes exposed at the land surface whilst others are hidden underground deep within the jungle helping you realize why the ancient Mayans believed that the cenotes were portals to the underworld.

Most day tours include at least one cenote visit for a quick and refreshing dip but you can also visit the cenotes by yourselves no problem. Some of the best ones are as close as a 10-15 minute drive from the hotel.

GUIDED TOURS
From Tulum there are so many wonderful areas to explore doing day trips as an independent traveller, however there are also many half and full day professional tours available to make things easy for you.

Being on a guided tour has its advantages of having a professional multilingual guide explain the details and history of the cenotes or the ruins or the jungle flora and fauna that you might otherwise miss.

Lunch and refreshments are always provided and some tours even visit a local Mayan village where you can experience the local food. Plus being on a guided tour means you can sit back and enjoy the scenery whist someone else drives for you.

SCUBA DIVING AND SNORKELING MEXICAN CARIBBEAN
Whether you’ve got hundreds of dives recorded in your log book or you’re interested in becoming certified as a beginner, the Tulum area is the perfect place for all of your underwater adventures.

The Caribbean Sea is teeming with life, and the reefs just off Tulum’s white sand beaches are home to fish like grouper, small reef sharks and numerous colorful fish. Sea turtles abound here, and if you visit during the summer months you’ll have the option to go on a snorkelling trip to swim with the migrating whale sharks!

Snorkelling or diving in the cenotes is also a fantastic way to explore these underground cave and river systems and is an experience you’ll not soon forget.

KITEBOARDING AND SURF IN TULUM
If you’ve ever wanted to try this thrilling sport why not do so on your next visit to Tulum? The local experts at Extremecontrol.net have all of your kite boarding needs covered, and they offer lessons and rentals for SUP equipment as well.

To top it all off these guys hold most of their kite boarding activities at a private beach just north of the Tulum ruins. This means that you won’t be dodging swimmers or boats while you’re whipping across the Caribbean Sea!

COOKING CLASSES
If you are in the mood to learn how to cook Mexican the way the locals do it then leave your Tex Mex ideals at home and book in at Lina’s Mexican Kitchen. Lina’s dedication to all things Mexico make this a must for anyone wanting to learn the tricks from a real Mexican Chef.

She and her sister Miriam are wonderful hosts and will guide you through some wonderful traditional Mexican recipes in a lovely purpose built kitchen above Lina’s house. You make it, you eat it and you leave with a little recipe book so that you don’t forget it! Its lots of fun…trust us!

BIRDWATCHING
You need not leave the comfort of your sun lounger to have some incredible sightings of pelicans and other seabirds prowling the waves for tasty fish, but if you’re interested in discovering more about the various species of birds in the Yucatan your choices are many.

Sian Ka’an Biosphere Reserve is just minutes from La Zebra and features some of the best bird watching in the world. You can take a hike on your own through this incredibly unique landscape, or you could join a tour that focuses on the many diverse bird species that call this area home.

The Rio Lagartos Biosphere is also just a few hours drive away and is home to the largest Flamingo breeding ground in the Americas.

FISHING
The Mayan Riviera is home to some of the best sport fishing in the world. Professional and amatuer anglers come from every corner of the world to fish for grouper, dorado, yellowfin tuna, and marlin, some of which have been known to top 500 pounds.

Charter a fishing boat for an incredible family or group fishing adventure, or, for something a little calmer, try your hand at fly fishing at one of the local estuaries.

NATURE PARKS
The nature and eco parks in the Tulum/ Riviera Maya area are a great way to spend the day. Especially with the kids. There are many to choose from, each providing a slightly different experience.

Floating down water canals, exploring into caves, seeing turtles, snakes, monkeys, sting rays, dolphins and crocodiles up close, snorkeling in protected inlets where fish are plenty, seeing the ancient Mayan dances and rituals and ball games, exploring the ancient ruins.

MAYAN JUNGLE & MONKEY ADVENTURE
This is an experience for nature lovers. Explore the monkey reserve of Punta Laguna by canoe where you can also enjoy a swim. You’ll have a guided walk with a biologist through a beautiful forest where some ruins have been found.

On this walk you will likely see spider monkeys, maybe howler monkeys and lots of other animals. We will visit a mysterious cave, a door towards the underworld. After enjoying a local snack, we will head back towards Tulum with a cooling stop at a beautiful little cenote before heading back towards your Hotel.

MEXICAN FLAVORS
Do you know the secrets of Mexican cuisine? Do you know everything about Mezcal? If your answer is no, this class will teach you about all. Sam Jimenez will make you an expert about Mezcal and will teach you how to prepare amazing cocktails with this, the most authentic Mexican spirit.

With Sra. Lina you will prepare authentic Mexican dishes from scratch, dishes that have been passed down from generation to generation. All is fresh and all is hand made. Lots of fun is guaranteed.

MAYAN IMMERSION
With this tour you take a deep dive into the Yucatan Peninsula. Start the day with having a rich local breakfast on the way. We head directly to Yal Koba where you will discover the village and its historical church.

From there, we visit two beautiful cenotes. A short walk through the forest takes us to one of them. Newly refreshed, and after a short ride, we will enjoy a pib (underground oven) and gorditas in the house of Sra.

Filomena where you will experience Mayan customs and gastronomy. Fortified from our lunch, we will explore the amazing remains of Ek Balam. Many say that this is the most beautiful archeological site on the peninsula.

Let us know what you think. On the way back to Tulum, we make a short stop in Macario Gomez where you can shop some local handicrafts such as dreamcatchers. We will be back at the hotel at around 6:30pm with many memories to cherish.

SIAN KA´AN BIOSPHERE FIRE & WATER
For this trip, you’ll wake up very early, but it’s worth it, we promise! After a one-hour ride, you will enjoy one of the Sian Ka’an’s most impressive sights, the Muyil Lagoon that just started to shine in the morning sun.

We will take a short walk through the forest, after which you will climb an observation tower for a view over the entire lagoon and the treetops. Our guide, Fernando, will point out birds and other animals that you most likely wouldn’t discover on your own.

The morning time is the most active time for many birds. Re-energize yourself with a typical Yucatecan breakfast at an intimate, local restaurant. You will return to your hotel around noon.

MAYAN TEMAZCAL
Resembling entry into Mother Earth’s womb, the Mayan Temazcal Ceremony offers an opportunity to cleanse your body and mind.

Using steam and the knowledge of ancestral rocks and their power, the Temazcal experience utilizes chamomile, eucalyptus and lavender to effect inner cleansing. A side benefit of beautiful silky skin is guaranteed.

MAYAN DISCOVERIES
Visit one of the most beautiful archeological sites in Mexico, beautifully set in a lush jungle just one hour from Tulum.

You might get sweaty when climbing Nohoch Mul (voluntary), the second tallest pyramid on the Yucatan Peninsula; that’s why we bring you to a beautiful hidden cenote afterwards to refresh and to explore the underworld of the Yucatan.

After that, we visit the family of Sra. Catalina where she has prepared a special feast for us, a pib, an amazing chicken cooked under ground. Have you ever heard of the Meliponas? An endemic and sacred species of bees that don’t sting but produce amazing honey?

If you like you can harvest some honey yourself. On the way back to Tulum, we make a short stop in Macario Gomez where you can shop local handicrafts like dreamcatchers. Enjoy the late afternoon back in your hotel with a cocktail or swim, or just relax on a lounger.
