The garden, lovely pool and spa are all invitations in themselves to take it easy in this peaceful ambiance. However, it would be a pity not to explore the Guadalajara area: the historic city of Sigüenza, mediaeval villages, natural reserves, salt mines and rivers in canyons – each more beautiful and interesting than the last.
At nightfall, the mill restaurant serves Slow Food cuisine inspired by traditional recipes produced from seasonal, local ingredients.
Molino de Alcuneza has 17 rooms: 1 Classic small, 5 Classic, 4 Superior, 2 Superior with terrace, 4 Suites y 1 Suite Premium. The rooms are placed in the old flour mill building and in the new facilities in front of the swimming pool.
Suite Premium
Located in the new building in front of the Molino de Alcuneza pool. It offers a spacious, bright and comfortable duplex apartment with an elegant combination of amenities and modern architecture.
This room has independent access from the garden. On the first floor there is a living room that can be converted into an extra room and on the upper floor there is a room with a private terrace and views of the garden and en-suite bathroom with a hydro massage bath.
It is equipped to create a modern, comfortable, spacious and welcoming environment. Linen and cotton curtains with the charm of a current Castilian stone house.
This room overlooks the large garden and pool and the orchards and the Alto Henares valley. Quiet and spacious and inviting to rest. They have en-suite bathroom with a hydromassage bathtub.
Suite
Located in the original Molino de Alcuneza building and in the extension in front of the pool, they offer an attractive and elegant combination of modern comforts and Castilian architecture, both houses being stone mansions.
All the rooms are different. There is one in the main building, another accessible on the ground floor with entrance from the garden and 2 large attic rooms with views of the pool.
They are complemented by antique pieces and are equipped to create a modern, comfortable, spacious and welcoming environment. Linen and cotton curtains with the charm of a Castilian stone house.

Superior

The room is decorated in white and natural tones in keeping with the architecture of our region. They are complemented with antique pieces and are equipped to create a comfortable, spacious and welcoming environment. Linen and cotton curtains with the warm charm of a Castilian stone house.
The high ceilings, sometimes with exposed beams, are a reminder of the hotel’s historical heritage. All the rooms have exterior views of our garden, the mountains or the orchards and fields of the Alto Henares valley, inviting you to relax and unwind. They have en-suite bathrooms with shower or bathtub.
Dining
Samuel Moreno, our chef, is in charge of preparing our gastronomic offer. After passing through some of the most important kitchens in our country, he has developed a careful selection of dishes in which creativity, good taste and the know-how of an artisan predominate.
Pickles, game, mushrooms and honey, among many other ingredients, are part of a varied selection of surprising dishes full of nuances.
With a strong base in the local traditional cuisine, despite defining himself as a classic chef, his cuisine is fresh and daring. The use of raw fish, smoked, acidic and vegetable flavors make your kitchen light and tasty.
His passion for bakery and the tradition that unites this old flour mill with cereal, have resulted in our restaurant serving up to seven types of home-made artisan breads daily, made with avant-garde techniques and organic flours from the area, which undoubtedly make up one of the best offers of artisan bread in the country.
Special mention deserves the breakfast that is served in our hotel. It has been selected several times as one of the best hotel breakfasts by specialized critics.
Butter croissant, puff pastry, financiers, cakes, yogurt, curd with fresh sheep’s milk, etc., all made by our staff on a daily basis. Organic cheeses, sausages, local, orange juice, fruit smoothies, honey, jams, oil bread toasts, eggs.
