Consisting of a hotel with 24 rooms distributed in the colorful houses of the village , three restaurants , a micro-brewery , a spa , a 30-hectare organic wine estate and a spectacular cellar , Château & Village Castigno – Wine Hotel & Resort reinterprets 5-star hospitality.
Castigno is the rediscovered dream of Marc Verstraete and Tine Claeys , who fell madly in love with this former property of the Knights of the Order of Malta. Renovation of the castle, restoration of the wine estate, purchase of a first village house, and soon thirty to accommodate their desire to share, the site surprises as much as it seduces.
In Castigno, the alleys of the village are the corridors of the hotel. Nestled in houses with red, pink or mauve facades, the rooms and suites are a refuge where the decor inspires and the comfort soothes . No wifi, no television, we take the time to live in the moment.
ROOMS & SUITES
Digital detox & sprawling hotel, the art of living Castigno. To the east, west or in the center of the village, you can access the 24 rooms and suites of the ” exploded hotel” of Castigno by going around the church and crossing the square with the red parasols.
Do not be surprised to come across the baker or the Mayor: here, village life is anything but figurative! In this postcard setting , time freezes to give way to true rest. In Castigno, “digital detox” is our interpretation of the Occitan Dolce Vita.
No telephone, television or wifi in the rooms, but the comfort of a hand-sewn decor, designed to reconnect with the essentials. The song of birds, the caress of the sun, the pages of a novel or even a few musical notes: letting go is no longer a luxury, simply the art of living well by Castigno.
Reception and check in at “La Maison des Amis”, at the entrance to the Village, towards Saint Chinian. All our rooms and suites have a parking space and access to the swimming pools.
ROOMS CUVÉE PRESTIGE
Located in the center of the village, one in the Maison 1660 and the other two in the Ecurie building, our three Prestige rooms offer large volumes and breathability: from 50 to 90m² of space to dream.
Composed of a bathroom with shower and a large lounge area, they also captivate with their heterogeneous decoration, between old stones, parquet, colored walls, raw materials, works of art and second-hand trinkets. The room of Maison 1660 also has a large roof terrace, looking lost towards the distant horizon.
In the center of the village , in the immediate vicinity of the breakfast place, the restaurants, the spa and the wellness area, the Prestige rooms are located a 2-minute walk from the reception and the swimming pools.
VILLA ROUGE
To the east of the village, quiet and independent, the Villa Rouge offers all the privacy of cocooning stays in Occitania, with family or friends. Composed of two double bedrooms, a beautiful fitted kitchen, a living room and a bathroom with separate toilet, it is particularly attractive with its pretty garden and private swimming pool.
Deckchair by the water, terrace area under the trees for endless aperitifs, outdoor benches for summer siestas, the Villa Rouge is the heart of confidential stays. Farniente, Dolce Vita: when the Italian art of living nibbles the lands of Haut-Languedoc.
Total independence or immersion in village life, with our restaurants, spa and wellness centre, the choice is yours. La Villa Rouge is located 2 minutes walk from the center of Assignan and its entertainment venues.
LA TABLE
Languedoc stone walls, lanterns and suspensions of Mediterranean inspiration, the colors of the wine to recall the DNA of the estate: the Table de Castigno has this something totally captivating bohemian chic.
Omnipresent at Castigno, vegetables also find their way onto the plates with cuisine inspired by Provençal nature, twisted with a fine acidity. Dictated by the South but also elsewhere, the signature of the duo of chefs Stephan Paroche and Justine Viano is audacious and incisive.
In Aubrac, the Cévennes, the Etang de Thau, it imprints a few fleshy oysters, caviar, well-bred beef and sweet onions. In Asia it imprints dashi, turmeric, coriander. Accurate and playful at the same time, it is full of relief.
Totally anchored in the DNA of the estate, eco-responsibility is the queen of the heart of the Table de Castigno. In addition to producing some of its vegetables and aromatic herbs, the estate also has a few hens and soon beehives. The network of local producers allows direct and short-circuit supply.
LA PETITE TABLE
In the beating heart of Castigno, La Petite Table spreads its colorful chairs and sofas on the village square . The place resembles the holidays: paved square, stone houses and climbing ivy, a few trees for shade, the sun in the red parasols and an air of music.
It is here that holidaymakers, locals and the curious meet to sit down while remaking the world. No to wifi, yes to human connection! Under the leadership of Stephan and Justine, the starred chefs from Castigno, chef Lucas is concocting a beautiful cuisine for sharing.
On the menu: aperitifs to peck at your fingertips, seasonal starters, traditional dishes and popular desserts. But if you come to La Petite Table, it’s above all for its barbecue cuisine and its grills that simmer over the embers.
Matured Aubrac rib of beef, piece of Duroc pork or Aveyron lamb, the tenderness of the meat makes the knives jealous! Even Mediterranean fish and seasonal vegetables go on the grill.
LE THAI
It is an understatement to say that the Thaï, Asian restaurant in Assignan, is a journey. The decor inspires elsewhere. Facing the village square, the Thai has placed his bamboo reeds and red lanterns on a small open-air terrace. At nightfall the lights ignite the sky of Assignan.
Objects brought back from travels , statuettes and deities complete the “asian-mutated” atmosphere, sometimes evoking Indian temples, Thai sanctuaries or Chinese monasteries. Tables outside on the terrace or small private rooms inside, the Thaï offers several convivial configurations.
Crazy about Asia, the chefs Justine and Stephan have fun here with a sapid and colorful cuisine . Umami, lemongrass and cardamom broths, sweet and sour sauce and spicy curry are some of the hallmarks of this exotic gastronomy inspired by the diversity of the Asian continent.
From the banks of the Chao Phraya which waters Bangkok to New Delhi, from the island of Java to the remote regions of Vietnam, the trip offers a wide variety of flavors. Very happy who will be able to choose between the confit pork Bao, the Pho Bo, the Mango Sticky Rice or the Curry Massaman.
LES BRASSEURS
Castigno a désormais sa propre bière. Entre la Maison des Amis et l’église du village, le domaine a installé sa micro-brasserie « Les Brasseurs de Castigno ».
Lieu de brassage qui sent bon le malt chaud, lieu de dégustation et bar à picorer, on aime la convivialité de cette nouvelle brasserie nichée dans une ancienne remise du village. Entre les cuves en inox et les poutres en bois, on vient assoir sa curiosité pour découvrir une gamme de quatre bières artisanales fraichement embouteillées.
On the menu, the “ Local ”, a blonde aged in barrels, the “ Divin ” with wine reduction, a coppery blonde with sweet aromas reminiscent of caramel and ripe fruit, the classic “ Pintje ”, a well-marked sun-coloured blonde on notes of citrus and exotic fruits, and finally the ” Divin XL “, a triple aged in barrels.
Style and character to spare, Castigno foams have it under the cap. They are eaten with charcuterie and cheese platters and a few tapas to nibble on.
THE CATHEDRAL OF WINE
The newspaper Le Parisien has designated it as “the Cathedral of wine” and the Midi Libre as “The most original cellar in France”. As if coming out of the ground, our cellar takes the form of a gigantic bottle of wine lying on the ground , entirely covered with cork bark and blending into the landscape of Occitania.
The aerial view of the building leaves no doubt about its function: this is where the vats, barrels and barrels are stored. More than a singular work of art, the cellar is a tribute to wine , with which everything began in Castigno.
Reception of individuals and groups, from April to December, in French and in English for one hour or one day. Visits take place at fixed times for individuals, and activities are organized à la carte for groups.
A TERROIR WITH GREAT WHITES
Sometimes clay, limestone, sometimes bauxite and sandstone, the subsoil of Assignan is a diamond in the rough. And that’s without counting on the scrubland that permeates the grapes to their very heart.
Undoubtedly a terroir with great whites, made from Grenache Blanc, Roussanne, Grenache Gris and Carignan Blanc, the Château Castigno estate also relies on a variety of red grape varieties, mainly Carignan, Grenache Noir and Syrah, but also cinsault or merlot. This diversity is an asset for building complex blends, making the most of each grape.

With its 100m² spa that can be fully privatized , and its “Le Petit Péché” wellness center dedicated to massages and treatments , Castigno invites pleasure to reside.
Located in beautiful winegrowers’ houses in the center of the village of Assignan, these two places of relaxation open up an intimate break, between letting go and relaxation. An intense experience, from Castigno with love.

MASSAGES AND TREATMENTS
A few steps from the spa, Le Petit Péché is Castigno’s other well-being area. In a village house, as usual in Castigno, this relaxation center is the temple of care, solely dedicated to massages.
