Thyme is a family story where a passion for the land, food and entertaining merges with a love of nature, beauty and conservation. We took time to make Thyme, with the story of the land imbued in every detail.

A moment to pause for thought, notice the small things and reveal the wonder of the wild. Our ethos is simple. Our dedication is resolute. Conserving the beauty of the land through generations of love, for generations to come.

All our botanically inspired bedrooms are dispersed across houses and cottages, forming a peaceful hamlet environment with gravel pathways to lead you through the gardens. No two rooms are the same, with colours inspired by their botanical names and graced with carefully sourced antique pieces.

All our bedrooms have beautifully comfortable mattresses and linens, and guests are welcomed with a complimentary trug of goodies, plus a minibar of delicious liquors, teas and coffee.

Tallet
Situated at the heart of our ‘village within a village’, this gorgeous and deceptively large property sleeps up to eight in four bedrooms (one of which can be twinned) with three bathrooms. Each room is elegantly decorated with old stone walling offering a rustic charm.

The large entertaining and living space is L-shaped, which wraps around a private courtyard. The living area is equipped with a wood-burning stove and underfloor heating to keep the cottage cosy and snug.

Pear Tree
Pear Tree is our quintessential Cotswold one-bedroom cottage. Situated in the village of Southrop, just a stone’s throw from the Baa and Ox Barn, it is a perfect honeymoon hideaway.

On the ground floor is a sitting room, a small study and light-filled kitchen which leads on to the private garden. Upstairs is a double bedroom with a bath tub, an en suite shower-room and a lovely dressing room.

English Rose
Our English Rose bedroom is situated on the ground floor of the Lodge, with sweeping views of the Cedar of Lebanon on the lawn and the fields beyond.

English Rose boasts two fireplaces, elegant chandeliers and French doors that lead onto the lawn; the perfect spot for a morning coffee. English Rose has a simple mini bar and access to the house honesty bar.

Courtyard Bedrooms
Our courtyard rooms are on the front of the Ox Barn and named Ox House East and West. Both are split over two floors, a four poster bed characterises the bedroom downstairs and a luxurious bathroom, complete with walk in shower and tub, upstairs.

Dining
Rooted in a passion for the local land, food and entertaining, our carefully curated menus tell a story of the farm and seasons. Under the direction of Charlie Hibbert, the chefs and gardeners at Thyme work together to select and grow the fruits, vegetables and herbs used to create his modern British countryside fare.

Gardens & Farm
Situated on the edge of the water meadows, Thyme’s carefully managed kitchen gardens ensure abundance from the land while protecting and maintaining the fertile alluvial soil.

The garden is productive for much of the year and features a herb garden, cutting gardens and poly-tunnels to extend the seasons. We grow a large variety of flavoursome and unusual varieties to supply our restaurants.

CHEF – Charlie Hibbert
Charlie Hibbert grew up amongst a family of hosts and entertainers. Ingrained from his childhood, he learnt the importance of using food to shape an atmosphere and mood, and the kitchen soon became his favourite place.

After leaving school, Charlie moved to London and worked in Soho learning to write computer code for a film production company. Despite turning out to be a talented code writer, Soho restaurants and the world of food interested him more.

In 2010, Charlie embarked on an intense course at Ballymaloe in Ireland under the wonderful direction of Darina Allen, teaching him the importance of ingredient-driven cooking: “good food starts with good ingredients”. `

From there he went to New Zealand to be a chef at Craggy Range – one of New Zealand’s finest restaurants and wineries. Upon his return, he headed back to Soho for the relaunch of Quo Vadis in 2012, where, under the auspices of the renowned Jeremy Lee, he learnt his craft.

Now an integral part of the family business, Charlie is bringing together his love of growing and cooking, his knowledge of ingredients and flavours, and his joy at entertaining to create a uniquely complete culinary experience at Thyme.

The Ox Barn
The nineteenth-century Ox Barn was formerly home to the oxen that once ploughed our fields.

State-of-the-art agricultural architecture in its time, Caryn Hibbert worked meticulously to preserve the extensive beams, soaring arches and original Cotswold stone rubble walls. Now, it’s a contemporary restaurant with a spectacular bar and seven-and-a-half metre Charvet open kitchen.

The Baa
Drawing inspiration from the Cotswolds’ famous sheep industry and wool trade, the Baa is situated in the old lambing sheds and is characterised by bespoke ‘sheep seats’ designed by Caryn Hibbert.

Bartenders create homemade cordials, shrubs and infusions which together with fresh flowers and herbs from the garden, form a botanical cocktail menu that tells the story of the land. The Baa is an elegant space to enjoy a coffee and a newspaper during the day or a fresh cocktail in the evening.

The Swan
Just a short stroll from Thyme, The Swan sits at the heart of the village of Southrop adjacent to the green. Its recorded history dates back as far as 1606 when it was known as the Bakehouse, serving bread and ale to the farm workers.

The Swan is characterised by low slung ceilings, roaring fires and a spacious garden room. Complete with sofas for cosy feasting, two walled gardens for lazy, long summer lunches and the Old Bar for simple merry-making and a light pub bite, The Swan offers a country pub feel with simple, but refined, cooking.

Orchid House
Positioned alongside our spring water swimming pool, the Orchid House is a tranquil, ‘residents only’ area designed to help you wind down and enjoy the peaceful serenity of the Meadow Spa. The roof of the Orchid House is covered with native orchids, attracting a kaleidoscope of butterflies and honey bees.

A simple menu of salads and sorbets offer a light lunch with a pairing of juices, rosé and bubbles – perhaps even a slice of cake if you’re feeling naughty. As the sun sinks over the old Cotswold stonework, the fire is lit and a screen folds down for a cosy evening of cinematic magic.

Parties
Entertaining has always been at the heart of Thyme. We can accommodate gatherings of all kinds, birthday parties to wedding receptions, in a number of spaces ranging from the Chef’s Table in the Ox Barn to the magnificent 16th century Tithe Barn.

THE MEADOW SPA
Meadow Spa offers calm, stillness, and nurtures beauty from within. The botanical spa is an idyllic haven of peace and tranquility; a place for mindfulness and meditation, providing respite from our hectic lives.

Rooted in a love of nature and a belief in the beauty of simplicity, our everyday Bertioli Beauty bathing and breathing products are used to deliver treatments harnessing the healing power of breath and scent to nourish the mind and body.

Aurelia London
As one of the first brands to pioneer the use of probiotics in skincare, we are delighted to have an exclusive partnership with Aurelia London.

Our carefully designed bespoke treatments are tailored to achieve a desired state of mindfulness using Aurelia London Skincare to protect, restore, and balance the skin from within.

Poolside
Meadow Spa encompasses our spring water swimming pool and hot tub complete with a state-of-the-art filtration system for a chlorine-free environment. An extension of the Spa, it is a serene, quiet place.

Please note: the pool is available for Thyme residents only and a no-children area.We do close the pool in colder months for winter maintenance and to save energy. The pool is open April – October.

Beauty for the Mind, Body and Planet
With beautifully simple inside space that spills out onto a private veranda and garden, our warm Botanical Bothy is designed to instill a restorative calm. Natural resin flows organically to form ergonomic, warmed seating and treatment benches. The sound of waterfalls fills the space from a flowing, fossil water trough.

The veranda is complete with two baths for herbal soaks and a roaring fireplace to create a cosy setting in the fresh air. Using our Bertioli Beauty products as well as fresh herbs, rituals combine the healing power of breathing, fragrance and thoughtfulness to nourish both body and mind.

The journey incorporates focused breathwork, pressure point techniques and tension release to rebalance the body’s energy channels and reconnect you to nature.

Nature

Nature inspires and nourishes. Each of our products encapsulates fragrances evocative of the wild. Our wellbeing is intrinsically linked to that of the natural world and it is true that those who engage with nature are more likely to nurture it, in turn nurturing themselves.

The power of conscious breathing is remarkable, creating a calm within and elevating mood to positively influence both body and mind.

Scent

Scent has a powerful effect on emotion and memory. By carefully blending botanical essential oils, our unique and complex fragrances immerse you in nature. Furthermore, the efficacy of breathing is enhanced by the focus fragrance provides and the innate healing properties of essential oils.

Designed for everyday bathing and breathing, Bertioli Beauty seamlessly integrates into daily rituals, as well as meditative moments.

The concentrated formulations are luxurious and effective, replacing the polluting clutter of bathroom plastics and eliminating excess water to significantly reduce our carbon footprint.

Led by the Seasons
Inspired by the changing seasons, our calendar of happenings includes classes, workshops and events from cookery and floristry to soap making and painting, all under the direction of masterful experts in their field.

The School

Cookery Classes
Classes usually start in the kitchen garden, showing guests how and where the produce is grown before harvesting ingredients for their menu.

Cooking under the guidance of an expert Thyme chef, guests learn our ‘field to plate’ techniques. We offer two styles of class: the 2 hour ‘master a dish’ class, a 4 hour (half day) ‘cook and dine’ class.

Floristry
Join our head florist, Sophie Witham to celebrate the wonderful mix of flowers, foliage and fragrant herbs that can be found in the cutting gardens and wild spaces at Thyme.

Using wild, loose and dramatic ingredients that capture the essence of the season, they are perfect for layering colour and texture. These classes are available May – September.

Painting classes
Painting is a calming and creative experience and an opportunity to nurture new or existing skills. Our private painting class follows one of two themes: botanical still life or the art of portraiture.

2.5 hours in the school, surrounded by nature and natural light, create the perfect environment to master drawing and painting techniques using still life material collection from the gardens at Thyme.

The Shop
Our shop embodies our love of the land ethos with a focus on nature, sustainability and beauty, allowing our guests to ‘take a little Thyme’ home with them.

With an understated elegance, the shop combines Thyme’s own brand, Bertioli by Thyme, together with consciously sourced, artisanal products and one-off antique treasures. It all results in a thoughtfully curated collection of fashion and homewares.

A Meandering Stroll
Thyme is surrounded by glorious countryside and honey-hued market towns. You can take a map and head out on a walk through the surrounding countryside or borrow our bicycles and explore the neighbouring villages and towns.

We are close to some of the country’s most beautiful private gardens and houses; Blenheim Palace, Hidcot Manor, Rousham House and the Cotswold Wildlife Park to name but a few. We have a lovely list of recommendations for our guests to explore; just ask Reception once you are here.
