The first harvest took place in 1252. For more than 750 years, therefore, Château Pape Clément has been producing fine wines on the same terroir. At this time, it was called Domaine de la Mothe. ​It was purchased at the end of December 1299 by Gaillard de Goth, son of a famous family from the south of Bordeaux.

This purchase was made at the request of Bertrand de Goth, who had just been appointed Archbishop of Bordeaux, and for this reason could not accede to the property. ​Bertrand de Goth became bishop of Saint-Bertrand de Comminges, then archbishop of Bordeaux in 1299

1305
On being named Pope in 1305 (with the support of Philip IV, King of France), Bertrand De Goth took the name Pope Clement V. In 1306, a few days before the death of Gaillard de Goth, Clement V was given the Pessac estate by his dying brother, thus giving his name to the Château.

​Bertrand de Goth liked vine-growing and greatly concerned himself with the vineyard of la Mothe. When he became Pope, he considerably contributed to the development of viticulture, particularly in the Rhône Valley and all around Avignon.

It is partly thanks to him that certain growths in Châteauneuf-du-Pape, Gigondas and Beaumes-de-Venise could and still can rival the best wines of Bordeaux.

On 30 August 1306, Pope Clement V was struck with a high fever. He was in Bordeaux at the time and wanted to stay at his vineyard of la Mothe. Until mid November, his state of health remained so poor that there were fears for his life.

Throughout his convalescence, the pontiff remained at his property in Pessac. The numerous letters exchanged between the King of France, Philip IV, and Pope Clement V mention Pessac on the postal seal.

From 1305 to 1309, the Pope continued to manage his vineyard with all his accustomed care. In December 1309, his pontifical workload no longer allowed him to continue this task, and he decided to donate the estate to the archdiocese of Bordeaux, which made Pape Clément a model property.

​The Pope died in 1314, and the archdiocese of Bordeaux remained owner until the French Revolution in 1789. The revolutionaries confiscated the property, selling it at auction in 1791.

1864
Jean-Baptiste Clerc was one of the owners who marked the history of the estate. He was behind the existing Château, in the neo-Gothic style dating from 1864.

Under his aegis, more than 30 hectares was replanted and this same year, the property received the grand ministerial medal awarded in the competition for the most outstanding vineyard. ​Under Clerc’s management, Château Pape Clément soon became one of the best-known growths in the Gironde.

On 8 June 1937, a violent hail storm destroyed almost all the vineyards of Château Pape Clément and it was in 1939 that it was bought by Paul Montagne, who decided to restore the vineyard and the cellar to return them to the status they deserved.

​The culmination of his efforts and the quality of the Grand Vin were finally to be recognised on the creation of the classification of Grands Crus Classés de Graves in 1959.

1985
Following a painful episode of hail in 1937, which damaged the vineyard, the land was bought in 1939 by the agricultural engineer Paul Montagne, who signalled the rebirth of the estate by replanting the vines and renovating the cellars.

As early as 1953, successful vintages flourished again, but once again, from 1975 onwards, a lack of investment detracted from quality for a period of around ten years. ​At the turn of the 1980s, Bernard Magrez, a passionate wine entrepreneur, took the reins at the Château and was to give this grand cru classé an unprecedented international aura.

In 1985, he marked the definitive return to high-level production, by now further enhanced by the talents of the famous consulting oenologist, Michel Rolland.

​Bernard Magrez put in place vinification by plot, a guarantee of complexity and refinement in the wine: the grapes from different plots are vinified in separate tanks, to allow them to fully express their specific characteristics before blending.

2009
In 2003, the new barrel cellar opened its doors, followed in 2007 by the renovation of the cellar with its prestigious oak vats. ​Bernard Magrez made every effort to allow the exceptional terroir of Château Pape Clément to stand the test of time and express the finesse that had made the reputation of its wines.

It was in 2009 that these efforts were rewarded with the mythical score of 100 from the critic Robert Parker for Château Pape Clément white, and then the same score for Château Pape Clément red the following year.

​Thanks to hard work, constant questioning, the alliance of tradition and innovation and a remarkable terroir, Château Pape Clément, Grand Cru Classé de Graves, continues each year to amaze wine lovers with its exceptional quality.

AN EXCEPTIONAL TERROIR
The estate of Château Pape Clément is part of the Pessac-Léognan appellation situated in the Graves viticultural area. Based on a soil with exceptional components, the 60 hectares of this vineyard are devoted to the meeting of passion and work.

​The Château terroir is situated on the oldest of the alluvial terraces, called the “Pyrenean gravel layer”. The originality of the Pape Clément site lies in the presence of a thin film of more recent Garonne gravel, deposited a million and a half years ago.

The diversity of the terroir of Pape Clément allows for the ripening of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot for the production of our red wine and Sauvignon Blanc, Sauvignon Gris, Sémillon and Muscadelle for the production of our white wine.

BETWEEN TRADITION AND INNOVATION
Through its history, its character and its rooting in the terroir, the Château has developed a tradition making it possible to achieve excellence. This is the central point of the vineyard management as well as the major choices that have been made.

Manual work in the vineyard, Guyot-Poussard pruning, animal traction, manual destemming, natural fermentation (indigenous yeasts), vinification in terracotta jars are some of the ancestral practices that let us reflect the best of our terroir.

​Nevertheless, in order to continuously improve our practices to achieve excellence, innovation is a real driving force. The drone, the Green-Seeker, genodics, electric tractors, eco-confined spraying, self-steering tractors allow us to reconcile progress in technical, agronomic and environmental matters, and above all in quality.

Investments have been made and the Château has been equipped with the most precise tools available to ensure the excellence of our practices. Château Pape Clément is one of the only examples of such total enclosure in the Bordeaux conurbation.

The particular characteristics of the urban environment have been mapped and explain today the strategic choices made at the Château. Ploughing by horse, electric tractors, biodynamic trials, eco-confined spraying for the most-sensitive plots; these are some of the advances in the protection of our terroir.

Château Pape Clément is part of the very small circle of châteaux certified as being of High Environmental Value. This HVE 3 certification is, according to the French state, the highest environmental distinction.

Always seeking to deepen its responsible approach, continuous improvement with Terra Vitis allows the Château to identify points requiring attention and to provide solutions.

The grapes are harvested by hand, into crates of 10 to 12 kg. Our team of trained pickers performs an initial sorting on the vine, by selecting only the best bunches. The crop is then manually sorted in the cellar, on our sorting tables, to select only the grapes at optimal ripeness.

About 5% of our best, freshly picked bunches are destemmed by hand. The individual berries are delicately detached from the bunch, without damaging their skin. The separated berries are then sorted by hand, put back in the crates, and taken to the vat room.

THE WOODEN VAT ROOM
Our vat room was redesigned in 2007. Here the vineyard is reproduced in the vats: there are 28 vats, each corresponding to plots of different ages and planted with different grape varieties.

This reproduction of the vineyard in the vats is called “parcellisation”. It is all the more precise in our case, because the acquired knowledge of our vineyard allows us to blend or to separate the plots, to best respect the complexity of their micro-terroir.

THE CELLARS
Château Pape Clément red ages in the calm of our cellars for 18 months, in 70% new barrels. Le Clémentin is aged for 12 months with a proportion of 30% new barrels. During this time, our teams take the greatest care of the wine during our rackings and up to bottling. We work with several coopers, adding even more complexity to our wines.

BERNARD MAGREZ
Bernard Magrez acquired the prestigious Château Pape Clément in the 1980s. It was his very first vineyard. Now owner of three other Grands Crus Classés in the Bordeaux region, La Tour Carnet (Haut Médoc) Château Fombrauge (Saint-Emilion) and Clos Haut Peyraguey (Sauternes), Bernard Magrez is today an important Bordeaux businessman in the wine sector, owner of 42 great international estates.

RAYMOND DE SEZE, COUNT OF SEZE (1748 – 1828)
At the Hôtel de Sèze obviously reigns the spirit of the Comte de Sèze. Originally from Saint-Emilion, Raymond de Sèze is historically known for having been the “Defender” of the King-Martyr, Louis XVI. Joined the Bordeaux Bar in 1782, he was, among other things, counsel in the Affair of the Necklace of Queen Marie-Antoinette, a scam that would hit the court chronicles.

Raymond de Sèze was probably an honest man, full of wit, with courteous manners and a style full of dignity and skill. All his life, he will serve the monarchy with unconditional fidelity, rejecting even the demands of Napoleon 1st. The defender enjoys an unassailable reputation, served by great moral authority.

Very attached to the City of Bordeaux, he will participate in the construction of the Pont de Pierre by obtaining the loan necessary to resume work during the Restoration. This surname is used to name the eponymous street of Bordeaux, where in 1927, the Hotel which will take its name will be established.

For history buffs, the Salon des Illustres exhibits some of its tusks and contains in its window a rare document, the original edition of Louis Capet’s plea dated December 26, 1792.

Château Haut-Bailly’s proud position tells a tale of enduring good fortune, perched atop the gentle slopes of Bordeaux’s historic Graves region.

Ancient archives prove that from as early as 1461 these lands were already recognised as excellent for the cultivation of vines. Centuries of commitment and unwavering conviction have established Haut-Bailly as a visionary estate, but one which also possesses a wealth of memories.

Haut-Bailly’s ancient roots
The vineyard of Haut-Bailly as we know it today began to take shape when the Goyanèche and then the Daitze family acquired and unified the best vine growing plots in the 1530s.

The estate remained in the Daitze Family until 1630 when it was purchased by Firmin Le Bailly and Nicolas de Leuvarde, wealthy Parisian bankers and lovers of Graves wines.

Following substantial investments, the property continued to be passed down the Bailly family line until 1736, when Irishman Thomas Barton took the helm.

His strong business network allowed him to spread word about the quality of Château Haut-Bailly at a time when French ‘claret’ was beginning its rise to stardom in England and Ireland.

The evolution of an identity
Throughout the 18th century powerful, well-connected and ambitious owners drove Haut-Bailly to new heights, including Christophe Lafaurie de Monbadon and his son Laurent who went on to become Mayor of Bordeaux in 1805.

In 1872, Alcide Bellot des Minières acquired the estate and constructed the imposing, stone chateau building that remains to this day. He pioneered a precise, science-driven approach to viticulture, becoming a figure of legend widely known as the ‘King of Vintners’.

Thanks to Alcide’s incredible drive, Haut-Bailly experienced a remarkable golden age, commanding the same prices as the First Growths: Lafite, Latour, Margaux and Haut-Brion.

Following Alcide’s death, Haut-Bailly experienced a period of instability, regularly changing hands up until 1955. Nonetheless, the value and quality of its wines were never called into question, leading naturally to the classification of the property as a ‘Cru Classé de Graves’ in 1953.

The purchase of Haut-Bailly in 1955 by Daniel Sanders, a Belgian negociant, opened up a new era. Daniel and his son, Jean, recomposed the vineyard, renovated the winery and took pains to select only grapes from the best vines for their grand vin.

They succeeded in giving the wines a unique style and reputation, and Haut-Bailly recovered its image as a great wine on the international marketplace.

An investment of passion
In July 1998 Château Haut-Bailly was purchased by American Robert G. Wilmers, chairman and CEO of the M&T Bank based in Buffalo, New York.

A lifelong lover of Bordeaux Grands Crus, Bob was behind every strategic decision, ensuring that Haut-Bailly followed a path of progression and continuity whilst remaining ever-respectful of its heritage.

After Mr. Wilmers purchased the property, he first asked Jean Sanders to stay on board, and then Véronique Sanders, fourth generation, to serve as general manager, overseeing a far-reaching investment programme to modernise the vineyards, cellars, offices, and château itself.

For Bob and his wife Elisabeth, Haut-Bailly went well beyond a financial investment: it was a joint passion. Following the sad passing of Bob in December 2017, his family has taken over and will continue in his footsteps.

Together with the management team, they are committed to continuing Bob’s work in the same spirit and energy as in the past twenty years. The many recently initiated and future projects will be pursued.

Essence
A patchwork of vines spreads across ridges of sandy, gravel-studded soils that sit atop a layer of sandstone. The soils are petrified with the remains of prehistoric fossil shells that descend deep into the earth, offering exceptional drainage and rare minerals.

At the heart of it all, a stone’s throw from the chateau building, lies Haut-Bailly’s most precious jewel: an eclectic cohort of ancient vines that each year bestow soulfulness and timeless continuity upon the wine.

Diversity, giving complexity and consistency
Château Haut-Bailly is one of the most prestigious Crus Classés de Graves, situated at the gateway to the city of Bordeaux. Its 30-hectare (74-acre) vineyard lies at the heart of the Pessac-Léognan appellation, on the left bank of the Garonne river.

The mosaic-like vineyard is composed of 60% Cabernet Sauvignon, 34% Merlot, 3% Petit Verdot and 3% Cabernet Franc. Certain plots lie a full 20 metres higher than others, demonstrating the topological diversity for which Haut-Bailly is famous, and which allows for consistently superb quality.

The variety of soils and the balance between higher and lower plots, which put greater or lesser hydric stress upon the vines, gives Haut-Bailly a unique ability to adapt and perform in both wetter and drier vintages.

A treasure preserved for over a century
Haut-Bailly has successfully maintained 4 hectares (10 acres) of century-old vines, planted by Alcide Bellot des Minières, owner of Château Haut-Bailly at the end of the 19th century.

This single plot is unusually interwoven with 6 varieties of vine: 1/12 Carmenère, 1/12 Merlot, 1/12 Cabernet Franc, 1/12 Malbec, 1/12 Petit Verdot and 7/12 Cabernet Sauvignon.

These vines are the heart of Haut-Bailly, a fundamental part of its genetic makeup. Their rarity, mystique and superb fruit are to be tasted in each bottle of Château Haut-Bailly.

Gentleness
Confidence and respect for the quality of Haut-Bailly’s fruit demands gentleness and minimal intervention in the winery to nurture wines of purity, charm and precision.

Each subplot is harvested ‘à la carte’ to ensure that early-ripening Merlot and late-ripening Cabernet are picked in their most perfect state. Technology is placed at the service of mother nature to add precision and reduce compromise.

A delicate touch
At Haut-Bailly there is deep-rooted understanding that delicate, painstaking work contributes to the refinement of the wines. Emphasis is placed on manual intervention in the vineyard, carried out by people who are exceptionally invested in their craft.

Sorting begins in the vines, with harvesters seeking to eliminate any unwanted berries. After de-stemming, the grapes pass along a single, gently vibrating sorting table where hands are at the ready to pluck out any less-than-perfect berries before they pass directly into vats.

Preservation of uniqueness and character
Plot-by-plot vinification enables superior accuracy in winemaking and blending, making it possible to achieve the fullest expression of every micro-parcel of the vineyard. Thirty concrete vats allow the evolution of each plot to be closely surveyed.

Our aim is to preserve the fruit and extract velvety tannins with the aid of temperature regulation and gentle remontages.

Unique character and individuality are preserved and analysed so that they can be blended masterfully together, allowing the sensuality of the Graves terroir to shine through in Haut-Bailly’s wines. Ageing lasts for 16 to 18 months, and takes place in French oak barrels selected from 6 different cooperages.

Forethought
A philosophy of innovation and a desire to push boundaries compels Haut-Bailly to embark on projects that are truly groundbreaking: from research into key molecules involved in the evolution of wine aromas with ageing to working with experts on the development of more gentle pruning techniques that respect the sap flow of the vines.

Oenologist Gabriel Vialard, Technical Director at Haut-Bailly, drives progressive change through experimentation while perpetuating the estate’s traditional values. A discreet but efficient artisan, his hands-on approach to winemaking is tempered by an inclination for reflection and constant re-evaluation.

A long-term collaboration with Bordeaux University contributes to educating and enabling the next generation of winemakers, while membership of several research groups has brought tangible results and technological breakthroughs.

THE VILLAGE OF BAGES
Since the year 2000, Jean-Michel Cazes has played an integral part in renovating his childhood village and has placed much emphasis on its history and leading figures.

As such, the main square in Bages has been named after Jean Odule Paulin Desquet, the legendary historical figure credited with creating the Commanderie du Bontemps du Médoc around the year one thousand.

When Jean-Michel Cazes was considering extending Château Lynch-Bages in 2003, something clicked and he decided to salvage this small village with its rich history of wine production and links to the local region. It now offers endless opportunities for meeting those who produce the wines and prepare the food.

It has since become a charming and popular tourist destination in the Médoc and was awarded the prestigious title of ”Wine Tourism Pioneer” in 2010 by the French Superior Council of Wine Tourism. This picturesque village is full of opportunities to experience the true ‘art de vivre’ of the epicurean Médoc region!

THE BISTRO
In the centre of the village of Bages, the Café Lavinal opened in 2006 and owes its name to Berthe Lavinal, grandmother of Jean-Michel Cazes. The ambience here is warm and friendly, with amazing objects brought back by Jean-Michel Cazes from his travels and other souvenirs of his grandchildren’s summers in Bages.

Adjacent to Château Lynch-Bages, it is a popular place for winemakers and locals wanting to catch up over a hearty meal in the heart of the Pauillac Classified Growths.

Our warm and welcoming bistro serves a simple, traditional and tasty market-inspired menu made from regional produce. In good weather, its sunny terrace is perfect for appreciating its stunning views and prime location.

A unique, instantly identifiable style… The iconic French lifestyle brand Lalique, a symbol of total refinement, is entering the world of prestige hotels.

After La Villa René Lalique in 2015 (a Relais & Châteaux property) and Château Hochberg by Lalique in 2016, both located in Wingen-sur-Moder in Alsace, the third incarnation is a sumptuous hotel and restaurant in the Sauternes region, in the greatest of the Grand Cru Classé terroirs.

The LALIQUE Hotel and Restaurant has opened its doors in June 2018 to celebrate Château Lafaurie-Peyraguey’s 400th anniversary.

On the initiative of Lalique’s CEO Silvio Denz, four worlds converge here: wine, crystal, gastronomy and hospitality. Everything combines to serve art and the senses, where the only rules are expertise, rigour and passion – with emotion as a common purpose.

The vine as the lady of the house
The simplicity of the architectural lines is offset by the refined furnishings and sophisticated accessories. The vine, truly the lady of the house, has inspired a wide range of Lalique crystal pieces which are set in bed frames, chests of drawers, bedside tables, mirrors and sofas.

This same motif reappears in the bed linen and pillows. The beige marble bathrooms boast bunches of grapes embroidered on the bath towels and beautifully engraved on the tap handles.

Photos by Aerni, a Swiss artist with a passion for Sauternes, also pay tribute to the golden wine of Lafaurie-Peyraguey, whose iridescent colours range from straw yellow to amber depending on the age of the vintage.

Château Lafaurie-Peyraguey, four centuries of history
This is the work of centuries, undertaken by various families of owners who have striven to glorify the estate and the fame of its wines… It all began in the Middle Ages: the chateau’s porch and wall towers were built in the 13th century using the remains of very old stone from the village of Bommes.

The first known owner, Lord Raymond Peyraguey, built a fortified keep around Peyraguey and then began to cultivate vines in 1618, convinced that the land offered exceptional potential.

On 17 July 1742, the estate was purchased by Nicolas Pierre de Pichard, advisor to the King and president of the Bordeaux parliament, who expanded the vineyard to nearly 30 hectares.

On 22 June 1796, the estate was sold at auction to Mr Lafaurie and Mr Mauros, with the latter giving up his portion to Pierre Lafaurie not long after. Peyraguey was the favourite wine of King Alfonso XII of Spain, ‘buying a barrel at the fantastic price of 6,000 gold francs’.

Under Pierre Lafaurie the elder, the vineyard gained a reputation for excellence. It was granted recognition in the official 1855 classification, where Château Lafaurie-Peyraguey was named a Premier Cru Classé, ranking second in the list.

In 1865, Count Duchâtel – the former Minister of the Interior – chose to modernise the technical winery facilities and renovate the chateau in Hispanic-Byzantine style.

In 1917, the well-respected wine merchant Désiré Cordier was focusing on wine quality whilst others concentrated on volume. ‘Remarkable in its finesse, vigour and aromas, the wine produced on this estate is highly sought-after’, as is written in the wonderful volume Fine Wines of Bordeaux, published in 1939.

After restoring the estate to perfect condition, in 2014 the Suez group sold Château Lafaurie-Peyraguey to Silvio Denz, the CEO of Lalique. This businessman from Basel was particularly sensitive to the estate’s rich history and commissioned a study by the historian Roland Kissling, a meticulous artisan of the archives.

Renovation, an exercise in subtle style
It took four years of intensive work to enhance this magical site. The top priority was to preserve the location’s original identity and fit the aesthetics to the unique configuration of the existing buildings.

This meant combining materials from the original era (giving the building its historical identity) with contemporary details setting it in the present.

In order to preserve the soul of this historic building, Silvio Denz entrusted the renovation work to the talented interior designers Lady Tina Green and Pietro Mingarelli, who created the Lalique Maison collection of furniture and accessories.

They have striven to pair the region’s raw and natural materials with subtly contemporary effects – Lalique crystal thus embellishes matt wood. As Pietro Mingarelli explains, this is decoration in measured touches: ‘This project required a long period of reflection.

Our instinct was to sustain rather than transform its heritage. We had to feel the resonance of the place so as to adapt our vision to the buildings’ strict geometry. It was a difficult balance of tension between form and function.

Similarly, the conservatory – a modern extension designed by renowned architect Mario Botta – does not adversely impact the harmonious beauty of the facade. Boasting a delicate metal frame, it blends into the decor, with the transparent glass walls serving to enhance the location’s restrained appearance.

In the heart of Sauternes, a unique terroir
Château Lafaurie-Peyraguey, a Premier Grand Cru Classé in 1855, is in the highest part of the village of Bommes. With Château Yquem as its neighbour, its 18 hectares of vineyards stand on the third terrace of the Sauternes appellation, over 70 metres above sea level.

The mosaic of terroirs – spread across the four villages of Bommes, Sauternes, Fargues and Preignac – give the wines of Château Lafaurie-Peyraguey their typical, long-reputed style.

The ‘L’Enclos’ and ‘Maisons Rouges’ plots of land form the historic heart of this exceptional terroir, with the others distributed near to various Crus Classés within the appellation in the form of five-hectare islands (Yquem, Suduiraut, Guiraud, Rieussec and d’Arche).

A wide range of soils and subsoils (mostly gravel and clay) have been recorded here, a unique typology which explains the exceptional aromatic complexity offered up by Château Lafaurie-Peyraguey wines.

Liquid Gold
Liquid gold, a miracle born of a microclimate situated between the Ciron and the Gat Mort, two tributaries of the Garonne. Sauternes, Bommes, Fargues, Preignac and Barsac are the chosen locations which fit not only geodetic but also astral and solar coordinates.

In Bordeaux’s smallest village appellation, the wines seem to absorb this pearlescent, subtle, hesitant light in a capillary or transmutation action. The region produces the highest amount of noble rot of this quality in the world.

The autumnal morning mists paired with afternoon sunshine encourage the development of a miniscule fungus called botrytis cinerea, which concentrates the sugars in the grapes. After this phase of overripening, the grapes dry out in the sun.

The effect of the fungus enhances the fruit, which reacts vigorously by producing a multitude of aromas. This is a curious and touching paradox: providential humidity, so harmful to other wines, here produces beautiful concentration.

Magical Sauternes
The excellence of Sauternes wines also comes from a unique cultivation method: meticulous green pruning, long harvests in a series of passes, and picking by hand one grape at a time.

This is delicate work in the chilly autumnal conditions: each vine and each grape counts. Low yields result in an extraordinary density of aromas.

Both the old Sauternes families and new arrivals to this exceptional French speciality such as Silvio Denz are preserving Sauternes’s history and working hard to develop its image beyond our borders.

Their repeated efforts have helped to carve out a new geography for this wine which can sit perfectly on any table. Today, we enjoy pairings that go far beyond the traditional.

Hotel

Taking the broad staircase, you will discover a sumptuous library in the centre of the floor, home to a collection of Lalique decanters. A drinks service is available all day long. Lalique works also stand on display in shared areas. The understated setting highlights the timeless beauty of the brand’s creations, such as the large crystal panels installed in the lobby.

In the greatest tradition of prestige hotels, every guest is greeted by la Maîtresse de maison, Lucie Cozzi, who assists them throughout their stay. Restaurant – 1 Michelin star
In the main 17th-century building you find an initial subdued and cozy room followed by a second modern extension designed by Mario Botta, fitting perfectly within the peaceful vine landscape.

A total of 130 m2 in size with a capacity of 40 covers, the restaurant’s splendor unfolds: the ceiling is decorated with a hundred and twenty Semillon leaves in gleaming gold crystal, and other iconic Lalique pieces stand on console tables.

Discover the two autumn menus from chef Jérôme Schilling. The Terroir du Sauternais (100% vegetarian) in 3, 4, or 5 dishes or Le Grain Noble menu in 3, 4, or 5 dishes.

Table decoration
Benefitting greatly from Lalique’s refinement and expertise, the table decorations boast a thousand subtleties: a symphony of crystal and porcelain, tassels, and carefully chosen flowers.

The beautifully dressed tables are first of all a feast for the eyes: tablecloths in noble fabrics, glasses, decanters, and door handles from the 100 Points range designed by the wine critic James Suckling.

Customers will also discover other creations from the famous crystal works, made for the hotel restaurant with its major partners: Fürstenberg porcelain plates, Christofle napkin rings incrusted with ‘grape’ crystal pieces, and Peugeot Saveurs salt and pepper shakers, perfect replicas of the ones co-created by René Lalique and Peugeot in 1924. The chairs and furniture are also decorated with crystal inlay.

The spirit of the menu
For this new autumn 2021 carte, the chef and his team have prepared two separate menus. Le Terroir du Sauternais menu in three, four, or five courses of your choice (vegetarian menu) and Le Grain Noble menu in three, four, or five courses of your choice.

Sauternes in all its forms
Jérôme Schilling is aiming to turn traditional on its head and experiment with different ways of using Sauternes: infusion, maceration, fermentation, crystallization, poaching. Everything provides inspiration: grape must, wine lees, vine shoots.

The richer and more complex the wine, the greater the possibilities for combinations: ‘It is all about bringing out the qualities of Sauternes in precise gastronomic pairings, enhancing its aromas, highlighting its various shades and playing with textures’.

Sweet wine brings other foods into the realm of haute cuisine. Wine serves as a condiment, a mixer, or on ice. Head sommelier Adrien Cascio revisits the Sauternes menu every season. The same ambitions apply to desserts.

The head pastry chef is seeking to pair his sweet creations with Sauternes wine: freshness, seasoning, and deconstruction all heighten its succulence. The desserts and petit fours also evolve with the seasons.

The LALIQUE Bar
Since 2008, LALIQUE has approached the most beautiful brands of spirits in the world in order to imagine and create unique decanters, real works of art highlighting the quality and precision of crystal glasswork and the dazzling beauty of these eaux-de-vie.

This is how LALIQUE became a partner of the famous Macallan (Highland Whiskey), Beluga (Vodka), Patron (Tequila), Dictador (Rum) and Hardy (Cognac).

Each decanter is produced in extremely limited quantities and is a delight for great collectors around the world. At Bar LALIQUE, we have more than 40 numbered decanters drawn from perfume bottles created by René LALIQUE himself.

In addition to this fabulous collection of brandy for these great maisons, the other distilleries and artisans on the Bar LALIQUE menu have been selected with great precision. Each of the products present at the Bar has a story to tell, an intrinsic quality and a unique sensory value.

Thus, we offer more than 10 Armagnac vintages, 20 French liqueurs and eaux-de-vie, 4 signature cuvées from La Grande Chartreuse or even rare and precious products such as the famous Marc de Bourgogne vintage from Domaine de la Romanée – Conti.

The LALIQUE Bar is also, and above all, the meeting place for lovers of Sauternes, eminent sweet wine throughout the world. In 2017, “Sweet’Z Original ©” marks the revival of Sauternes wines.

Aperitif created and trademarked by Château Lafaurie-Peyraguey, Sweet’Z is simply made up of a young vintage of Sauternes, a Zeste d ‘Orange and a few ice cubes This drink offers a more modern and dynamic approach to Sauternes wine and appeals to both lovers of sweet wines and new consumers.

Therefore, we decided to create a cocktail menu that allowed us to interpret and enhance Sauternes in Mixology. Thus, we only develop cocktails from seasonal products and based on a worked, infused, macerated, or even unstructured Sauternes.

Thus was born the signature cocktail of Bar LALIQUE, “From Bommes With Love”: combining Sauternes and Gin aged in Sauternes casks. Our menu now contains more than 30 cocktail creations imagined around Sauternes and approved by our loyal customers.

Finally, to complete its prestigious offering, LALIQUE has been, since April 2019, owner of the oldest certified whiskey distillery in Scotland, The Glenturret.

This acquisition gives us the opportunity to offer new and rare whiskeys with extraordinary age and vintages on our menu. You will thus have the chance to find Finish Douglas Laing from the 19th century or rough casks from the early 20th century.

To conclude, we have also imagined a cigar room, selected for a perfect match with an old vintage of Château Lafaurie-Peyraguey. The bar is open every day except Tuesdays and Wednesdays.

Cellar treasures
Château Lafaurie-Peyraguey’s two historic cellars contain a collection of red and white wines. The two other vaults hold ancient elders and exceptional nectars. A heritage of 350,000 bottles that visitors can admire.

Cellar book
Adrien Cascio, head sommelier of the Lalique restaurant, has worked with Romain Iltis to create an ambitious wine list with a variety of influences: a broad selection of Sauternes, Bordeaux crus and Rieslings (a nod to Alsace, the birthplace of Lalique) as well as major estates from abroad, mainly Spain and California (vertical vintages of Dominus, Eisele Vineyard, Harlan Estate, Colgin Cellars and so on).

The majority come from Silvio Denz’s personal collection. There is also a full range of Premier Grands Crus (ranking equal with Lafaurie-Peyraguey), including Châteaux Lafite-Rothschild, Mouton-Rothschild, Latour, Margaux and Haut-Brion, as well as Pétrus, Ausone, Cheval Blanc, Angélus and Pavie in rare vintages.

The wine list of course gives this golden wine pride of place. It is a showcase for Sauternes Crus Classés in a thousand shades of colour: Yquem 1895 (the oldest in the cellar), Château Climens 1921, Château Rieussec 1945, and not forgetting sixty vintages of Château Lafaurie-Peyraguey.

Wines are available by the glass from Silvio Denz’s collection of bottles and other gems unearthed both in France and abroad.

Terroir reading
Another initiative is the ‘terroir reading’ launched by Romain Iltis at La Villa René Lalique. The variety of soils, exposures, altitudes and vine cultivation techniques allow a wine’s characteristics to be broken up ‘vertically’ or ‘horizontally’.

As an ambassador for the vineyards of Bordeaux, Adrien Cascio recognised this approach as an innovative opportunity to help customers understand wines, targeting numerous aromatic and flavour profiles.

La Terrasse de Lafaurie: an ephemeral summer terrace
Every year from May to October 15, the Hotel & Restaurant LALIQUE opens its ephemeral terrace located in the square courtyard of Château Lafaurie-Peyraguey, in order to offer a complementary offer to that of its gourmet restaurant.

This summer terrace offers world cuisine based around the grill and prepared in front of your eyes by chef Alejandro Moyo, a loyal collaborator of Michelin-starred chef Jérôme Schilling

It offers a unique menu with a choice of two starters, two main courses, and two desserts to choose from. Other French specialties are available à la carte as well as a wine list by the glass and in the bottle. The wine list is prepared by the head sommelier Adrien Cascio.

World cuisine revolves around the grill and prepared in front of your eyes by chef Alejandro Moyo, a loyal collaborator of starred chef Jérôme Schilling for 6 years, who has managed the gourmet restaurant LALIQUE as since the opening in 2018.

The Chapel
The chapel nestles discreetly at the heart of Château Lafaurie-Peyraguey between the two his¬toric cellars, a perfect meeting of wine and spirit. Some beautiful weddings have been celebrated at this altar.

Baron Nicolas Pierre de Pichard, who owned the chateau from 1742 and was baptized at Saint-Éloi church in Bordeaux, had a reproduction of the 1491 baptistery from his baptismal church built in the Château Lafaurie-Peyraguey chapel – one man’s tribute to the location’s sacred nature.

The chapel is now decorated with Lalique’s most beautiful historic and contemporary works. A red and black marble altar, designed by Pietro Mingarelli and inspired by the bap¬tistery altar in Saint-Eloi church, shows off the chapel in all its glory.

This altar pays tribute to work that was begun in the 20th century by René Lalique, such as the chancel of the Notre-Dame de Fidélité church in Douvres-la-Délivrande in Normandy and St Matthew’s Church in Jersey.

Above are stained glass windows decorated with the motif “Merle et Raisins” (Blackbird and Grapes), as well as the crystal work of art Eternal Belief by the artist Damien Hirst. With this piece, Damien Hirst chose to depict life and faith – shown in the finest of settings in Château Lafaurie-Peyraguey’s chapel.

Named after the medieval squire, Jean Carnet, who helped his Lord to resist the French monarchy at the end of the Hundred Years War, Château La Tour Carnet played a major role in the revolution of the Médoc vineyard.

The quality of its wine is rewarded by the entry in the classification of 1855 Grands Crus Classés. Château La Tour Carnet is one of the oldest Bordeaux wine producers in the Médoc.

In fact, some parts of the building, including the round tower, date back to the 11th century. Château La Tour Carnet is one of the few Bordeaux estates to have a moat and drawbridge.
