Every room and suite at Hambleton Hall has been designed to provide exceptional standards of comfort. All rooms have been sympathetically decorated in a distinctive style, and all are luxuriously furnished with comfortable furniture and rich fabrics.

With a stellar reputation spanning four decades, the dining room has always been very popular with gourmets and wine lovers. Knowledgeable waiters and sommeliers offer recommendations and provide gracious service while you celebrate with family and friends or celebrate special occasions.

ROOMS & SUITES
Stefa Hart keeps all of Hambleton’s bedrooms regularly updated and redecorated, combining comfort and style to make your experience a great one.

Suite
In addition to the rooms in the main house, the Croquet Suite is adjacent to the hotel. The suite consists of a large king-sized double bedroom and splendid en-suite marble bathroom and a smaller double/twin bedded room with a bathroom on the half landing. At ground floor level a comfortable fully equipped sitting room and a breakfast room are provided.

Master Room
The two Master rooms, Middlehurst and Fern, are the two largest rooms in the house. Both feature king-size beds that can be made into twins. Middlehurst can be let in conjuction with Blue making it perfect for families.

Acorn Superior Room
There are three rooms at this level, that all have king-size beds which can be made up as twins. Lake is the quietest room in the house, Acorn is a very light room with a view of Rutland Water and Lotus enjoys the same view.

DINING
Dining at Hambleton is a sophisticated occasion in stylish surroundings. We strive to make your experience memorable with informative advice on dishes and ingredients and wine recommendations by sommelier Dominique.

When Hambleton Hall was first imagined, Rutland was unheard of as destination for a luxury hotel break, despite its attractive market towns, sandstone houses, hunting and shooting pursuits. Inspired by Michel Guerard’s Les Prés d’Eugénie in France, Tim and Stefa Hart created a fine dining restaurant that delivered “exceptional cuisine worth a special journey” – the Michelin Guide’s description for its 3-star rating.

Now four decades later, and the proud owner of the UK’s longest-retained Michelin star, the Dining Room at Hambleton Hall is the main draw for discerning guests with an appetite for British cuisine delivered with flair.

AN EDIBLE GARDEN
Aaron’s passion for using exciting ingredients, cooked simply with striking presentation has led him to grow as much of his own produce as possible on site for the ultimate in freshness, taste and quality.

The 1-acre kitchen garden at Hambleton Hall is bordered on the south side by a 2-metre high sandstone wall where the peaches, figs and apples thrive. This provides shelter from the wind, protection from pests and it radiates retained heat during the long summer days.

Given the English climate, Aaron and his team of gardeners concentrate their efforts on delicate products which taste infinitely better when consumed immediately.

These include courgettes, tomatoes, beans, peaches, strawberries, currants, gooseberries, leeks, cauliflowers, radish, beetroots, carrots, sweetcorn, cucumbers, lettuce and a wide variety of herbs. Asparagus, kale, wild garlic, watercress, rhubarb, elderflower and peas grow too.

In 2019 Aaron redesigned the 1-acre garden to incorporate a new greenhouse, raised beds, fruit trees and a compost. During the redesign process and as part of his every day coaching and training of his brigade, Aaron teaches the younger chefs how to get the most out of the garden.

LOCAL PRODUCERS
Creativity is in perpetual motion in the Hambleton kitchen. Aaron, Charlie and James write the daily menus between 7am and midday depending on the unique combination of the freshest ingredients that arrive that morning.

The chefs’ foragers and farmers appear at the kitchen door in person offering incredible local ingredients from blewits and puffballs to salsify, apples or Jerusalem artichokes, quince or crab apples, sea vegetables or zander, woodcock or teal.

The chefs will unite these new finds with existing combinations to create recipe evolutions each day. Dishes such as breast of Merrifield duck with watermelon, feta and endive, grouse with blackberry sauce and traditional accompaniments, roast mallard with corn and a pie of its own leg meat, roast pheasant with Jerusalem artichoke and truffle, hare wellington with root vegetables and a prune and Armagnac sauce.

Hambleton’s long standing suppliers save their best for us as we have facilitated their business, helped them to expand and with whom they have grown together over the decades. Some grow some ingredients only for Hambleton, such is the loyalty and friendship they have nurtured over the years.

WINE
Hambleton’s sommelier Dominique Baduel comes from the south-west corner of France, where his father dealt in the local cheeses. Together with Tim Hart, he selects the wines that take up the 400 bin list. Truly passionate about his craft, Dom needs little encouragement to take guests on a tour of his cellar, where you can see a few thousand bottles waiting for your summons.

Tim and Dominique’s aim for Hambleton’s wine experience is to find interesting choices from a wide range of growing areas. They are prejudiced in favour of small producers and against big brands and believe that their greatest successes with clients often involves introducing wine lovers to something new.

The Old World sections such as Bordeaux, Burgundy, and Rhône red wines can be relied upon to include quite a few mature bottles that have been cellared at Hambleton for many years.

Most new wines on the list are favourites that we have been tasting lately. They are often wines which will be listed on our first page “wines of the moment” and they may reflect a variety of grapes and represent good value.

Wines which are removed from the list are wines which we cannot buy anymore because of vintage changes or because the no longer are to our liking. In the case of very fine wines, specific vintages may be very difficult to buy and may incur a considerable increase in price, therefore we might look for this wine in a different, and often younger version.

THE DINING ROOM
At Hambleton Hall, we offer exceptional wining and dining in our award-winning restaurant. Michelin Star chef, Aaron Patterson and his highly skilled team work with fabulous ingredients, where possible local in origin, to produce dishes with a strong seasonal bias.

This season delivers rich and diverse ingredients which convey colour and flavour to each plate. The new dish of Poached tail of langoustine with fennel and Exmoor caviar this season resembles a work of art on the table. To whet your appetite see our recent sample menus.

SIGNATURE DISHES
Signature dishes are the most enduring, the most popular and the most recommended dishes. While the chefs change the menus twice a day to use the best produce and keep pace with culinary trends, signature dishes have the power to remain or return each season for loyal diners. Signature dishes create tremendous loyalty and guests like to share these on Instagram, which adds further to their popularity.

Hambleton Hall is renowned for serving the best quality game dishes throughout the year. Some of the most requested dishes are Loin of rabbit wrapped in Parma ham with pea and mint risotto and Pheasant pithivier with root vegetables.

Vegetarian and vegan diners are well catered for. Some of the most popular choices are the Terrine of carrot with star anise ice cream and the Garden courgette flower filled with mousse, chanterelle mushrooms and grappa jus.

No Michelin star restaurant is complete without exemplary fish dishes and the signatures here include Fillet of wild turbot with sea vegetables and Cornish crab, radish, ginger and yuzu.

With an entire pastry kitchen creating all the sweet and savoury items from scratch daily including the delicious canapes served with an aperitif and the petit fours with coffee, it is no wonder that desserts are incredibly important.

The Hambleton tiramisu has been on the menu for over a decade thanks to its popularity, although loyalists for the newer White peach cheesecake are equally enthusiastic.

THE HALL
Hambleton Hall is one of Britain’s finest country house hotels, and enjoys membership of both the Relais & Châteaux and Pride of Britain collection of luxury hotels.

The Hall offers guests an experience to remember: a sense of history – the Hall dates back to 1881; outstanding dining – the Hall’s restaurant has held a Michelin Star since 1982 and the Bakery is award-winning; exceptional accommodation – we have 15 rooms, two suite rooms, each distinctively styled; and a lakeside setting – the Hall’s gardens and grounds cover 17 acres, surrounded by Rutland Water.

GROUNDS & GARDENS
The gardens and grounds cover some 17 acres and include a warm south-facing terrace where the “Sitooterie” provides shelter for a contemplative cigar smoker or reader. The Parterre, designed by Neil Hewertson in 1995, provides year-round pleasure with architectural plants and shrubs.

Owner Tim Hart is a keen gardener and is especially proud of Cork oaks, pines and a wealth of other trees and shrubs planted on his watch. Tulips are a great favourite and other spring bulbs can be enjoyed from late March.

A walled kitchen garden is cultivated intensively for herbs, salad vegetables and soft fruit. In summer, courgette flowers are sent daily to the kitchen to form part of one of Aaron Patterson’s favourite dishes. The garden offers a number of secluded corners where one can sit and enjoy spectacular views and opens on to the south-facing Park and Rutland Water.

EVENTS
Hambleton Hall is a popular choice for business and social events.
