The hotel du Chambard welcomes you from September 18, 2020 and opens its reservations now. After a few weeks of work, the Hotel du Chambard is getting a makeover to unveil a brand new atmosphere where warmth meets elegant luxury. Olivier and Patricia Nasti have put their hearts out to offer their guests the excellence of a rethought comfort.

The rooms and suites now have a brand new bark to give substance to your dreams and inspiration to your stay. Light colours, dynamism, a few touches of raw wood and almond green as a reminder that in Alsace Nature is always a guest of honour, everything here vibrates with a happiness that is just waiting to meet you.

THE BREAKFAST
Every morning, a delicious breakfast is served at your table , in the private and restful setting of the dining room with stone walls and open beams.

Our products are selected with great care from local farmers and are prepared on site. We will serve you fresh bread, pastries, Gugelhupf, a panacota verrine, dried fruit, cold meats, local cheeses, fruit salad, butter, honey and a Christine Ferber jar of jam.

LE TABLE D’OLIVIER NASTI
As soon as you enter Le Chambard, the activity in the restaurant’s kitchen can be seen through large bay windows. The tone is set for transparency, verity, nature, Alsace, the authenticity of taste, and the values that can be found in the warm and refined atmosphere of the 2-star Gourmet Restaurant: “La Table d’Olivier Nasti”.

In this place, completely updated and reopened in April 2018, nature appears to have taken back its rightful place. An ancient Alsatian beam dominates the dining room, here and there wood from the surrounding forests blends into the walls, and each item of furniture has been hand-crafted by a skilled tradesman.

A true ode to nature, the magical setting and culinary inventiveness of the Chef and his second, Nicolas Carro, join forces with accuracy and precision, in the same way as the biotope that is so dear to Olivier Nasti. With his new “Expression” menu, Olivier Nasti signs a menu that is even more personal.

Working with products in their entirety, studying textures and cooking methods, and paying close attention to sauces and decoctions, Olivier Nasti invites you to discover the right balance, one that takes us on a journey into a contemporary and delicious Alsace.

Drawing his inspiration and desires from the rich diversity of surrounding areas, Olivier Nasti works with the best local farmers to ensure that each creation, is a direct emanation of the soul of Alsace. OLIVIER NASTI
Know-how and sharing are the watchwords that guide the gastronomy of Olivier Nasti . The Chef has trained with may top establishments and Chefs, the values of which have branded the high-standard seal of his own culinary identity.

Olivier Nasti nurtured his passion for cooking during the years spent training at the Château Servin in Belfort, with Olivier Roellinger in Cancale and with the Haeberlin family at the Auberge de L’Ill, the famous Alsatian Michelin restaurant.

Discipline, precision and high standards, the search for the right product and its enhancement, skill and techniques: these are all the qualities, the product of long and hard work, that led him to being chosen as the Best Craftsman of France in 2007.

He received the famous blue-white-red collar, a distinction that fully expresses his desire to go even further and perform even better. Know-how and sharing are the watchwords that guide the gastronomy of Olivier Nasti .

Now, at the head of Le Chambard’s kitchens and, in particular, his 2-star Michelin restaurant , Olivier Nasti continues to pass on his knowledge, whether in the frame of associations, the training of young apprentices, or competitions for which he sits on juries, or books in which he shares his recipes and secrets.

Olivier Nasti was recognised as one of the top 100 best chefs in the world in November 2016 by the magazine Le Chef. In September 2017, the restaurant joined the association of Grandes Tables du Monde.

THE WINSTUB
In Alsace, a Winstub is a place where people meet up to enjoy a glass of wine and a home-made meal in a friendly setting. Charming, rustic, welcoming, the Winstub reflects the codes of traditional Alsatian inns: checked tablecloths, sculpted chairs, traditional decorative objects and large tables. The Winstub is a potted version of Alsace. a must for those who enjoy local dishes that warm the heart.

At Le Chambard’s Winstub, savour traditional cuisine prepared with the emblematic products of Alsace: snails, foie gras, zander, pike, pork, veal, lamb, cold meats, muster cheese, plums, asparagus, and more. A multitude of flavours cleverly brought together in the dishes that present a pure Alsatian tradition updated by the Chef Olivier Nasti.

THE SPA
The team welcomes you every day to Le Chambard’s Spa to advise you and accompany you in your well-being experience. In order to extend its haven of peace and allow its guests and external customers to take advantage of the wide range of well-being treatments and facilities, Le Chambard 5-star hotel opened a Spa Space in 2008.

Over an area of 200 square metres, discover a place devoted entirely to tranquillity and relaxation. A soothing place that is unique, where the watchwords are peace and quiet and rest.

Completely integrated into the hotel, the Spa has been designed as a haven of complete relaxation so that each person is able to find the peaceful interlude they are looking for. In each room, slippers and bathrobes are provided in order to take full advantage of the free and unlimited access to the Spa.

The Spa features a space with an overflow pool; this opens out via a large bay window onto a sunny terrace equipped with deckchairs. Take advantage of it to relax and enjoy a herbal tea.

THE BAKERY
Rue du tir, in a small shop within this prestigious house, the Bakery of le Chambard has been established. This new gourmet place is in line with Chef Olivier Nasti’s desire to go further and further in the creation, research of good tastes, excellence and quality of products.

It was a sincere encounter, a professional and friendly crush that gave birth to the project. Chef Olivier Nasti met Lulu, a baker from the Lower Alps, in his bakery in Digne-les-Bains: an exchange took place on the trade of each and their passion for gourmet food and work well done.

The Chef of Le Chambard, curious about everything, daring and in love with good products – especially bread, a symbol of conviviality and sharing – sees this as an opportunity to discover the methods of the artisan bakers of yesteryear, which Lulu brings to life.

Breads with the real taste of yesteryear, made with leaven, from flour obtained from the millstone and respecting precise and rigorous gestures, such as kneading by hand and the indispensable resting times, to delight. The successful challenge of a chef guided every day by the discovery and mastery of know-how and the pleasure of sharing.

The Bakery du Chambard offers a wide range of breads by the kilo, real loaves that keep perfectly and for a longer period of time and that will delight the greediest thanks to a dense and crispy caramelized crust, a controlled cooking and this light bitterness that characterizes the breads made in the artisanal tradition: country, rye, buckwheat, dansk, cereals, small spelt with less gluten.

In order to learn the traditional know-how, to master the precise gestures by hand, to know the necessary raw materials, Chef Nasti joined Lulu in her bakery. Rémi, already a cook at Le Chambard and now the head baker of the house, followed an intensive training to improve his skills.

Understanding how bread is made, to make this product in the purest tradition and to offer it to the clients of the restaurants and the hotel: a guarantee of quality and a pleasure to share, on which rests the very identity of this family and prestigious house.

It’s the chef-baker Rémy who makes this famous Alsatian specialty: he has slightly adapted the classic recipe, always with the aim of delighting and offering a real gourmet moment.

Three sizes for these Kougelhopfs – small, medium, large – plus flaked almonds and Gewurztraminer marc: the same frank and powerful tastes, to delight young and old! And the possibility of putting the hand in the dough, thanks to the mould with Kougelhopfs on sale, accompanied by the recipe.

Made by Jordan, the pastry chef at Le Chambard, the Boulangerie’s pastries are a real invitation to indulge: masterful know-how, precise gestures, and a love of the products guide this enthusiast and his teams, who concoct brioches and puff pastry rolls, cookies, rolls, pains au chocolat, and croissants every day for the Boulangerie’s clients, as well as for those of the Hotel. A perfect puff pastry and tastes that will delight the gourmets!

KAYSERSBERG
During your stay at Le Chambard, discover Kaysersberg , a typical Alsatian village that will delight you with its picturesque atmosphere combining medieval and Renaissance architecture, half-timbered houses with facades that are as flower-covered as they are colourful, all located between the Ballons des Vosges mountains and the vineyards. Do not hesitate to enjoy a stroll around the streets of Kaysersberg:

  • The Hotel de Ville, a building from the Rhine Renaissance.
  • Sainte Croix Church , built between the 12 th and 15 th centuries.
  • The fortified bridge , in pink sandstone of the region, offers a pleasant view over the village.
  • The house where Albert Schweitzer, the 1952 Nobel Peace Prize winner, was born : a museum presents his work as a doctor in Gabon.
  • The so-called “Schlossberg” imperial castle : “Kaysersberg” means “mountain of the Emperor” and this castle bears witness to the influence of the Holy Empire on the Kaysersberg valley in the Middle Ages. Dominating the village, a 10-minute walk leads you up to the remains and offers the chance to enjoy a superb viewpoint.
  • The Verrerie de Kaysersberg glass workshop : the work of master glass craftsmen is always fascinating. Visit this workshop to admire the glass working techniques and acquire a few unique items.

THE ALSACE WINE ROUTE
The famous Alsace Wine Route passes through the Kaysersberg Valley: take advantage of your time at Le Chambard to discover the many treasures. The ”Terre & Vins au Pays de Colmar” territory is a unique destination that will delight all wine lovers. The valley is home to 7 Grands Crus out of the 51 in the entire Alsatian vineyard.

Do not hesitate to visit it on foot, by bicycle or by car. CHRISTMAS IN ALSACE
From Advent to Epiphany, Alsace celebrates Christmas. Towns and villages are filled with thousands of lights, decorations and Christmas trees line the streets and the Christmas markets lay out their delicious cinnamon-scented treats and crafts. A traditional atmosphere that people travel from far and wide to discover.

Kaysersberg welcomes 250,000 to 300,000 visitors every year. At Christmas, the village is like something out of a fairy-tale and you are advised to book your stay in advance in order to take advantage of this very unique ambience.

Mulled wine, bredala and other specialities can also be savoured throughout the valley. Do not hesitate to pay a visit to the Christmas markets in Colmar, Mulhouse and the many surrounding villages.

In Strasbourg, the Christmas market is very old and has brought the city’s streets to life for several centuries. Treat yourself to a getaway in Alsace for the end-of-year festivities: the change of scenery and conviviality will delight you and allow you to forget the long winter!

We suggest a few places to visit and activities to enjoy in the surroundings of Kaysersberg:

  • The Lac Blanc resort: in the Vosges mountains, this resort is as lively in the summer as it is in the winter. Bike Park, hiking trails, adventure park, rock-climbing, cross-country and downhill ski trails, sledging, and more. The activities are multiple and varied. Do not miss the Bare Feet Trail : an original and tactile experience that will require you to step out of your shoes for a 1.2 km walk over the forest floor (fitted out accordingly).
  • Ammerschwihr Trois-Epis golf course: 5 minutes from Le Chambard, a 5,207-metre hilly 18-hole course on the Wine Route. Guests at Le Chambard benefit from a 20% discount on green fees. Information and registration at the hotel reception.
